Chocolate Mousse Cake



     Check out this delicious chocolate cake that I made for Thanksgiving. My family love chocolate when it comes to desserts. I made this cake with the help of a cool baking pan called the Love Cooking Gourmet Fill N Flip™. This cool pan from Love Cooking allows you to fill your cake with your favorite filling. I also used the Push Pan to make a pumpkin cheesecake and loved how easy my cake came out of the pan. It looked wonderful! Try doing that with a pie pan.



The last item that I tried was the Mrs. Fields Cutie Cakes™ Baking Pan. This pan makes 48 bite-size cakes which are perfect for parties.


I did not have much luck with this pan though. I followed the instructions when I filled each section with my cake batter. My cakes still over-flowed and were difficult to get out of the pan. I even greased the pan.


This was all I was able to salvage from the pan. These cakes are very small and hard to frost too, I put a penny on the dish so you could understand the size. This pan involved to much work for me for these little cakes. Maybe you might have better results with the pan.

Here is my recipe for the Triple Chocolate Mousse Cake.


 Chocolate Mousse Cake

Ingredients

Cake
1 box chocolate cake mix
Water, vegetable oil and eggs called for on cake mix box

Chocolate Mousse Filling and Frosting
2 cups milk chocolate chips
1 1/2 cups whipping cream
1 container white frosting 
1 container chocolate frosting


First, thoroughly butter and flour both pans. Then fill with cake batter, made from directions on box,1 about three quarters of the way. Bake according to your cake recipe. Remove from the oven and let cool. Carefully flip each pan upside down and remove the pieces. Add half the chocolate mousse filling/frosting to the cake with the larger opening. Place the non-filled cake on top of the filled cake. Then frost with the remaining mousse/frosting.

While cake is baking and cooling, you can prepare the filling/frosting.

To prepare the filling/frosting

 In medium microwavable bowl, place chocolate chips and whipping cream. Microwave uncovered on High 2 to 3 minutes, stirring once every minute, until chocolate is melted. Stir until mixture is smooth. Refrigerate about 30 minutes or until slightly thickened.

Add frostings to chocolate mixture. Beat with electric mixer on high speed 1 to 2 minutes or until well blended and fluffy.

Brown Sugar Apple Pie And a Giveaway


I made a delicious apple pie for Thanksgiving. While I made many other pies, this was my first pie with a top crust.




    My husband has been asking me for a while to make him an apple pie. It is apple season and I do have a new apple slicer to try out, so how could I say no to the man I love. While I have made all kinds of pies before, I have never made an apple pie before. I think the reason I have never made an apple pie before is I have been intimidated by all the work in cutting all the apples that are needed for the pie. My new apple slicer, with the comfortable handles, will now help me core and slice all the apples that I need for my pie. I love that my new apple slicer makes perfect apple slices so my pie will look perfect for my husband. Once I finish making my apple pie, I can place my apple slicer in the dishwasher to be clean.


    When I make any kind of pie, I like to make a homemade crust as it tastes so much better than store bought. A homemade crust does require more work as you have to mix the dough and roll it out. I just use my food processor to mix up the dough. My silicone rolling pin makes rolling out the dough a breeze as it has a non-stick surface and nothing sticks to it. It may be small, but that makes it easy to store. I also love using my rolling pin when I make pizza and tortillas. I usually just rinse my rolling pin after use, but this one can go in the dishwasher if needed.





Brown Sugar Apple Pie



Ingredients
3/4 cup light brown sugar
1/4 cup all-purpose flour
3/4 teaspoon ground cinnamon
7 medium apples, peeled, cored and sliced
3 tablespoons lemon juice
3 tablespoons butter, diced
1 egg, beaten, for brushing
Sugar, for sprinkling
chilled pie crust dough for top and bottom of pie (recipe below)


Preheat oven to 450 degrees F
Mix together the brown sugar, flour, and cinnamon in a small bowl. In another bowl, sprinkle apples with the lemon juice and toss. Stir in the sugar mixture to evenly coat the apples. Set aside.

Divide out chilled dough into 2 pieces and use 1 to roll out to line a 9-inch pie pan. Chill the other piece until needed for the top of pie.

