Gluten-Free Caramelized-Onion Pizza

Pizza just got a healthy makeover! This Caramelized-onion pizza is made on a delicious grain-free crust.



   Going gluten-free no longer means giving up your favorite foods. You can still enjoy delicious foods like pizza. This pizza has a chewy crust that is not only gluten-free but also grain-free. It is made with 8 simple healthy ingredients like almond flour, flax meal and cauliflower. Unlike other homemade cauliflower pizza crusts that you may have tried in the past, this naturally gluten-free crust looks and almost tastes just like a regular pizza crust made from flour. The caramelized onions and mozzarella cheese gives this pizza a taste that is out of this world.

  While I don't have to eat gluten-free, I choose many gluten-free foods as I find they taste better and can be healthier. I know that sounds weird as many years ago gluten-free foods were bland and boring. Not anymore as companies are using better natural ingredients to make their food taste good. One of these companies is Simple Mills. They make pre-made baking mixes for cookies, cakes, and bread made from real ingredients. They’re all gluten-free, paleo-friendly and dairy-free. Their pizza dough mix contains 8 simple ingredients like almond flour, arrowroot powder, flax meal, cauliflower, baking soda, oregano, cream of tartar and garlic. I don't know how they do it, but they use these ingredients to make a dough that is almost as good as delivery pizza dough. This pizza crust is one you can pick up with your hands and it will not fall apart. Oh, and the taste is amazing!

  My caramelized onion pizza does require some time to make it but it is not because of the grain-free crust. You simply add water, oil and apple cider vinegar to the mix and it combines into a wonderful dough that you can shape with your hands. My caramelized onions are what takes time as they have to be slow cooked for the great taste. Trust me, if you have never had caramelized onions, it is worth the time. 




           Gluten-Free Caramelized-Onion Pizza

INGREDIENTS

2 tablespoons extra-virgin olive oil
2 large onions, thinly sliced and diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 Simple Mills pizza crust
2 tablespoons fresh rosemary, minced
2 cups shredded mozzarella cheese


Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook onions with 1/2 teaspoon salt and 1/4 teaspoon pepper, uncovered, stirring occasionally, until softened and beginning to brown, about 10 minutes. Reduce heat to moderate and continue to cook, stirring occasionally, until tender and golden, about 15 minutes more. Reduce heat to low and continue to cook, stirring occasionally, until very soft and deep golden brown, about 15 minutes more. Remove from heat and cool to warm, about 10 minutes. Onions can be cooked a day ahead of time, cool completely and store in the fridge.
Preheat oven to 350°F.
While the onions are cooling, make your Simple Mills pizza crust following directions on the box. This box makes two crusts but I choose to make one large crust. Form the pizza dough on a lightly oiled pizza stone. Then spread the onions all over the dough. Sprinkle the rosemary all over the onions and then top with the cheese.
Bake for 15 minutes or slightly longer for a crispier crust. Allow to cool for 10 minutes before slicing and serving.
