I discovered a new way to make vegetables more appealing to my family. I am always looking for new ways to get my family to eat their veggies and I discovered that roasting them in the oven make them more flavorful. Last time I roasted a cauliflower, my husband and I ate the whole head of cauliflower. Roasting veggies is so simple. You can use most any veggie you have. I just went shopping so I had a variety of veggies. I used broccoli, cauliflower, carrots, and brussel sprouts.
Cut the veggies in pieces, the carrots and brussel sprouts I left whole but you could cut them if you want. Place the veggies in a bowl and add 1 tablespoon oil. Stir the oil onto the veggies. Then place the veggies on a baking tray, spreading them in a single layer. Sprinkle salt and pepper over the veggies. You can also use other spices too. Bake for 25 minutes at 400 degrees. Turn the veggies over after 12 minutes and bake until lightly brown. The result is a wonderful veggie that is so much better then cooking them in the microwave. This is a great way to cook veggies when you have something else in the oven. I was making a no boil baked pasta dish at the same time.

I LOVE roasted vegetables. I am a fan of broccoli, cauliflower, and I really like honey-roasted carrots. I forgot, I love Brussels sprouts too. I should roast more often.
