A delicious plant-based recipe that tastes and looks like real scrambled eggs. This recipe is soy-free and is instead made with chickpeas.


  • 1/2 cup chickpea flour
  • 1/2 cup Aquafaba, chickpea cooking liquid 
  • 1/4 cup water
  •  1 tablespoon nutritional yeast
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • cooked vegetables of your choice if desired, like spinach, chopped peppers or diced tomatoes


How to cook Vegan Scrambled Eggs

  1. Wisk together all ingredients in a bowl until well combined. Then let it sit for 10 minutes to thicken
  2. Heat 1 tablespoon olive oil in a nonstick skillet over medium heat
  3.  Pour in the chickpea flour mixture and cook it for 1 minute
  4. Using a nonstick spatula, begin scrambling the mixture as you would with beaten eggs
  5. Continue to scramble every 2 minutes or so (not constantly, or the mixture will form really small bits) until it no longer looks wet
  6. Stir in cooked vegetables if desired
