Plant Based BBQ Pulled "pork" Jackfruit Tacos

Most people have not heard about jackfruit and have no idea what it is. I. myself, have just discovered it. Jackfruit is a fruit that can be used as a vegan or plant-based meat alternative. When unripe jackfruit is cooked it soaks up flavor well and has a stringy, “meat-like” texture. 

 When jackfruit is cooked in sauces like barbecue sauce it has a taste and texture similar to pulled pork. So many people who follow a plant-based or vegan diet love to make sandwiches or tacos with this amazing keto-friendly fruit.

  What is jackfruit?

 Jackfruit is a large fruit tree-borne fruit that is a green oblong fruit with a bumpy, fleshy exterior. This fruit can weigh up to 100 pounds and grow up to three feet long. The average size of the fruit that is sold in stores is 10 to 25 pounds. On the inside, jackfruit contains many pale-yellow, plump bulbs, which are edible and joined at the core. The seeds can also be cooked, eaten on their own, or ground into flour.


What Does Jackfruit Taste Like?

 When eaten ripe and raw, jackfruit is sweet and has a taste similar to pineapple or mango. When jackfruit is unripe, it has more of a neutral flavor, like a potato, and works well for a meat alternative like this pulled "pork" sandwich recipe. Jackfruit is great for keto-friendly recipes. Where do I buy jackfruit?

 I have seen jackfruit in stores like Sprouts in the produce section but I have never bought it that way as the fruit is very large and ripe. Fresh jackfruit is huge and hard to process! So you need to buy jackfruit in a can.

 I buy my jackfruit in a can at places like Trader Joe's and Sprouts. For this recipe, look for unripe jackfruit in brine and not syrup. The ripe jackfruit is canned in syrup and would be too sweet for this recipe. If you are looking for sweet fruit, then buy ripe jackfruit as it is delicious. 

 Just remember Unripe jackfruit is canned in brine and Ripe jackfruit is canned in sweet syrup. Look for canned jackfruit at stores like Sprouts, Trader Joe's, and Whole Foods.


For vegans and vegetarians, craving pulled pork, meaty jackfruit can be slow-cooked in barbecue sauce to make this satisfying plant-based meat substitute.

Plant Based BBQ Pulled "pork" Jackfruit Sandwiches

This BBQ Pulled 'Pork' Sandwiches are made from jackfruit. This wonderful fruit is a vegan meat substitute that when shredded acts like pork and makes a tender "meaty" sandwich.

ingredients

  • 1 tablespoon  olive oil
  • 1 medium onion, chopped
  • 2 20 oz cans young, green jackfruit in brine (NOT syrup)
  • 1 cup BBQ sauce (get the recipe HERE)
  • 4 sandwich buns

instructions

  1. Drain and rinse the jackfruit. Using a fork or potato masher, pull apart the fruit so it resembles pulled pork
  2. Heat the oil in a large skillet. When the oil is hot add the chopped onion and cook for 5-7 minutes until the onion is soft.
  3. Add the rinsed jackfruit, BBQ sauce, and water to the skillet. Stir well and cover leaving to cook on medium-low heat for at least 20 minutes, stirring occasionally.
  4. Stir in additional BBQ sauce if desired. Spread the jackfruit on your burger buns and serve. The buns can be toasted if desired.
