My Kindle Fire HD Came!


I received my Kindle Fire HD the other day from the Compass bank deal My post about it and my boys love it. I love when I get great freebies! I would have never spent money on a Kindle but getting it for free is awesome. So far my boys have used it for playing games but it will get more use in other ways. I even bought a cute case for it on Amazon with money I had earned from making videos at Expotv.com.

My Memorial Day Weekend Project


I love long weekends as it allows my husband the time to do projects around the house. Our pergola needed a new roof as our last one that was made of fabric wore out. We decided to do the roof this time in metal as we wanted it to last.  So on Friday we bought the metal pieces from Lowes, that was a fun time carrying them home in our minivan as they were 12 feet long.

 On Saturday my husband and son painted the metal pieces as we did not want to blind the neighbors. We used grey paint on the whole piece and added yellow for accent.



Here is my older son playing on the ladder. 

I have to throw a picture of the younger boys in too for grandma to see.


My husband nail the metal pieces on top of the pergola and here is the end result. I now have a shady place to sit under in the yard.

Living In The Desert


Here in Albuquerque, New Mexico are are is the desert. We have a dry climate and do not get much rain so  we do landscaping different here. We don't have much green here and if we do it is because someone chooses to waste water.  The above picture is a new area the city made a walking path by a drainage area. We have drainage areas because when it does rain in the summer.it comes down hard and fast. It only rains for about 15 minutes but the amount of water is great so it needs to drain somewhere.
   This new path that Jesse and I run on is pretty cool as it is made from volcano rock and is fun to climb on. There is also a hill that we can run down too.

My running partner fell asleep today so he could not do the hills.


Here is examples of another park we go to that has grass. In order to keep the grass green here it has to be watered every day. So mostly only parks have grass. Most home owners choose to plant drought resistant plants.


These are examples of drought resistant plants that don't need much water.

Low Fat Chocolate Chip Cookies


  My family loves chocolate chip cookies and I want them to eat healthily, so I make cookies that are lower in fat but still taste great. These cookies have 2.5 grams of fat while a regular chocolate chip cookie has 7 grams of fat. I found this wonderful recipe in a cookbook called Dr. Cookie Cookbook. This cookbook has so many wonderful recipes for low fat treats. This cookbook has been in my cookbook collection for a long time, way before the internet. Even though I now use my computer for looking up recipes for baking, I still reference some of my cookbooks for family favorite recipes. My youngest son knows which cookbook has a recipe for the basic pancake recipe that he uses.


 These chocolate chip cookies are so delicious. I have tried many other chocolate chip cookie recipes, like the ones on the back of the packages of chocolate chips, but these are my favorite cookies. I think that the recipe on the chocolate chip package makes greasy cookies. The recipe below is lower in fat as it uses way less butter. So you have to try making these Low Fat Chocolate Chip Cookies and you will love them.


Make this recipe allergy-friendly by using vegan butter and plant-based milk


Dr. Cookies's Chocolate Chip Cookies

yield: 48 cookies
calories per cookie: 78
fat per cookie: 2.5 grams

6 tablespoons butter
2/3 cup brown sugar
2/3 cup sugar
2 large eggs
1/4 cup skim milk
1 1/2 teaspoons vanilla
3 1/4 cup flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup chocolate chips

Preheat oven to 350 degrees and coat baking sheets with nonstick cooking spray. ( I use silicone sheets on my pans so I don't have to spray the sheets) 


Beat or cream the butter and sugars until smooth. Add the eggs and beat again. Add the milk and vanilla and beat again until smooth. Add the flour, baking soda, and salt and beat until well mixed. Add the chocolate chips and stir to combine.
Drop the batter by teaspoons about 2 inches apart onto the baking sheets. Bake for 10 to 12 minutes or until lightly browned. 


 My family loves these cookies and I love that they are better for them

It's Boogie Wipe Time!


I am an ambassador for Boogie wipes. They send me samples to pass out to people and friends. They also send me other products to share with my boys. Blue Corn Muffins With A Kick and Bob's Red Mill




I love using unique ingredients and when I won a gift card to Bob's Red Mill. I bought some blue cornmeal. I thought the color would be cool to make something with. Bob's Red Mill's blue cornmeal is actually blue in color but tastes like regular corn meal.  Here is their wonderful description
Blue Cornmeal (medium grind) is a unique dark indigo color with an intense flavor of fresh corn

A 1/4 cup of cornmeal has 3 grams fiber, 3 grams protein and also is high in iron.

Just look at the beautiful color of the cornmeal.


I decided to make spicy cornmeal muffins with the blue cornmeal. Here in New Mexico, we love green chile in everything. So I made a basic cornmeal muffin and added green chile and tomatoes to the mix along with mozzarella cheese. I usually add fresh green chile but I had none so I had to use a canned mixture.




Blue Cornmeal Muffins with a Kick

1 cup flour
1 cup Bob's Red Mill blue cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 egg
1/4 cup honey
1 tablespoon vegetable oil
1 cup milk
1 cup shredded mozzarella cheese
1 can diced tomatoes with green chilies(drained)

Preheat oven to 400 degrees and grease 12 muffin tins.
Whisk all dry ingredients and set aside. 
Beat the egg, sugar, oil, and milk in a mixing bowl until smooth. Add dry ingredients and mix until combined. Mix in cheese and tomatoes until combined.
Spoon batter into muffin tin about 2/3 full. Bake 15 minutes until a toothpick comes out clean. Cool 10 minutes and then remove from tins.





Enjoy the muffins as they are or make a meal of them with beans, veggies, and cheese on top of them.
