How To Make Homemade Dairy Free Yogurt With A Vegan Starter

 Making homemade vegan yogurt is super simple and delicious. With this step-by-step recipe, you can even make dairy-free yogurt. Keep reading to discover how to make a batch of dairy-free yogurt.


 If you love the taste of yogurt but avoid dairy due to allergies or sensitivities, then you know how expensive dairy-free yogurt from the grocery store is. Those small little cups of vegan yogurt unfortunately are way more expensive than regular milk yogurt. Oh, the struggles of expensive prices when buying allergy-friendly food!

 Many years ago when I discovered that my severe asthma symptoms were caused by a dairy allergy, I also discovered the expensive food prices that came with buying dairy-free food. So I quickly learned how to make dairy-free recipes for my favorite foods. I was not going to let an allergy to dairy get in the way of my love for food.

 I quickly learned how easy it was to adapt my favorite recipes to dairy-free recipes. I learned how to make delicious dairy-free desserts like creamy dairy-free ice cream and dairy-free cookies. I loved that I did not have to pay the expensive prices for dairy-free desserts. 

Learning how to make dairy-free yogurt 

 The one dairy-free food item that I continued to buy was vegan yogurt as I thought making dairy-free yogurt would not be possible. Before my dairy allergy, I would make homemade yogurt with an electric blanket and I would use a yogurt starter that was made from milk. So I had no clue on how to make homemade dairy-free yogurt without a milk-based yogurt starter.

Then I discovered a vegan yogurt starter kit and I was able to make homemade dairy-free yogurt. The vegan yogurt kit made dairy-free yogurt-making so simple. The kit for making vegan yogurt came with a vegan yogurt starter culture and a couple other supplies for making yogurt. I just had to supply the plant-based milk. Having a nut milk maker means that I can whip up a batch of plant-based milk in minutes.

How to make dairy-free yogurt

1. Select your dairy-free milk. Nearly any non-dairy milk can be cultured into vegan yogurt, including legume, nut, seed, grain, or coconut milk. While store-bought boxed or canned milk may be used, I recommend using milk with as few additives as possible. Homemade milk works best, here are my recipes for homemade oat milk and almond milk from almond flour.

2. Add sugar to the milk. Vegan yogurt cultures require sugars for fermentation. Some types of alternative kinds of milk contain less sugar than dairy milk. When using unsweetened plant milk, you will need to add 2 teaspoons of sugar per cup of milk to ensure successful fermentation. 

3. Use pectin to make thick yogurt. While non-dairy milk will culture into a no-dairy yogurt, it usually will not set to a thick yogurt texture. Adding 2 teaspoons of pectin for every quart of dairy-free milk will solve that problem. Just add the pectin to one cup of non-dairy milk in the recipe. Then add this to the rest of the milk.

4. Heat the dairy-free milk to 140 F. Then remove the milk from the heat and let it cool to 110 F.

5. Add the Vegan Yogurt Starter Culture. Once the milk cools to 110 F, you will then add the Vegan Yogurt Starter Culture.

6. Pour the milk into the yogurt maker or other similar appliance. Let the mixture culture for 8 hours.

7. Remove and let the yogurt sit for 2 hours at room temperature.

8. Place in refrigerator for 6 hours

EASY NO DAIRY YOGURT RECIPE 

Ingredients

 4 cups dairy-free milk - cashew milk, oat milk, or soy milk

2 teaspoons Pomona's Pectin Powder

2 teaspoons Pomona's Pectin Calcium Water (included with Pomona's Pectin)

1 packet Vegan Yogurt Starter Culture

Heat 1-2 quarts of non-dairy milk to 110°F.

Plant-based yogurt will generally not thicken on its own. To make a thicker yogurt, stir 2 teaspoons of calcium-activated pectin and calcium water into your milk and heat to 140 degrees. Cool to 110 degrees before adding the culture.

Add 1 packet of yogurt starter and mix thoroughly.

