Stick Minions over the pie for a fun twist. 

Chocolate Mint Cream Pie

24 chocolate sandwich cookies
1/4 melted butter
1/2 cup sugar
1/4 cup cornstarch
1/8 teaspoon salt
1 cup milk
1 package chocolate mint chips
2 egg yolks
3 oz cream cheese, softened
1 1/2 cups whipping cream

Put the sandwich cookies in a food processor and process into crumbs. Mix the melted butter into the crumbs and press the mixture into a pie pan. Chill the crust for an hour.


In 2-quart saucepan, mix sugar, cornstarch and salt. Gradually stir in milk until well blended. Add chocolate chips and egg yolks; cook over medium heat, stirring constantly, until mixture is thickened. Remove from heat. Beat in cream cheese with wire whisk until smooth. Cover surface with plastic wrap; refrigerate just until cool, about 1 hour.
In large bowl with electric mixer, beat whipping cream and vanilla on high speed until soft peaks form. Reserve 1 cup whipped cream for topping. Fold remaining whipped cream into cooled chocolate mixture. Spoon evenly into cooled baked shell. Refrigerate 6 to 8 hours or overnight. Spoon or pipe reserved whipped cream over filling. Store in refrigerator..

How To Keep Your Items Dry When Doing Water Activities

His love of sailing was the start of his Navy journey.

  The above picture shows my son (far left) and his friends sailing many years ago. My son was in high school then and was in the JR ROTC navy program. It was through sailing that he decided to join the Navy. He now fixes many different types of boat engines among other things. I am not sure of the season this picture was taken, but it must of been chilly out as they has sweatshirts on. Even though it is a big boat, it might tip over or they might fall out when doing various tasks, hence them wearing the life vests. Falling into the water would mean wet and cold clothes. That would be miserable on a cold day. I am sure they brought clothes with but what if they got wet? That could very well happen as they are on the water. Wet clothes could lead to hyperthermia. I guess sailing on a cold day could be miserable unless they had an Earth Pak Waterproof Dry Bag.

How Not To Burn Those Holiday Cookies

These mats will help prevent your cookies from burning.

  I love to bake cookies. The holiday season in my favorite time to make cookies and I make lots of them. I make cookies for cookie exchanges, my family and to give as gifts. I just enjoy making cookies and have been baking for many years. Over the years I have learned many different tips and techniques for making great cookies. The best technique that I have learned is how to not burn my cookies. How many times have you made cookies and the bottoms are burnt? Did you know that different types of baking sheets will bake your cookies in different ways? There are many types of cookie sheets and to have great non-burnt cookies, you need to know the different ways to use them, or you can buy a silicone baking mat and have perfectly baked cookies no matter what kind of baking sheet you use. I love using silicone baking sheets when I bake cookies as my cookies never burn. My cookies always have bottoms that are beautifully golden brown. There are many other great advantages to using silicone baking mats when baking.

When you line your baking sheets with a silicone baking mat you also reduce fat and calories in your baking as you no longer have to grease the baking sheets. These baking mats will allow your food, like cookies, to easily slide off your baking sheets as they are made from a non-stick silicone material. The pretty purple baking mats that I am using are FDA safe and BPA and BPP free. I just love the purple color too. These mats also save money ( the planet) too, as you don't have to use cooking sprays or parchment papers. Clean up is easy to as I just wipe them with warm soapy water, rinse and hang them to dry. I store them with my baking sheets so they are always ready to use.

   What is your favorite kind of cookies to bake during the holiday season? My favorite cookie to bake is sugar cookies, the kind that you roll out and cut with cookie cutters. My kids just love helping me roll out the dough and pressing the cookie cutter into the dough. These silicone baking mats are also great for rolling cookie or pie crust dough on too. We have a system in our house when we make cut out sugar cookies. My husband rolls out the dough and the kids place the cookie cutters on the dough. My kids just love choosing the different cookie cutters. We have lots of different cookie cutters so we make lots of cookies. I am in charge of baking the cookies. I line my cookie sheets with my purple baking mats and place the uncooked cookies on them. I place the cookies in the oven and set the timer. I find that rotating the cookie sheets halfway through the baking time also prevents my cookies from burning. I am glad I have two baking mats so I can bake 2 sheets at a time. These mats are very durable and can withstand temperatures up to 480 degrees. I take the cookies out of the oven and cool them on plates. The baking sheets, lined with the baking mats, are then ready for more cookies. Once all the cookies are done baking and cooling, my kids have a blast decorating them. I always have lots of different frostings and sprinkles for the cookies.

   I also love using my purple baking mats for making no bake cookies. I make a chocolate oatmeal no-bake cookie and these silicone mats are a great replacement for wax paper. I also use my baking mats for baked potatoes and roasted veggies. Flavors and odors do not penetrate on the mats so after I wash them they are ready to be used for baking cookies. My silicone baking mats get plenty of use and that is ok as they can be used many times ( over 2000 times) before they replacing. Enjoying A Wonderful Meal During The Holidays With BoneFish Grill

The Wood-Grilled Fresh Fish Experts at Bonefish Grill are celebrating the holiday season in a big way with their new Winter Menu.

I just love the holiday season. The gifts, family and wonderful food. The holidays can be a busy time with all the shopping, parties and other activities. During this time it is important to take time to relax with family. One of the ways I like to spend time with family is enjoying a great meal. One of my favorite places to enjoy a great meal at is BoneFish Grill. My favorite seafood place always has great menu items and they are always adding new dishes to entice me to come enjoy a meal with them. Bonefish Grill has a new winter menu with new delicious tasting seafood items that they recently introduced and the choices are making me hungry. Their winter menu  has some new drink items also they go great with their meals.

My family and I took a break from all the holiday hustle and went to Bonefish Grill for dinner. I love when someone else does the cooking. My boys were all excited to join us for dinner as they love eating Bang Bang Shrimp at Bonefish. I just love the coloring booklets that they received to keep them busy while waiting for the food.

My husband and I had a hard time deciding what to order as they all the choices on the winter menu sounded so delicious. I order the Mahi Mahi Oscar. This wood-grilled fish was topped with crab, asparagus and lemon butter sauce. I chose a side of spinach and a side of broccoli to go with my fish as I love the way Bonefish cooks their veggies.

My husband decided to order the Filet and Colossal Shrimp Scampi as loves steak. This filet mignon was topped colossal shrimp and  scampi butter sauce. My husband selected the garlic whipped potatoes and potatoes au gratin for his two sides. 

My boys were excited for the warm bread that comes with all the meals. I just love how they serve the loaf of bread with a dipping sauce of olive oil and spices. This bread is so yummy, that we ate two loaves.

Our meal at Bonefish Grill was so delicious and made for a great family time. Other choices on the winter menu included:

Lobster Stuffed Shrimp- a creamy lobster and shrimp Imperial stuffing

 Holiday Indulgent Spinach, Bacon + Blue Cheese Arctic Char-  a delicate, mild, clean flavored fish wood-grilled, topped with spinach, bacon, and blue cheese with a lemon butter drizzle

and

 Rhea’s Cobia- a moist, firm fish with a sweet, yet distinct rich flavor wood-grilled, topped with sautéed spinach, lump crab and lime tomato garlic sauce.

They also had some signature seasonal cocktails: Grapefruit Martini and Winter White Cosmo. These drinks are handcrafted to order and go great with the above meals.

How To Teach Little Ones Their ABC's While In The Car

I can see an older child helping a younger child learn their letters.
