This past week at my church we celebrated a wonderful event! The celebration was for the pastor and his family, as they have been with our church for ten years. The congregation wanted to say thank you to them with a party. We served a wonderful cake and I also made a vegetable tray with roasted red pepper hummus.So many people enjoyed the hummus and asked my husband where he had bought it. They were surprised when he told them that I had made it. I told them it was so easy to make hummus and they wanted the recipe. So I am posting my recipe for Roasted red pepper hummus. It is so simple to make and all you need is a few ingredients and a food processor. I love serving my hummus with veggies and crackers.
My favorite crackers are healthy allergy friendly crackers, as you never know who has allergies. I want all to be able to enjoy the healthy food that I serve. Partners Crackers sent me some delicious gluten-free deli crackers and they were the perfect crackers for my hummus. These GMO-Free crackers are made from cassava flour and five ancient grains and come in three yummy flavors. The crackers have a delightful crunch and are generous in size so you can pile on the hummus. These crackers are made without corn, rice or soy, people with allergies can enjoy the delicious crackers. I don't follow a gluten-free diet but I really enjoyed the taste of these.
The Olive Oil & Sea Salt crackers are made with a special blend of herbs and dried green olives and tasted great with hummus. My favorite flavor was the Garlic & Rosemary crackers as they had a great rosemary flavor to them. For those who want a simple flavor, the Olive Oil & Sea Salt crackers is perfect for any variety of cheese. These crackers are perfect for entertaining and look awesome on any platter.
Roasted Red Pepper Hummus
2 cups canned chickpeas, drained (save the liquid)
4 garlic cloves
1 1/2 teaspoons salt
1/3 cup tahini(sesame paste)
6 tablespoons lemon juice
1-2 roasted red peppers
2 tablespoons olive oil
Drain the liquid from the canned chickpeas into a container with a lid. Place the liquid in the fridge to use as an excellent vegan egg substitute or to make a vegan chocolate mousse with. (see my recipe Here) Place all ingredients in a food processor fitted with a blade. Check out my review of this new Ninja.
Process until pureed, adding a tablespoon or more until it reaches the desired texture. Serve in a bowl and drizzle olive oil over it for a nice look. Serve with raw veggies and crackers, my favorite-- Free For All Kitchen Gluten-free Deli Crackers .

My husband added sheep to the cake. The sheep are animal crackers that he dipped in white chocolate and used black gel for the eyes. This is one of the veggie trays that we served with the roasted red pepper hummus.
