Roasted Rainbow Brussels Sprouts Made With Palm Oil

This dish is so pretty and healthy



  Now that the weather is cold, I have been working out at the gym more. My favorite machine to use at the gym is the elliptical machine as is works out my whole body and feels like running to me. I like that this exercise machine has a TV connected to it so I can watch the Cooking Channel as I get my workout in. Lately, The Pioneer Woman has been the show that I have been watching as I get my miles and minutes in. I have been enjoying her holiday recipes for inspiration on what to cook. The week before Thanksgiving, she was making a Brussel sprout dish that looked so delicious so I knew that I had to create this recipe as I love Brussel sprouts. Her dish was also so pretty with the different colors. I looked up The Pioneer Woman's recipe on her website when I got home from the gym and then made some modifications to the recipe. I substituted palm oil for the olive oil and it gave the dish a nice buttery taste as well as extra health benefits. I made these Brussel Sprouts for Thanksgiving and they were so delicious. I think Brussel sprouts are my favorite vegetable. My husband loves when I make Maple Roasted Brussels sprouts for dinner.



Palm oil comes from the fruit of the oil palm tree

  I discovered palm oil at a conference that I went to last month and I really loved the way it tasted on popcorn. So I have been experimenting with the oil in my cooking and baking. Palm oil has a nice orange color to it so while it makes my popcorn beautiful it did not work in my chocolate chip cookie recipe that well. The cookies tasted great but I did not care for the orange color that they had. So for now, I will just be using palm oil in recipes other than baked goods. I really like the buttery taste that the palm oil gives to my food and the health benefits are pretty amazing too. Palm oil has a natural source of Carotenoids & Vitamin E as well as fatty acids and other important fat-soluble micronutrients. I have found that palm oil is great for sauteing and when I make eggs.


I learned a new way to make a balsamic glaze

 Watching the Pioneer Woman has had other benefits as I learned a new way to make a balsamic glaze that does not involve me getting a second-degree burn. The last time I a reduced balsamic vinegar to a glaze, I splatter a drop on my thumb when I tried to pour it into a bowl. That drop formed a nice blister that hurt so much and took 2 weeks to heal. So I like the recipe from the Pioneer Woman's website as she uses plum or peach preserves along with brown sugar and the balsamic vinegar. This results in a glaze that does not harden so I can let it cool down and avoid burning myself.

Cutting the butternut squash is so simple

Step 1: cut off the ends

 Step 2: cut the squash in half and scoop out the seeds

Step 3: peel off the skin, cut the squash into strips, and cut into chunks.

Then peel and cut the onion into pieces. 

Slice off the ends of the Brussels Sprouts and then slice in half.


Roasted Rainbow Brussels Sprouts 

INGREDIENTS

1-1/2 pound Brussels sprouts, trimmed and halved
1 whole small butternut squash, peeled and cubed
1 whole large red onions, peeled and cut into wedges
2 tablespoons palm oil
1 teaspoon salt
1 teaspoon pepper
1 tablespoon fresh rosemary
1/4 cup dried cranberries
1/4 balsamic glaze- see recipe below

INSTRUCTIONS
Preheat the oven to 425 degrees.

1. Place the vegetables in a bowl with the palm oil and stir them to coat well with the oil. Stir in the salt, pepper, and rosemary.
2. Spread the vegetables on an oiled baking sheet or one that is covered with a silicone sheet.
3. Roast for 25 minutes or until slightly brown.
4. Remove from the oven and place in serving bowl and sprinkle the dried cranberries on top. Drizzle the balsamic glaze over the veggies.
  Serve immediately for best flavor.


Balsamic Glaze
1 cup balsamic vinegar
1 jar (15 Ounces) peach preserves
2 tablespoons brown sugar

INSTRUCTIONS
In a blender, puree the balsamic vinegar, peach preserves, and brown sugar until smooth. Pour into small to medium saucepan and bring to a boil over medium-high heat. Turn the heat to simmer and cook until the mixture has reduced by half. It should be fairly thick and will thicken further as it cools. Remove from heat and pour into a heatproof bowl. Drizzle about half or more depending on your preference, of the glaze over the Brussels Sprouts. The rest of the glaze can be stored in the fridge after it cools down. To use the glaze in another dish it may need to be warmed up. This glaze is also wonderful on pizza or a sandwich. The Pioneer Woman used it over tomatoes, basil, and mozzarella cheese.

