4-Ingredient Mocha Coconut Breakfast Cookies

 Who says cookies can't be made with healthy ingredients. These breakfast cookies are made with nutritious healthy ingredients and are a great option for breakfast. Made with plant-based ingredients that are loaded with nutrition. So grab that cup of coffee and enjoy cookies for breakfast.

4-ingredient mocha coconut cookies are so easy to make

 The best part about these delicious breakfast cookies is how simple they are to make. One bowl is all you need to mix up the 4 ingredients. You can save time by making the cookies the night before so they are ready for a grab-and-go nutritious breakfast. These cookies that are for breakfast are perfect for morning exercise recovery as they are loaded with high-quality clean vegan protein. 

Each cookie has 3.5 grams of protein. So three cookies would be over 10 grams of protein!  


 I used my favorite allergy-friendly plant-based protein powder in this breakfast cookie recipe. Nuzest vegan protein is the best for baking as it makes a great substitute for flour in recipes. I  found this recipe on the Nuzest website. While you could use a different protein powder, I don't recommend it as you will not get the same results. Your cookies may not be as moist or hold together if you use a different protein powder.  My favorite way to enjoy these Mocha Coconut Breakfast Cookies is with a cup of coffee. I just love the sweet taste of coffee that is in these breakfast cookies. Tip: Freeze bananas that are over-ripe in your freezer for recipes
  I have a son who loves bananas. This son is a college athlete in track and field, so eat eats 2 bananas a day for potassium. His coach encourages the banana thing. So when he comes home for breaks, I buy plenty of bananas for him. Sometimes the bananas ripen too quickly and rather than toss them, I freeze them in my freezer. I then use the frozen bananas in smoothies and recipes. Bananas are easy to freeze. Just peel them and place them on a baking sheet. After they are frozen, store the whole bananas in a freezer bag.