Pour the mixture into the culturing container.

Cover and culture at 108-110°F for approximately 6-8 hours in a yogurt maker or similar appliance.

After 8 hours, place a tight lid on the container and let cool for 2 hours at room temperature.

Refrigerate for at least 6 hours before eating.

What can I use if I don't have a yogurt maker?

 While a yogurt maker works best, you can also use any appliance that can be set to 105-112°F. This can be accomplished using other appliances, such as a food dehydrator or Instant Pot. Some ovens have a dehydrator setting which can be set to 110°F.

They can give a recipe texture or they can be cooked longer to become a creamy protein addition for recipes.

 For this recipe, canned chickpeas will give the creamy texture. If you decide to use dried chickpeas, I recommend cooking them a bit longer so they have a softer texture. How to make Vegan Deviled Egg Filling

 Making this delicious vegan spread is super easy. You simply combine all the ingredients in a bowl and mash them into a creamy spread. You can also use a food processor or a high-speed blender for a creamier texture.  

 If you decide to mash the chickpeas in a bowl, you can use a potato masher, a fork, or the bottom of a glass. This method requires some patience so I recommend using a blender.

What is jackfruit?

 Jackfruit is a large fruit tree-borne fruit that is a green oblong fruit with a bumpy, fleshy exterior. This fruit can weigh up to 100 pounds and grow up to three feet long. The average size of the fruit that is sold in stores is 10 to 25 pounds. On the inside, jackfruit contains many pale-yellow, plump bulbs, which are edible and joined at the core. The seeds can also be cooked, eaten on their own, or ground into flour.

 This massive green fruit is native to Southeast Asia and grows on trees. While mature jackfruit is sweet and fragrant, young jackfruit is not sweet. This recipe uses young jackfruit which is picked before its starch changes into sugar. Young jackfruit is perfect to use in recipes as it absorbs the flavors of the recipe. You can use jackfruit can be used in salads, vegan tacos, and other wonderful recipes like BBQ vegan pulled "pork". It can be used as is and it easily flakes into a texture that is similar to pulled pork.


Jackfruit has a meaty texture, and when you cook it it absorbs the flavor of the sauces and spices that you simmer it in. I discovered jackfruit a couple of years ago when I found a recipe for a vegan barbecue pulled pork. This meatless pulled pork recipe uses jackfruit. I had never tasted jackfruit so I was curious to see how it tasted and how this fruit could taste like pulled pork. 

Most jackfruit is sold in a can and resembles chunks of fruit. While it has a bland taste, once you cook it, usually in a sauce or broth, it can be shredded to look and taste like meat. The first time I cooked jackfruit, I simmered it in barbecue sauce and it absorbed the flavor from the barbecue sauce. I was amazed at how this simple, bland fruit could taste so delicious.

- Simmer the jackfruit in the veggie broth 

- Drain the liquid and cool the  jackfruit

- Mash up the jackfruit

 To make this delicious plant-based tuna that is made with jackfruit is super simple. The recipe will take about 40 minutes to make as it takes time for the jackfruit to absorb the flavor of the vegetable broth.

 Once the jackfruit has absorbed all the wonderful flavor of the broth, you drain the liquid. Once the jackfruit has cooled, you mash it up to your desired tuna texture. I like my tuna chunky but you may prefer a more creamier texture. Then you add the mayo, seaweed, and other ingredients. The seaweed adds a fishy flavor to the recipe.

 To make plant-based smoked salmon, you will need several ingredients. You may already have most of them at home like the spices. The main ingredient in this recipe is carrots. You will need to buy large raw carrots, not baby carrots. Since you will be using a vegetable peeler to make long strips of carrots for the recipe, select the large & fat carrots. I like this vegetable peeler as it has a nice grip on it.

