Dairy Free Chocolate Dipped Salted Almond Butter Cookies

 Looking for a delicious cookie idea for a cookie exchange? These Chocolate Dipped Salted Almond Butter Cookies are so good! The cookies are both dairy-free and gluten-free.

A sprinkle of salt adds intense chocolate flavor to these delicious cookies.


 The other day I wanted to make some cookies for my family as it was Valentine's Day and I wanted to make them a sweet treat. I wanted to make chocolate chip cookies but realized that I did not have any vegan butter in the freezer. So I thought about what cookie recipe used oil and the first cookie that came to my mind was peanut butter cookies. I then realized we were low on peanut butter and saw a jar of almond butter in my pantry. 

 So I pulled out my recipe for no-nut butter peanut butter cookies, the one that uses a nut-free peanut butter spread, and used almond butter instead. I also added chia seeds to the cookies for some healthy omegas and fiber. While I really love my cookie recipe that uses a peanut butter substitute, I only make that when my daughter comes over, as she has a peanut allergy.

 I was also craving chocolate, so I was happy to find dairy-free chocolate chips in the pantry. Since I also wanted to enjoy the cookies, I made the cookies a dairy-free recipe. Dairy-free chocolate chips tend to taste like dark chocolate so to make this a better-tasting chocolate, I always sprinkle salt on top of the chocolate. It is amazing how salt brings out an amazing taste when used on chocolate. The chocolate also gives the cookies a nice look. These cookies were a perfect recipe for Valentine's Day.

Cookies with healthy ingredients 

 The healthy person in me always looks for ways to add nutrition to everything. So I added some healthy ingredients to my cookies. That way I could enjoy more than one cookie and not feel guilty about eating cookies. I do love cookies with my coffee. The almond butter added some protein to the cookies while oatmeal added some heart-healthy fiber. I also added some chia seeds to these delicious cookies for some omegas, protein, and fiber. The chia seeds add a nice crunch to the cookies.

 My family really enjoyed these Chocolate Dipped Almond Butter Cookies and had no clue that they were dairy-free and made with some healthy ingredients. I made some of the cookies without chocolate and my younger son is enjoying them. I think the ones dipped in chocolate and sprinkled with salt are so delicious. I used kosher salt for the tops of the cookies as this salt is coarser. If you don't have kosher salt, you can use regular salt but sprinkle very lightly as too much salt would make the cookies salty.  I will be making these cookies again.

I love salt and I love chocolate and sweet food, but I tend to alternate back and forth rather than eat it together.
