The other day I made homemade carrot juice from a huge bag of fresh carrots. It was my first time using a vegetable juicer machine, so I was unprepared for the amount of carrot pulp that was in the fruit juicer machine. I knew that the process of turning carrots into carrot juice did not use the whole carrot and extracted the juice from the carrots but that was a lot of carrot scraps left. Don't Toss That Carrot Pulp!
After you squeeze all that orange juice out of the carrots and start cleaning up the juicing machine, don't toss the leftover carrot pulp? While it may look like trash, that container of carrot juicing leftovers is loaded with fiber and still has some nutrition in it. The carrot waste is perfect for many recipes. It has the perfect texture to add fiber to your favorite healthy recipes. Carrot pulp can even replace some of the flour in gluten-free recipes.

What can I make with carrot pulp?
So I enjoyed a cup of my DIY delicious sweet carrot juice and placed the rest in the fridge. Then I turned on my computer and searched for recipes for carrot pulp. Carrot pulp is loaded with fiber and nutrition. What I found was the usual grated carrot recipes like carrot cake and carrot muffins but one recipe stood out to me. That recipe was Homemade Crunchy Carrot Juice Pulp Crackers. While the name of the recipe did not sound appealing, the photo of the carrot crackers looked delicious. Also, the description of the crackers sounded yummy. Crispy gluten-free crackers that are made with superfood ingredients sounded amazing.

+ Freeze it for future recipes: Place the carrot pulp in quart-size freezer bags, about 2 cups, for future recipes

+ Add to carrot juice pulp waffles: I added carrot pulp to my homemade waffles and my husband was surprised that they did not taste like carrots but I snuck fiber into his meal.

+ Make carrot juice pulp crackers: This one may sound strange but they are super tasty and crunchy.

I love crackers and they are my favorite snack. My boys also like crackers so we buy a lot of crackers from the store. Ingredients needed for carrot pulp crackers
These crunchy carrot crackers are made with 7 superfood ingredients and I bet you have many of them in your pantry. If not, the carrot cracker ingredients are easy to find in stores.
Carrot Juice Pulp ~ Save the leftover pulp from making carrot juice and store it in the fridge for up to a week or even longer in the freezer
Flax Meal or Flax Seed ~ You can use flax meal or grind flax seed into flax meal
Chia Seeds ~ I like using black chia seeds but white is fine to use
Quinoa Flour or Almond Flour
Salt ~ Salt and crackers go together, if you are watching your sodium intake, feel free to omit
Garlic ~ Minced or powder
Water
Sesame Seeds ~ For sprinkling on top of the crackers
Mix, press, and roll
These crackers are super easy to make. Just mix the ingredients into the carrot pulp and let it rest for 5 minutes. Then add enough water until you can form the mixture into a ball and it sticks together. Think about the texture of cookie dough. Then press and roll the cracker dough on a baking sheet. Sprinkle sesame seeds on the crackers. Take a pizza cutter and slice the dough into squares. Then place the crackers into the oven and bake. It could not be simpler. In no time, you have crackers that are amazing for snacking or dipping into your favorite dip.