 Make sure to buy smoked paprika as this will give the vegan salmon that smoky taste. If you want to make this recipe gluten-free, then buy tamari sauce instead of soy sauce. Any type of salt will work for the recipe, I use sea salt in most of my recipes and buy sea salt in bulk containers.

Basic Steps To Make Vegan Smoked Salmon

+ Roast the whole carrots in salt

+ Slice the carrots into thin strips

+ Marinate the carrot strips in the seasonings

 Making plant-based smoked salmon is quite simple but the preparation will take a couple of hours. Most time of the preparation time will be roasting the carrots in the oven to get the carrots soft. This can take up to an hour. Using the peeler to slice the carrots into thin strips may take a while also. Trust me, it is worth it as this vegan salmon is amazing.

Tips for slicing the roasted carrots into thin strips: To get thin strips or ribbons from the carrots, that resemble lox strips, use a vegetable peeler. Starting from the top of the carrot, press the peeler into the carrot and in a downward motion slice it into a thin strip. After slicing a couple of strips of carrot from the carrot, it may be hard to get more thin strips. So take a sharp knife and cut the rest of the carrot into long thin pieces. These thicker pieces of carrot will still absorb the marinade and taste like salmon. Don't worry if all the carrot strips don't look the same as the taste will still be delicious.

Tip for how long to marinade the carrot strips: The carrot strips need to soak in the liquid mixture for at least 30 minutes.The longer the better as it gives more time for the flavors to infuse the carrots. You can also prep it up to 5 days ahead and leave it in the marinade in the fridge until ready to serve.

Storage tips: Carrot smoked salmon lox will keep fresh in an airtight container for up to 5 days in the fridge. It is not recommended that you freeze vegan smoked salmon as the texture will change once it is defrosted.

 When you make this homemade dessert, make sure to use fresh strawberries and add a splash of balsamic vinegar for incredible flavor. The balsamic vinegar may sound strange but trust me on this one as it brings out a wonderful sweetness to the strawberries and it does not taste like vinegar.  It is so easy to make the shortcakes for DIY strawberry shortcakes so do not buy those tasteless small sponge cakes at the store. You know the ones that I am talking about, those over-priced small shortcakes that are near the fresh strawberries in the produce section. My homemade sweet biscuits are so easy to make that my 10-year-old son can make them. If you have flour, butter(vegan butter), dairy-free milk, sugar, and baking powder, then you can whip up these delicious sweet cakes. I love that there is a dairy-free whipped cream 


 I like to make my own homemade dairy-free whipped cream from a can of coconut milk but if you are short on time or forget to place the can of coconut milk in the fridge the night before, then store-bought dairy-free whipped cream is just as delicious. Look for dairy-free whipped cream in the freezer section or the dairy section of your grocery store. My store doesn't always carry the spray type of dairy-free whip topping so when I do find this topping, I will buy a can for my coffee. Just make sure to place the unopened can of coconut milk in the fridge for 8 hours or more. Then after making the recipes, it is time to assemble the strawberry shortcakes. Slice a sweet biscuit in half and then place some of the sweet sliced strawberries on the biscuit halves. Top the berries with some whipped topping and enjoy. NO-BAKE CHOCOLATE-DIPPED PEANUT BUTTER PROTEIN CANDY

Ingredients

1/2 cup chocolate protein powder 

2/3 cup peanut butter

3 oz vegan chocolate chips 

1 tablespoon coconut oil

Instructions

Microwave the peanut butter until easily stir-able. Stir the protein powder and peanut butter together to form a dough. If it is too wet, add a little more protein powder; if it is too dry, add a little oil. Using your hands roll the dough into balls and flatten them. Place the candy on a cookie sheet lined with parchment paper and place it in the freezer for 15 minutes. Place the chocolate chips and coconut oil in a microwave-safe bowl and microwave for 1 minute. Stir and microwave in 30-second increments until melted  Dip the candy in the melted chocolate, then place on a tray lined with parchment or wax paper. Add sprinkles if desired. Refrigerate or freeze to set.
