One Bowl Vegan Peanut Butter Cookies

 When it comes to desserts, I think my favorite dessert is cookies. I am a cookie person and love cookies. The problem with most cookies is that they are made with dairy products which is a big no-no for me. Since discovering that dairy was the cause of my severe asthma attacks through an elimination diet and a food allergy blood test, I do not consume and dairy products. That includes butter and milk, which are the main ingredients in most cookie recipes. So in order to enjoy cookies, I have to bake cookies from scratch.

Vegan baking substitutes

 It is good that I enjoy baking cookies. I have been baking cookies for a long time, since I was a kid. The only difference in my baking today is that I have to swap out the dairy ingredients in the cookie recipes for vegan ingredients. As vegan ingredients do not contain any dairy. So I now use vegan butter in my best Christmas sugar cookie recipe and vegan chocolate chips in my soft pumpkin chocolate chip cookies. I also use plant-based milk in my sweet biscuits for strawberry shortcake recipe. I have discovered that dairy-free baking is easy and delicious.

Making peanut butter cookies with grandma


I think the first cookie recipe that I ever made was peanut butter cookies. I think I was probably 4 years old at the time and I remember making peanut butter cookies with my grandma. My older siblings would go to school and I would head down the stairs to my grandma's house. My grandma would let me help her mix up the peanut butter cookie dough and then she would give me a fork. I would then carefully dip the fork into the flour and then place the fork on the cookie dough balls. I have fond memories of making the criss-cross patterns on the balls of peanut butter cookie dough. I also remember tasting the sweet raw cookie dough, something that kids can't do today in fear of salmonella.

One Bowl Vegan Peanut Butter Cookies

This vegan cookie recipe uses just one bowl and is so easy to mix up. You will love that this plant-based recipe does not require any type of oil.

Ingredients:

  • 2 cups creamy peanut butter or one 16 ounce container
  • 4 teaspoons vanilla extract
  • 3/4 cup nondairy milk 
  • 2 cups of sugar 
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon of sea salt

Instructions:

  1. Preheat oven to 350°F and line a baking sheet with parchment paper or silicone baking sheet.
  2. In a large bowl or stand mixer bowl, combine the peanut butter, vanilla extract, almond milk, and sugar. Stir until well combined.
  3. Add the flour, baking soda, and sea salt.  Mix well. The cookie dough should be thick and difficult to stir.  This is when a stand mixer comes in handy. If you don't own a stand mixer, then feel free to mix up the cookie dough with your hands. 
  4. Spoon out a small amount of cookie dough and roll the dough into about 1.5 inch balls. Place the cookie dough balls about 2.5 inches apart on the baking sheet. Next, use a fork to flatten the cookies, creating a crisscross pattern.
  5. Bake for 10-12 minutes. Allow the cookies to cool before removing from the cookie sheets.