Mound the apple and sugar mixture into the pie pan lined with dough. Dot with the diced butter.
Then roll out the remaining dough into a 9-inch circle and place on top of the apples. Using a fork, seal the crust along the edges of the pie and trim any excess dough. Brush the top of the  pie with the beaten egg and sprinkle with sugar. Then slice a small in the middle of the pie. Bake for 30- 40 minutes or until golden brown. Cool for 20 minutes before slicing.




Pie Crust
2 1/2 cups all-purpose flour
1/4 teaspoon  salt
3 tablespoons sugar
16 tablespoons butter, cold and cubed
1/4 cup to 1/2 cup ice water

In a large mixing bowl, mix together the flour, salt and sugar. Add the cold butter cubes and work it into the flour with your hands or a pastry cutter. Work it quickly, so the butter doesn't get too soft, until the mixture is crumbly, like very coarse cornmeal. Add the ice water, a little at a time, until the mixture comes together forming a dough. Bring the dough together into a ball. 

When it comes together stop working it otherwise the dough will get over-worked and tough. Divide the dough in half and flatten it slightly to form a disk shape. Wrap each disk in plastic and chill in the refrigerator for about 30 minutes. On a floured surface roll each disk out into a 10 to 11-inch circle to make a 9-inch pie.

Yield: 2 (9-inch) pie crusts

Maple-Roasted Brussels Sprouts With Pumpkin Seeds

Here is a great idea for a delicious side dish for your Thanksgiving meal.


     Thanksgiving is almost here! When I think of Thanksgiving, I think of family gatherings. I also get excited for all the cooking and baking that I get to do for these gatherings. I always try to make healthy dishes when I cook as I want to show my family that healthy food tastes delicious. One of my favorite dishes to cook for gatherings is vegetables. Most people do not eat enough veggies and I want to show people that veggies, when made right taste delicious. My favorite veggie is brussels sprouts. Most people do not like brussels sprouts, but once they try this dish they love them. This is the only way I can get my husband to eat brussels sprouts.


   I have discovered a wonderful way to cook brussels sprouts. I cut them in half and roast them in the oven, which brings out a wonderful sweet flavor to them. Then I drizzle maple syrup over them and add roasted pumpkin seeds. My Maple-Roasted Brussels Sprouts are so yummy and irresistible, that even if you normally do not like these sprouts, you will love these. These irresistible sprouts are a holiday favorite but too tasty to serve just once a year. The recipe is easily halved for smaller gatherings or an everyday family meal. I am will be adding these to my Thanksgiving menu.



     I made a batch of these maple roasted "little cabbages" the other day and ate them with dinner. The leftovers were awesome to snack on the next day. The maple syrup gives the sprouts just the right amount of sweetness that will make brussels sprout haters ask for more. The pumpkin seeds give them a extra touch of flavor. I made a batch without the pumpkin seeds and quickly found out the pumpkin seeds add a great taste to the brussels sprouts. This recipe serves 6-8 people but is easy to cut in half for a small family.


   The first step to making this wonderful dish is preparing the brussels sprouts. You will need to trim any wilted or yellow leaves off the sprouts. Then to make the sprouts bite size, cut them in half. A quality cutting board helps get the job done quickly, along with a sharp knife. I like using my new 100%  bamboo cutting board as it does not dull my knives. It is also durable and lightweight. I use this board for everything. The silicone edges on the board keeps the board from moving around and it adds a great look to the cutting board. Most people are afraid of the care that goes into wood cutting boards. Those fears are gone with this board as I just hand wash mine and hang it up to dry on my pot rack. Since it was treated with mineral oil in the factory, I only have to give it a coating of oil once a month or as needed. If you take care of your bamboo board, don't soak it and keep it out of the dishwasher, it will last a long time. It will also look great in your kitchen. Maple-Roasted Brussels Sprouts With Pumpkin Seeds

Ingredients: 
2 pounds Brussels sprouts
2 tablespoons olive oil
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
2 tablespoons maple syrup
1/4 cup raw or roasted green pumpkin seeds

   Method:
Preheat the oven to 400°F. Peel off any yellowed or wilted leaves from the outside of Brussels sprouts and trim bottoms. Cut the brussel sprouts in half. Combine brussels sprouts in a large bowl with oil, salt and pepper. Toss until coated. Place the sprouts on a baking sheet and roast, stirring once or twice, until sprouts are almost browned and just tender when pierced at the base with a paring knife, about 25 minutes. Place the brussels sprouts in the serving dish and toss them with the maple syrup and pumpkin seeds.

