This delicious pudding is lactose-free and dairy-free!
I admit I have a sweet tooth and will give into to it frequently. So, when I do crave a sweet treat, I try to eat something nutritious so I don’t feel guilty indulging. One sweet treat that I have been enjoying is a high-protein pudding. My family would be surprised to see me enjoying pudding as my lactose problems keep me from having things made with real milk. I can enjoy this chocolaty peanut butter pudding because it is made with coconut milk. It gets its thick texture from the addition of chia seeds while also rich in omegas. I add a fermented protein powder for the added bonus of protein. This delicious chocolate protein powder also has awesome digestion support. The added creamy peanut butter and crushed pretzels make this pudding so delicious! I just love how the salt from the pretzels brings out a unique chocolate flavor. Salt and chocolate were made for each other!

Chocolate Peanut Butter Pretzel Protein Pudding
1 cup coconut milk
1 scoop Genuine Health Fermented Vegan Chocolate Protein Powder
2 tablespoons chia seeds
2 tablespoons peanut butter or 2 tablespoons PB Powder and 1 tablespoon coconut milk for low-fat version
2 tablespoons crushed pretzels
Combine the protein powder and chia seeds in a shaker bottle with the coconut milk. Shake well until combined. Place the mixture in the fridge or 4-6 hours so it can thicken. Then place the peanut butter in a microwave-safe dish and heat it the microwave for 30 seconds or until the peanut butter becomes soft. Let the peanut butter cool down. If using PB powder, then combine with the milk until thick. Then stir the peanut butter into the chilled pudding. Top with the crushed pretzels and enjoy!
