Vanilla Sugar Free Cupcakes Made With MORNING PEP'S 100% Natural Xylitol Sugar And A Giveaway


      One of my New Year's goal is to eat healthier. I want to eat more whole grains, fruits, and veggies. I also want to eat less processed food and sugar. One of the ways that I am going to eat less sugar is by replacing the sugar in my diet with Morning Pep Xylitol sweetener. This 100% natural sweetener is an all natural sugar free sweetener that tastes and looks just like sugar. This sweetener can be used just like sugar in equal measurements and has no bad aftertaste like other sugar substitutes. When I used it in my coffee this morning I dipped my finger into the bag of Morning Pep Xylitol and tasted it. It tasted sweet just like sugar.

  Morning Pep 100% natural sweetener is made from Birch trees and not corn so it is GMO free. It also is gluten free and made without corn, wheat, soy, and dairy. This sweetener is low glycemic and has only 9.60 calories per teaspoon, making it a great choice for diabetics and people trying to lose weight. The use of Xylitol is even recommended by dental professionals to help reduce the risk of tooth decay. Morning Pep Xylitol is a healthier alternative to other sugars and sweeteners with a third of the calories of regular sugar.


I was sent three bags of Morning Pep Xylitol, one in each size that they sell (1 pound, 2 1/2 pounds, and 5 pounds) to be able to use this sweetener in everyday use and in cooking. I love that this sweetener can be used just like regular sugar in equal measurements. The Xylitol is heat-stable for cooking and baking and it also mixes and dissolves just like common sugar. That means it is great for baking and using in my coffee. I love the taste in my coffee! So I set out to use this sweetener in a recipe that my family enjoys. I did not tell my family that I substituted the real sugar with the Morning Pep Xylitol sweetener, as I wanted to see if they could taste a difference. I am happy to report that my family loved these cupcakes. My 15 year old even told me that the cupcakes tasted great without frosting. So now even people who avoid sugar can "have their cake and eat it to."

Sugar Free Vanilla Cupcakes
makes 12 cupcakes


 1/2 cup (1 stick) butter, softened
3/4 cups Morning Pep xylitol
1/2 tablespoon baking powder
1/4 teaspoon salt
2 large eggs
1/2 cup milk
1 teaspoons vanilla extract
1 1/3 cups all-purpose flour

Directions:

Heat oven to 350 F
1. Line 12 regular-size (2 1/2-in. diam) muffin cups with paper liners.

2. Beat butter, xylitol, baking powder and salt in a large bowl with mixer on high speed for 2 minutes or until well blended. Add eggs; beat 2 minutes or until fluffy. On low speed beat in milk and vanilla. Let the batter stand for 10 minutes so the xylitol crystals can dissolve.  Then add flour just until blended.

3. Spoon 1/4 cup  of  batter into muffin cups, filling about 2/3 full.

4. Bake 20 to 25 minutes or until a toothpick inserted into the center comes out clean. Cool for 5 minutes before removing cupcakes from pan. Let cupcakes cool completely before frosting, if desired.

Since these are sugar-free cupcakes you can eat them the way they are or decorate them with frosting if you can have sugar in your diet. Refrigerate the cupcakes for up to a week.