Does Toothpaste Cause Canker Sores?


       My youngest son tends to get mouth sores, also known as canker sores, almost every week. He has a bottle of "magic mouthwash" that the doctor prescribed and I have taught him how to apply this medicine on his mouth sores. This " magic mouthwash" helps to numb the pain but does not heal the sores. While my son tolerates the taste of this medicine, he dislikes the way it feels in his mouth. I am trying to raise my family more natural and that includes trying to heal the body with food or natural medicines. I want to be able to find the source of what is causing the mouth sores in my son. I recently attended a natural healthy conference and learned about raising my family with healthy natural products. I met with a lot of companies and gained a lot of new information about new products. I also left the conference with lots of samples of products. One of those products was EarthPaste. The natural toothpaste came in a cinnamon flavor and I could not wait to try it.


  When I applied the natural toothpaste on my toothbrush, I quickly noticed that it was brown color. So I picked up the tube and read it to find out what was in this toothpaste. I was surprised at what was in the toothpaste, but I was even more surprised at what was not in the toothpaste. This natural toothpaste contains only five ingredients- Water, Redmond Clay, Real Salt, essential oils, and xylitol. The Redmond clay was a turn off at first until I went to the website and read more about. It what was not in the toothpaste that I loved the most. EarthPaste does not contain foaming agents, coloring, glycerin, and sodium laurel sulfate. Through my research I learned that sodium laurel sulfate could cause mouth(canker sores) in some people.   I brushed with the EarthPaste toothpaste, expecting it to taste nasty. I was surprised at how awesome it tasted. It did not taste like clay but it had a nice cinnamon taste to it. My teeth felt nice too after I brushed. I just had to know what benefits the Redmond clay had. I found out that it is a natural polisher and cleanser that is also mineral rich and alkaline. I like the mineral rich part of it as I have weak teeth that could use some remineralization. I was so excited about this natural toothpaste that I wrote the company. I wish I had known about how sodium laurel sulfate causes canker sores a lot sooner. As for my use of EarthPaste and my weak teeth, I will not know until February as that is when I have a cleaning. For now I will enjoy the way my teeth feel after each use of EarthPaste, fresh and clean.

How To Make A Fat Free Iced Green Tea Latte



      Iced green tea lattes are a popular item at the coffee shops. I have seen a lot of people ordering these yummy green drinks. Green tea lattes may be good for you, but the ones at the coffee shops are usually loaded with fat and sugar. I recently went to a website of my favorite coffee house to look at their drink menu. I was shocked to see that my favorite tall cold green tea drinks had 35-45 grams of sugar in them. 35 grams of sugar is equal to about 9 teaspoons or 3 tablespoons of sugar. I am going to show you how to make a healthy version of the cold green tea latte and it tastes just as good as the ones you buy. Mine will also save you money. Once you see how easy it is to make a cold green tea latte at home, you will never pay big bucks for one at the coffee shop again.



  So what is a green tea latte anyway? A green tea latte is simply a drink that is made with milk and green tea powder. Green tea powder or Matcha is made from the leaves of green tea. Now we all know green tea is good for us, but matcha is even better for us as it has way more antioxidants than a cup of brewed green tea. Matcha is the powerhouse of green tea. It is said that one teaspoon of matcha equals ten cups of brewed green tea. Matcha has other great benefits too. This green powder enhances your mood, aids in concentration, boosts metabolism, and burns calories. The awesome thing is it does not give you the jitters like coffee, so it is a great alternative. Some people even say that matcha calms the mind and relaxes the body. I love that green tea powder has insoluble fibers, antioxidants and L-Theanines in it.                                 Fat Free Iced Green Tea Latte

                                            1 cup skim milk or milk substitute like almond milk
                                            1 teaspoon Organic Wise Organic Matcha Green Tea Powder
                                            2 teaspoons sugar or other sweetener like stevia
                                             1 teaspoon vanilla extract
                                            4 ice cubes
             
                   Place all ingredients in a blender and process until smooth. Pour into a glass and enjoy wit a straw. You can add more sugar if you want it sweeter. To make the drink even more delicious, you can top it with whip cream. The whip cream does add fat to this drink, but it is so worth it.
