Cheddar Rosemary Bread


   I just love the way rosemary tastes in food. It also has a wonderful scent to it. I have a big rosemary bush in my yard and I love that I can just cut a sprig of rosemary when I need it. I cook and bake with rosemary often. I decided to make bread with my rosemary and made a loaf that does not require yeast. This bread is simple to make also as it uses one bowl. I also wanted a bread that was lower in fat so I substituted applesauce for some of the butter. The applesauce gave the bread great moisture. Pair this bread with soup for a delicious meal


Cheddar Rosemary Bread

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons fresh rosemary, finely chopped
3 tablespoons butter, melted
2 eggs
1/2 cup milk
1 cup applesauce
1 1/2 cups shredded cheddar cheese
1/4 cup shredded cheddar cheese for topping the bread

Preheat the oven to 350 F

Lightly grease a loaf pan. In a bowl, combine the flour, baking soda, baking powder, and salt. Add the rosemary. Then add the melted butter, eggs, milk, and applesauce to the flour mixture and combine well. Add the 1 1/2 cup shredded cheese and mix well. Pour batter into the prepared pan and sprinkle the 1/4 cheese on top. Bake for 50 minutes or until an inserted knife comes out clean. Cool the bread for 10 minutes before taking the bread out of the pan.
