Do you like to have music in the background when working?

   It is Monday morning and I am struggling to get back to work after a long fun weekend in Salt Lake City. I just attended a fabulous blog conference and learned so much. The food was delicious and I hooked up with some great sponsors. I meet some wonderful bloggers at this conference also. Mondays are usually hard for me to get back into my work routine but this Monday is even worse. I woke up and decided that music would be a great way to help me ease back into work. Not just any music would do. It had to be Christian worship music as taking it to God is always my first step when I need some help and I needed help this morning!

 So I opened up my new Phil Wickham CD "Children Of God" and placed it into my computer. I knew it was going to be a good day when I heard Phil sing the Doxology/Amen song. This song made me feel like I was in church worshiping with my friends and I was immediately drawn into God's presence. I felt like I could handle this day and continued to listen to Phil's beautiful worship songs. This music was just  what I needed today to feel like working. I usually don't have music on while working as I like it quiet but today Phil Wickham's CD was just what I needed. His worship music helped me to remember that I needed to include God in my daily life.

   The Children Of God CD had some familiar music on it that I had heard on the radio and at church. It was music that I enjoyed singing with. My favorite songs on the CD was Your Love Awakens Me and Better Than Life. These upbeat songs helped me to type away and get my work done. This CD has 12 great songs on it and Phil did a great job putting them on one CD to help people celebrate God's love. I love the energy that I get from this CD. I have already downloaded this CD to my iPod so I can listen to it while running as the songs are upbeat.

Hiking In The Bosque With Kangeaux

Possibly the most effective carrying tool you will ever need.

    My boys and I love hiking. This past weekend we decided to hike in a place near our home called the bosque. Bosque is Spanish for forest and that is what we call the small stretch of trees by the Rio Grande in New Mexico.The Albuquerque bosque is a wonderful place filled with trees, plants and walking trails. It is an oasis in our desert. Our only water source, the Rio Grande river runs through the bosque to, so it makes for a great place to see wildlife. This place has over 16 miles of walking and bike trails and one could travel from one end of the city to the other. Most of the time we explore this area with our bikes and stay on the paths but, this time,  we decided to explore the area beyond the bike paths. The weather is now hot here in the desert so we always have to carry a bottle of water with us. My boys complain about having to carry their water as they want their hands free. We have tried using backpacks for our water but those make you feel hotter. I have finally found the solution to carrying water with us and it is a hands-free one.

My boys love that they can carry their water hands-free and have their hands available for climbing and picking up things. I love that their water bottles don't get left behind as they are strapped onto them. So no more setting them  down and forgetting them. My boys and I had a fun time checking out the bosque. We walked for several miles and saw a lot of nature. The Rio Grand river was a great place to see some fish and frogs. My boys loved being able to walk in the shade of the trees. They also found lots of sticks to play with.

My boys and I also saw these cool carvings in trees that were damaged by a fire ten years ago. This fire was caused a campfire that was started by a homeless person who was living in the bosque. The campfire got out of control and burned many acres of the bosque. Here in the desert of Albuquerque, campfires are not allowed as it is so dry here. I love that the city was able to restore this part of the bosque with these cool carvings.

Just look at different ways people use the Kangeaux! This strap will also be great for my many conferences that I have planned for this year. That way I can attach my water bottle to my bag and have my hands free to explore the sponsor booths. Gluten-Free Caramelized-Onion Pizza

  My caramelized onion pizza does require some time to make it but it is not because of the grain-free crust. You simply add water, oil and apple cider vinegar to the mix and it combines into a wonderful dough that you can shape with your hands. My caramelized onions are what takes time as they have to be slow cooked for the great taste. Trust me, if you have never had caramelized onions, it is worth the time. 

           Gluten-Free Caramelized-Onion Pizza

INGREDIENTS

2 tablespoons extra-virgin olive oil
2 large onions, thinly sliced and diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 Simple Mills pizza crust
2 tablespoons fresh rosemary, minced
2 cups shredded mozzarella cheese


Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook onions with 1/2 teaspoon salt and 1/4 teaspoon pepper, uncovered, stirring occasionally, until softened and beginning to brown, about 10 minutes. Reduce heat to moderate and continue to cook, stirring occasionally, until tender and golden, about 15 minutes more. Reduce heat to low and continue to cook, stirring occasionally, until very soft and deep golden brown, about 15 minutes more. Remove from heat and cool to warm, about 10 minutes. Onions can be cooked a day ahead of time, cool completely and store in the fridge.
Preheat oven to 350°F.
While the onions are cooling, make your Simple Mills pizza crust following directions on the box. This box makes two crusts but I choose to make one large crust. Form the pizza dough on a lightly oiled pizza stone. Then spread the onions all over the dough. Sprinkle the rosemary all over the onions and then top with the cheese.
Bake for 15 minutes or slightly longer for a crispier crust. Allow to cool for 10 minutes before slicing and serving.

My Winning Video

A couple of weeks ago I won a contest for making a video with my kids. Hallmark channel has a contest, that a wonderful blogger told me about. The contest was to have your child make a video about why they love their mom. My sons made a wonderful video and we won $1,000! Here is our winning video. I am proof people do win contests. The weather is getting warmer and a perfect time to enjoy a delicious watermelon slushie.

  When I think of summer I think of juicy watermelon. I just love eating watermelon as it is so refreshing on a hot day. I always buy the biggest watermelon at the store as it is such a good price. My family usually eats up all the watermelon quickly, but sometimes there are leftovers. I have discovered a perfect way to use up leftover watermelon I simply combine the watermelon in a blender with some ice and a zero calorie flavored water and I have a delicious low-calorie drink that is perfect for a hot day. I sometimes just buy watermelon so I can make this drink as it is that good. I love that this drink is low in calories and sugar-free but still full of flavor.

                                              1 cup seedless watermelon chunks

Natural Homemade Honey Sunflower Seed Butter

  My twenty-eight-year-old daughter is allergic to peanuts and all tree nuts. The weird thing is she ate peanut butter sandwiches all the time when she was younger. It was a couple of years ago that she discovered her nut allergy. She had attended a party and enjoyed a brownie that contained peanut butter. She started to have an asthma attack, so she thought, and reached for her inhaler. She took her asthma medication and waited for it to work. When it was not working, my daughter then took some Benadryl, as her asthma is caused by seasonal allergies. 

 The Benadryl worked and my daughter thought nothing of that attack until a couple of days later when she was eating a cake that contained peanut butter. She had another "asthma attack" and thought that maybe the peanut butter was the cause. My daughter stayed away from peanut butter and scheduled an allergy test. The allergy test confirmed that she was allergic to peanuts and all tree nuts. My daughter was doomed as she had to give up peanut butter. That meant no more peanut butter sandwiches.
