Great Italian Pasta Salad That Is Great For A Summer Dinner

I have found another great dish that is great for a hot summer night. This dish does not require you to turn on the oven and is served cold. This dish is also great for potlucks and picnics as it does not need to be warmed up. My italian Pasta salad is so easy to make. You probably have most of the ingredients in your pantry too.

Italian Pasta Salad

2 cups dried pasta
1 can 15 ounces diced tomatoes, drained
1/4 cup chopped black olives
1 cup cubed mozzarella cheese
1 Tablespoon dried basil
3 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper

Make the pasta according to directions on the package. You can use any shape of pasta. I used radiatore but shapes like rotini and bowties would work great too. When pasta is done drain and rinse in cold water. Then add all the remaining ingredients to the pasta in a large bowl and mix well. This dish is best served cold.

This pasta salad can be made with fresh tomatoes and fresh basil too, just use 2 cups diced tomatoes and 1/4 cup chopped fresh basil leaves. I can't wait to try this dish with fresh garden tomatoes.

Look how simple this pasta salad is to bring to a summer picnic. My church is having a day at the park and I will be making this dish.

I just love dishes that are easy to make in the summer and don't require the oven. What are some of your summer ideas for dinner?

  6. I love pasta salad & your recipe sounds delicious! Although my family would demand some meat to make it a dinner, but it wouldn't take anything to grill up some chicken to go with it.

  10. This looks tasty. I like recipes that incorporate black olives, and I don't get a chance to eat them that often.
