Healthy Mac And Cheese Spaghetti Pie




   I am starting the new year eating healthy and that means I am finding ways to get my family to eat healthier too. My family loves mac and cheese but it tends to be an unhealthy dish with all the cheese in it, so I made a healthier version of mac and cheese. I used whole wheat pasta, broccoli and cottage cheese to give my family some nutrition into them. My family tends to not eat enough veggies, especially the 8 year old and broccoli is not his favorite veggie. My 8 year old loved this dish even though he knew it had broccoli in it. The cottage cheese gives the dish a great creamy flavor and nobody knew it was in it. If my younger boys knew that cottage cheese was in this dish, they would not eat it. I use whole wheat spaghetti in my dish as that is all I had, but any whole wheat pasta would work too.

Healthy Mac And Cheese Spaghetti Pie

12 ounces whole wheat pasta
1 pound cooked broccoli,chopped into bite size pieces
16 ounces low fat cottage cheese
1 3/4 cups shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon black pepper
1/4 cup shredded cheddar cheese 

Cook the pasta as directed on package and drain. While pasta is cooking combine the broccoli, cottage cheese, 1 3/4 cups cheddar cheese, garlic powder, and pepper in a large bowl. When pasta is done add to the broccoli mixture and stir until well combined. Lightly oil a 9 X 13 baking dish and place the pasta mixture in it. Cover the dish with foil and bake for 30 minutes at 350 F. Remove foil and sprinkle the dish with the 1/4 cup of cheese. Bake uncovered for 20-30 minutes or until cheese is melted. Cut the pasta into squares and serve.