Dairy Free Chocolate Pretzel Pie

This pie is so creamy and chocolate!


They could not even tell it was dairy-free.

 My family loves chocolate pie and every year that is what I make at Thanksgiving instead of pumpkin pie. My family already enjoys pumpkin pie in October as that is what my teen wants for his birthday instead of cake. This chocolate pie tradition started back in 2013 when I made this creamy mint chocolate pie. This year things were different as I discovered that a milk allergy was the cause of my severe asthma symptoms so that meant that I was not able to make my families favorite pie. I really wanted to but I knew that I could not resist tasting it. I made that mistake when I made a buttercream frosting last month for my other son's birthday and I coughed all night. So I had to find a recipe for a dairy-free chocolate pie that my family and I could enjoy. I came across several online that were gluten-free and dairy-free but I can have wheat so there was no need to make it gluten-free. So I made some modifications and made a delicious pie that my family enjoyed. They could not even tell it was dairy-free. This is a pie that vegan lovers will enjoy.

Pretzels and chocolate come together for an amazing taste!

 My delicious creamy chocolate pie has a crust that is made from crushed pretzels. The salt in the pretzels just add wonderful flavor to the chocolate pie, think salted chocolate! I used dairy-free chocolate chips along with coconut milk and that gave this pie amazing flavor. Who knew that coconut milk could turn dark chocolate chips into dairy-free milk chocolate chips. The chocolate chips that I used were from Enjoy Life. I wanted to use Nestle Toll House Simply Delicious Morsels but they are hard to find in the stores. I have only seen them once at Target but that store is far away from my house. The Nestle Toll House chips are my favorite and I need to stock up on them next time I find them. These chocolate chips are allergy friendly and made for people who follow a vegan diet. You can even make this delicious pie gluten-free by using gluten-free pretzels.

You will have a hard time believing this creamy chocolate pie is dairy free

  This creamy chocolate pie did take a while to make but it was so worth it. I have already made this pie two times as my family loves it. I so thought that it being dairy-free would keep them from eating the chocolate pie but nope, once the pie is made it is gone in two days after everyone eats 2 slices. This pie also tastes great with dairy-free whip topping. For Thanksgiving, I was able to find a coconut whip topping in a spray can made by Silk but when I went back to the store after the holidays, the store had none left. So I only put regular whip topping on individual pieces of pie instead of the whole pie. My family has already requested that I make this pie at Christmas and I will be doing just that but will have to use coconut milk for the almond milk as my daughter has a nut allergy. I may also add a peppermint taste to this pie with pure peppermint extract. I am glad that my daughter lives on her own as her nut allergy and my milk allergy can be challenging when we eat out.

Dairy Free Chocolate Pretzel Pie

INGREDIENTS
FOR THE CRUST:
3 1/2 cups pretzels crushed into small pieces
1/4 cup brown sugar
6 tablespoons vegan butter, melted

FOR THE GANACHE:
1/3 cup dairy-free chocolate chips
2 teaspoons coconut oil

FOR THE CHOCOLATE PUDDING:
1/4 cup unsweetened cocoa powder
1/4 cup cornstarch
1/2 cup sugar
pinch of salt
1 (13.5oz) canned (not boxed) coconut milk
1 cup unsweetened almond milk
2/3 cup dairy-free chocolate chips
1 tsp vanilla extract
1 tablespoon vegan butter


INSTRUCTIONS

MAKE THE CRUST:
1. Preheat the oven to 350F. Lightly grease a 9-inch pie pan with cooking spray.
2. Place the pretzels in a large bowl and crush into small pieces with a potato masher. Pour into a bowl and add the brown sugar and vegan butter. Stir to combine.
3. Pour into the prepared pan and press into an even layer. Bake for 10-12 minutes until toasted. Let cool for 15-20 minutes before filling with the ganache.

