Beet Waffles Made With Beet Juice Pulp

The other day I made homemade beet juice from a huge bag of fresh beets. If you have ever made homemade juice, then you know about the leftover pulp. So I finished making my juice from the beets and made about 8 cups of beet juice. That left me with a lot of beet pulp. While most people would toss the vegetable juice pulp, that is a bad idea.

The pulp from making vegetable juice contains a lot of fiber and nutrients. This nutritious beet pulp can be used in so many recipes. So I froze almost all of the beet pulp and decided to use the rest to make plant-based beet burgers and beet waffles. You may have remembered last year when I received a new juicer and made homemade carrot juice. It was then that I discovered how to make carrot juice pulp waffles. So I then knew that the leftover beet pulp would make some delicious purple beet waffles.

If you don't own a fruit and vegetable juicer, check out this juicerIt is an amazing juicer at an amazing price.

Beet Waffles Are

+ Purple

+ Delicious

+ Nutritious

+ Loaded with fiber

+ A healthy breakfast option

+ Can be frozen

I could not wait to make some beet pulp waffles. I just knew that the purple beet pulp would give the waffles a pretty purple color. Purple is my favorite color. Like the carrot waffles that I made last year, I knew that the beet pulp would add some awesome nutrition to the waffles but not add any beet taste.

I like making healthy waffles as they can be enjoyed in so many ways. You can eat the waffles for breakfast or as a healthy snack. I also love using homemade waffles for sandwiches. Waffles also make great buns for my homemade veggie burgers. If you want to add even more nutrition to waffles, then add a couple scoops of protein powder to the waffle batter. I have found that Nuzest Clean Lean Natural Protein works best in healthy recipes. This vegan protein powder has the best texture for recipes and mixes smoothly into the batter.

Other amazing uses for beet juice pulp

+ Freeze it for future recipes: Place the beet pulp in quart-size freezer bags, about 2 cups, for future recipes

+ Add it to smoothies: Beet pulp is loaded with fiber so it is a great way to add fiber to smoothies.

+ Compost it: Give your soil some love with the carrot waste

+ Add to homemade veggie burgers: Add bulk and fiber to homemade veggie burgers.

+ Make beet juice pulp crackers: This one may sound strange but they are super tasty and crunchy.

+ Add to quick bread: Adds fiber and texture without a strong beet taste.

+ Add to muffins: Adds fiber and texture without a strong carrot taste.

+ Make chocolate cake: Beet pulp adds a red velvet color to chocolate cake and has a delicious taste without a strong beet taste. I like to add one cup of beet pulp to the cake mix and I also decrease the water by 1/4 cup.

  8. This is my 2nd time making them. I am known as mswendy. I'm trying to stay healthy in my sixties and I don't like wasting the pulp when it's perfectly good to use. I have a miniature waffle iron. I like putting peanut butter on them and having them as a snack.
