Healthy Chocolate Zucchini Protein Bread

A healthy delicious twist on zucchini bread. Bursting with plenty of chocolate flavor and plenty of nutrition.


       It seems every year, the neighbor's garden grows too much zucchini and she is begging me to take some. I don't mind one bit and I get excited that I am getting some garden fresh zucchini. My mind starts thinking of all the things that I can make with this green summer squash. My son always wants me to make some homemade zucchini bread. I always say yes to his request and I make several loaves of healthy zucchini bread. When I make my zucchini bread, I use less sugar in the recipe and add protein powder. So my family gets a slice of delicious zucchini bread that is better for them. This zucchini bread is super moist and full of sweet flavor. It is healthy enough to eat for breakfast. 



Zucchini bread made two ways

I was busy making Lemon Blueberry Zucchini Bread when my son asked me if I could make chocolate zucchini bread. I had plenty of shredded zucchini so I said sure. My son grabbed the chocolate chips from the freezer and started to look for the cocoa powder in the pantry. I told him that I did not think that we had any cocoa powder, as I used it up when I made my gluten-free black bean brownies last week. I suggested to my son that we just use the chocolate chips but he said: "mom, we can use chocolate protein powder." I was not even thinking about making the chocolate zucchini bread a healthier protein bread but since my son suggested the vegan chocolate protein powder, I went for it. As my son was pulling out the protein powder, he then asked if he could make a chocolate peanut butter smoothie. I love that this child is such a healthy eater!

Veggies and chocolate are a good thing!

 When I make zucchini bread, I like to add extra zucchini as it not only adds extra nutrition to the bread, it also adds some extra moisture. This bread is so moist and loaded with protein. The protein powder that I used has a rich chocolate flavor so it adds lots of chocolate flavor to this healthy bread.  My boys love it when I use this protein powder in peanut butter chocolate pancakes.

Healthy Chocolate Zucchini Protein Bread

1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
2 scoops protein powder, chocolate flavor
1 large egg or egg substitute
1/2 cup honey
2 tablespoons coconut or avocado oil
1/2 cup yogurt
1 1/2 cups shredded zucchini, make sure to pack it into the cup
3/4 cups chocolate chips

Oven 350 F
   Lightly coat a 9 by 5-inch loaf pan with oil.
1. Combine the flour, baking powder, baking soda, and protein powder, set aside.
2. Beat the egg, honey, and oil with a whisk or mixer.  Add the yogurt and mix well.
3. Then add the flour mixture and zucchini, combine this by hand.
4. Fold the chocolate chips into the mixture.
5. Pour the batter into the prepared pan. Bake for 40-60 minutes or until an inserted toothpick comes out clean.
6. Cool the bread for about 30 minutes. To remove the bread from the pan, take a butter knife around the edge of the bread and then place a plate on top of the bread. Turn the pan over and lightly tap. The bread should come out of the pan.

  1. Veggie and chocolate are a great thing. I make a meal replacement shake 4-5 times a week for dinner that is raw spinach, chocolate flavored veggie powder, banana and almont mild and I love it.

  55. Great idea, but there may be too much moisture in the recipe. The bread turned out very dense and undercooked after following all directions on my first attempt, and still very wet in the middle after cooking it 40 minutes longer on my second attempt... very disappointing