MAKE THE GANACHE:
Melt the chocolate and coconut oil together in the microwave at 50% power for 30-45 seconds, stopping to stir every 15 seconds. Stir until totally smooth. Pour and spread over the bottom of the prepared crust. Let it set slightly before adding the pudding, about 30 minutes.

MAKE THE PUDDING:
1. In a heavy-bottomed saucepan, whisk together the cocoa powder, cornstarch, sugar, and pinch of salt. Over medium heat while whisking, add the coconut milk and almond milk. Whisk until totally smooth. Continue to whisk until the mixture comes to a gentle boil. One the mixture bubbles continue to whisk and cook for another 2 minutes until thick. Remove from the heat and stir in the chocolate chips, vanilla, and vegan butter. Set the pan aside and let it cool to room temperature.

2. Pour the pudding into the crust. Smooth, then refrigerate until set, about 2 hours or up to 12 hours.

Top with dairy-free whip topping if desired and or additional pretzels.

Quick & Easy Peppermint Bark~ Dairy Free Version

This peppermint bark is so easy to make and only uses 2 ingredients!


  My son needed a holiday treat for his school party and I was short on time. So I made peppermint bark. His whole class loved the candy and everyone requested the recipe. They were shocked at how easy it was to make. This delicious peppermint candy only needs white chocolate chips and candy canes. It can be made in less than 30 minutes. You will never buy storebought peppermint bark again. You can also make this recipe with milk chocolate chips for a chocolate peppermint bark or if you have a dairy allergy then you can use dairy-free chocolate chips. I wish that I could find dairy-free white chocolate chips but no luck yet.

Quick & Easy Peppermint Bark
   1 bag white or milk chocolate chips (for a dairy-free version use dairy-free chocolate chips)
     1 box 12 count candy canes

Unwrap the candy canes and crush into small pieces. I crushed my candy canes in my blender on chop for a couple of seconds. If you don't have a blender or food processor, you can crush them in a bowl with a potato masher or in a ziplock bag. Set the candy aside and line a baking sheet with a silicone sheet, wax paper, or parchment paper. Place the white chocolate chips in microwave safe bowl and cook on high for 1 and a half minutes. Stir and cook in 30-second increments until melted. Make sure to stir after each 30-second cookings. Do not lick the spoon as doing so will get moisture on the chocolate and cause it to crumbled and not melt. Once the chocolate is melted, stir in the crushed candy canes. Then spread the mixture on the lined baking sheet and smooth it out to cover the entire pan. Let cool for an hour or until hard. Then break the candy into pieces.

  My church was collecting desserts for a school holiday food drive and I decided to place the candy canes and the white chocolate chips into a mason jar so that the family could make the bark. I know that I love cooking with my kids so I want others to have that same joy. I printed the recipe on a photo card and then tied it to the jar. I also added a cute label that I found online. It was such a festive looking gift.

A delicious treat 

  My family loves peppermint bark and always request for me to make it around the holidays. It is such an easy Christmas treat to make and it is also so easy to make for holiday potlucks and Christmas parties. I think this will be the treat this year that I make for the neighbors on Christmas Eve. After Christmas when the candy canes go on sale, I always buy plenty of boxes as they keep until the next Christmas. So if you need a delicious treat for a party or a hostess gift, you need to make this.

What Is CBD And Why I Use It For Pain Relief

 Now that I got the information about what CBD Oil is, I can tell you about why I use this natural supplement. I use this supplement for many reasons but the main reason that I use it is for natural pain relief and helping my body to heal from injuries. I had a trigger thumb sprain last year and I tried wearing a brace on it all day to help with the pain but it did not help with the pain.  Then there is the emergency that leaves you with very little time to get out of the house. Here in New Mexico, we have forest fires called controlled burns that can get out of hand in a matter of minutes if the wind kicks in. This is a common occurrence in the summer and it leaves many people who live in that area only hours to pack up their car to leave the area. So having a rescue kit that is ready to grab and go is needed.


What does one need in a rescue kit?

