I love hummus as it is so healthy and loaded with protein.
A couple of months ago I attended a health conference and they served these amazing hummus products. My favorite flavor was the beet hummus. The taste was so amazing that I have splurged so many times and have bought this pricey hummus. It has become a healthy impulse buy when I go shopping. The last time I was at the store, I decided to try and make this delicious beet hummus at home. So I bought some can beets and can white beans. Then I searched the internet for a recipe and checked the ingredients on the last container of my store bought hummus. The recipes that I found online did not have most of the ingredients that were listed on the store bought container so I decided to experiment in the kitchen. I was so surprised that I was able to make a homemade version that is very similar to my favorite store bought beet hummus. I used can beets and can white beans as I did not feel like roasting beets or cooking beans. I do know that roasted beets would give this recipe a much better flavor and it may also omit the need for honey. I will have to try roasted beets in the future and let you know. For now, this easy recipe is awesome as I can make it in a flash.
Easy White Bean Beet Hummus
Makes over 2 cups
Ingredients
1 can beets, 14-16 ounces, drained
2 cans white beans, 15 -16 ounces, drained and rinsed
2 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon garlic powder
2 tablespoons olive oil
1 teaspoon sea salt
optional 1 tablespoon beet powder to give it a more purple color
Place all ingredients in a food processor and blend until smooth, about 2 minutes. If desired, top the hummus with roasted pumpkin seeds and some chopped can beets. This hummus can be stored up to a week in the refrigerator. Serve with raw veggies, crackers, and pita bread.
