I have discovered that the best way to cook food for one person is with a handy single-person cooking device. My favorite single-person cooking device is a red football-shaped cooker called the Red Copper 5 Minute Chef. Vegan burgers for one
The other day I was craving veggie burgers and I did not want to spend a lot of time mixing and cooking my usual veggie burger recipe that is made with beans and rice. I was hungry and I did not want to wait for the rice to cook. I also did not want to make all four bean and rice veggie burger patties. The other problem was I only had one can of black beans in my pantry so, in order to make my usual burgers made with beans and rice, I would have to cook dried beans and that takes a long time. So I grabbed the one can of black beans and some instant oatmeal from my pantry. I also grabbed my Red Copper Five Minute Chef cooker, so I could make quick veggie burgers for one person.
Don't worry if you don't own a Red Copper 5 Minute Chef as you can make this veggie burger recipe in a frying pan. Since I did not want for the rice to cook, I knew that oatmeal is a great substitute for rice and it makes the veggie burgers so moist. Think about how your mom made meatloaf. My mom would use what she had in the house for her homemade meatloaf and that included bread, rice, or oatmeal. If you like meatloaf, you should try my vegetarian meatloaf that tastes like real meatloaf.

I always keep several cans of beans in my pantry for quick plant-based meals or meatless meals. Sure cooking dried beans is more economical but it can be time-consuming. Using a pressure cooker to cook beans may be faster buy it is still not quicker than can beans. When I do use my pressure cooker, I like making Mock Chipotle Pinto Beans in the pressure cooker. Canned beans are nutritious and are great for making easy hummus and other meals that are made with beans and rice. So I recommend always having several varieties of cans of beans in your pantry for meatless meals.
How to make the best veggie burgers
Most people complain that cooking veggie burgers with beans at home results in dried burgers that fall apart. The way to may moist veggie burgers is to make sure that the ingredients are nice and moist. So mash up the beans and add plenty of liquid to the ingredients. The liquid that I like to use is ketchup as it adds great flavor to the burgers. Using oatmeal also helps the burgers stay together better, as oatmeal absorbs the liquids and thickens up. So don't be afraid to add more ketchup to this veggie burger recipe as you want the bean burger mixture to feels like mushy ground beef. As long as the bean mixture forms a nice burger patty in the pan, it will cook up just fine.
The best way to mash beans
I used to use a potato masher to smoosh up my beans but I discovered that using the bottom of a drinking glass does a better job of mashing. Plus you don't have to worry about beans getting stuck in the crevices like you do with a potato masher.
Make one burger at a time
This bean veggie burger recipe makes more than one burger. Depending on the size of the burger pattie, you may get 2-3 veggie burgers out of the mixture. This vegan burger mixture will last in the fridge for a week and longer in the freezer. So make how many burgers you will be eating and then store the mixture in the fridge for another meal. That way you can have a fresh moist burger that is cooked to order for each meal occasion. Serve the veggie burgers on buns with desired toppings like lettuce, tomato, ketchup, etc. I like to place my burger in a tortilla or on a plate of greens. Veggie Burgers For One
Ingredients:
- One can of beans ( black or pinto), drained
- 3/4 cup of instant oatmeal
- 1/4 cup of ketchup
- 1/2 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for cooking
Instructions:
- Place the beans in a large mixing bowl and mash them well with the bottom of a glass, a potato masher, or a fork.
- Add all the remaining ingredients to the bowl with the mashed beans. Stir well. To get the veggie burger mixture combined thoroughly, I like to mix it with my clean hands. Don't worry about germs as cooking the veggie burgers will kill any germs in the food. If the mixture is dry just add more ketchup.
- If using the 5 Minute Chef to cook the burgers, lightly coat both sides of the cooker with oil. Then place enough mixture to fill up one side of the cooker, pressing it down with a spoon.
- Cook the burgers for ten minutes in the 5 Minute Chef, turning the device over halfway.
- If cooking the burgers in a frying pan follow the bellow steps:
- To assemble the veggie burgers, take a 1/2 well-packed cup of the mixture, and use your hands to form it into a burger shape.
- Heat up a skillet to medium heat and lightly coat it with oil.
- Place the formed burger into the pan and cook for 4-5 minutes on each side.
- Serve the veggie burgers on buns with desired toppings like lettuce, tomato, ketchup, etc. Store leftover burger mixture in the fridge for a week or in the freezer for 6 months.
