It has been nearly impossible to find a vegan ice cream that contains no wheat or soy. I got excited when Ben and Jerry came out with a gluten-free, dairy-free ice cream. Then I read the label and discovered that the ice cream contains soy protein. 

 The exciting flavors of dairy-free ice cream of most store varieties contain wheat ingredients. So that usually leaves my vegan ice cream selection choices to vanilla, chocolate, and cherry garcia. 

 I got tired of paying the high prices of plant-based ice cream and the limited selection that I could eat. So I treated myself to a Ninja Creami ice cream maker. I am excited to be able to create delicious vegan ice cream. No longer will my ice cream choices be limited to three flavors. With the Ninja Creami, I will be able to make customized ice cream that is safe for me to eat.

 After I took my Ninja Creami maker out of the box, I read the included recipe book. The Ninja Creami Recipe book had suggestions for ingredient swaps to make dairy-free ice cream. Then I went to the internet to get more ideas for dairy-free ice cream recipes. It was then that I saw that people were making protein ice cream. 

So I knew that I had to add Nuzest Protein to my dairy-free ice cream recipe as extra protein is always a good thing when you follow a plant-based diet.

 To make this delicious ice cream, you just need a handful of simple ingredients, a blender, and a Ninja Creami. You also need to have patience, as you have to freeze the ingredient mixture for 12-24 hours.

Can I use a regular ice cream maker?

 I have not made this recipe in a regular ice cream maker, so I don't know the results. From reading other articles, I have learned that the Ninja Creami works differently from a regular ice cream maker.


Ninja Creami Tips

~ Read the Creami Instruction book ~ if this is your first time making ice cream, read the instructions

~ Blend your ingredients before freezing 

~ Don't overfill the Creami Cups ~ stay 1/4 inch below the fill line as the ingredients will go up in volume in the freezer. You need the extra space when blending, as it adds volume to the mixture

~ Use the RE-SPIN Button ~ After you blend the mixture on the Ice Cream setting, it may look powdery or crumbly. The trick to getting creamy ice cream is to add a splash of plant-based milk and use the RE-SPIN function. If it is not creamy, re-spin again.

Storage and Refreezing Tips

If you have leftover ice cream, you can refreeze it. 

~ Just make sure to smooth out the ice cream before freezing, as this will help it re-blend better. 

~ Place the lid on the container and stick it back in the freezer.

~ When you want to enjoy the ice cream, add a splash of plant-based milk. Then place the container back in the Ninja Creami, and press the ice cream button.

Eliminating Wheat From Your Diet

 Since having to eliminate wheat from my diet 6 months ago, due to a wheat allergy, I have been busy in the kitchen baking up gluten-free recipes. Storage Tips For The Cookies

Once the cookies have cooled, store them in an airtight container for a week. For longer storage, store them in the fridge for up to 2 weeks or freeze them for 3 months.

Here are some of my best tips for ensuring your gluten-free chocolate protein bread comes out perfect:

~  Follow the recipe. The best way to ensure the success of this healthy chocolate bread is to follow the recipe and use the exact ingredients as written. I know that these ingredients work best. How to make  Salted Chocolate Caramel Chia Seed Protein Pudding

 Making this chia seed pudding is so simple. Grab a small mason jar with a lid and pour in the plant milk of your choice. Then add a scoop of vegan protein powder to the non-dairy milk and place the lid on the jar. Shake it up well. You can also use a portable blender. Then add the chia seeds and place on the lid again. Shake well and place it in the fridge for several hours, preferably overnight. That way the chia seeds can swell up to thicken the milk.

 With just a few simple changes in ingredients, I am able to make a delicious strawberry shortcake that my whole family can enjoy. It may be allergy-friendly but it tastes just like the strawberry shortcake that I enjoyed as a kid. The last time I made this delicious plant-based dessert, my family ate it up quickly and there were no second servings for the next day. Balsamic vinegar turns strawberries into sweet morsels of delight


 When you make this homemade dessert, make sure to use fresh strawberries and add a splash of balsamic vinegar for incredible flavor. The balsamic vinegar may sound strange but trust me on this one as it brings out a wonderful sweetness to the strawberries and it does not taste like vinegar. The balsamic also gives the sliced strawberries an enticing look. You may have remembered last year when I posted about my lemon frosted rosemary sugar cookies and how delicious these cookies were. Homemade sweet biscuits are easy to make


 It is so easy to make the shortcakes for DIY strawberry shortcakes so do not buy those tasteless small sponge cakes at the store. You know the ones that I am talking about, those over-priced small shortcakes that are near the fresh strawberries in the produce section. My homemade sweet biscuits are so easy to make that my 10-year-old son can make them. If you have flour, butter(vegan butter), dairy-free milk, sugar, and baking powder, then you can whip up these delicious sweet cakes. If you don't have dairy issues, then you can use real butter and milk. Since this is a drop biscuit recipe, there is no need to roll out the dough. I love that there is a dairy-free whipped cream 


 I like to make my own homemade dairy-free whipped cream from a can of coconut milk but if you are short on time or forget to place the can of coconut milk in the fridge the night before, then store-bought dairy-free whipped cream is just as delicious. Look for dairy-free whipped cream in the freezer section or the dairy section of your grocery store. My store doesn't always carry the spray type of dairy-free whip topping so when I do find this topping, I will buy a can for my coffee. Three delicious recipes to make one delicious dairy-free dessert

 Here are the links to the recipes that you will need to make the Dairy-Free Strawberry Shortcake. I recommend making the sweet drop biscuits first so they have time to cool. While the biscuits are cooling, make the balsamic glazed strawberries, and then make the dairy-free topping. Just make sure to place the unopened can of coconut milk in the fridge for 8 hours or more. Then after making the recipes, it is time to assemble the strawberry shortcakes. Slice a sweet biscuit in half and then place some of the sweet sliced strawberries on the biscuit halves. Top the berries with some whipped topping and enjoy. You can use just one half of the biscuit or the full drop biscuit, depending on how many servings you want. My biscuit recipe makes 6-8 biscuits. If you need more servings than that, just double the recipes.

NO-BAKE CHOCOLATE-DIPPED PEANUT BUTTER PROTEIN CANDY

Ingredients

1/2 cup chocolate protein powder 

2/3 cup peanut butter

3 oz vegan chocolate chips 

1 tablespoon coconut oil

Instructions

Microwave the peanut butter until easily stir-able. Stir the protein powder and peanut butter together to form a dough. If it is too wet, add a little more protein powder; if it is too dry, add a little oil. Using your hands roll the dough into balls and flatten them. Place the candy on a cookie sheet lined with parchment paper and place it in the freezer for 15 minutes. Place the chocolate chips and coconut oil in a microwave-safe bowl and microwave for 1 minute. Stir and microwave in 30-second increments until melted  Dip the candy in the melted chocolate, then place on a tray lined with parchment or wax paper. Add sprinkles if desired. Refrigerate or freeze to set.