 Most people think of food and water when they are preparing for a disaster and they run to the store for bread and water. Buying emergency supplies is so much more than that.  The above is just a starter list of items that one needs to have in an emergency. Some of the items like food and water, you need to make sure that you have enough per person to survive 3 days, the typical time until help arrives. For my family of four, that is a lot of food and water. So one needs to think about how they are going to store all that food and about food spoilage. So that gets me to thinking that I need to pack some kind of food that has a lot of calories and fat and can last a long time. I think having S.O.S. Lemon Frosted Rosemary Holiday Sugar Cookies

 Rosemary adds a unique flavor to sugar cookies

   I think my favorite part of Christmas is cookie exchanges. Not only do I get to have fun making cookies but I get to trade them for lots of other cookies. Christmas is the one time that I spend all day making cookies as they are my favorite food. I think if I had to choose one cookie to be my favorite, it would be frosted sugar cookies. There is just something about a sugar cookie with frosting on them. The ones that I really love are the ones in unique shapes and decorated with many colors. A butterfly-shaped cookie just tastes so much better when it looks so pretty. Since I don't have the talent or patience to decorate cookies, I buy those at the bakery. So my talent may not be in how the cookie looks but I do a great job with how the cookies taste. When I make cookies I like to make unique flavors for the cookie exchange that I attend and the one cookie that always gets the most attention in my Lemon Frosted Rosemary Holiday Sugar Cookies. People are always surprised at how good they taste as they would have never thought to add rosemary to a sugar cookie. Another secret ingredient that I use in cookies is black pepper. Black pepper adds a wonderful taste to gingerbread cookies.  Spices sure do add great flavor to other cookies, last year I made Holiday Cinnamon Spiced Sugar Cookies with pumpkin pie spice and my family loved them.



So many cookies so little time to bake


 When I bake cookies there are a couple of ingredients that I always use and I will not compromise on them. I always use real butter as you can really taste the difference in cookies when they were made with margarine. Also, cookies made with real butter just cook better. They tend to not burn. Using silicone baking mats also helps cookies to not burn. Another ingredient that I always use when making cookies is pure vanilla extract. The flavor of vanilla made from real vanilla beans is so much better than that imitation vanilla that is made from chemicals or something else. If you want the taste of vanilla you have to use real vanilla beans. The vanilla that I am loving in all my baking is Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract. This Vanilla extract uses a unique proprietary slow, cold extraction process to gently draw out and preserve more than 300 delicate flavor compounds to give you the richest tasting vanilla.



 Other real extract flavors that I keep on hand for holiday baking are pure peppermint extract and pure almond extract. Pure peppermint is great in peppermint mocha coffee drinks and candy cane bark. I will use pure almond extract in cakes and shortbread cookies. Nielsen-Massey makes the best flavor extracts as they use pure ingredients. I like when they bundle their flavor extracts for the holidays as it makes it so easy to have the flavors on hand that I will be using. Lemon Frosted Rosemary Holiday Sugar Cookies

Makes about 36 sandwich cookies
      
Ingredients
1 cup butter, room temperature
2 large eggs
1/4 cup lemon juice
1 teaspoon pure vanilla
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon fresh rosemary, finely chopped
1 container white frosting
2 tablespoons lemon juice
1 cup unsalted butter, at room temperature
1 cup sugar
2 large eggs

In a large bowl, beat the butter, sugar, and 1/4 cup lemon juice until light and fluffy. Beat in the eggs. Then combine the flour, baking soda, salt, and rosemary in a separate bowl. Gradually mix in the flour mixture into the butter mixture. Mix until well combined. Cover the dough with plastic wrap and place in the fridge for at least 2 hours or longer.

Preheat the oven to 350 F. On a lightly floured board, roll out 1/4 of the cookie dough to 1/8 inch thick. Using a cup dipped into flour or a round cookie cutter cut, cut out circles and place on cookie sheets 2 inches apart.  Bake for 10 minutes or until edges brown. Let cookies cool for 2 minutes and transfer to a plate to cool completely. Repeat with the rest of the cookie dough.

Once cookies are cooled, stir the remaining lemon juice into the container of frosting. Spread frosting on one cookie and then top with another cookie to make a sandwich.
