Kid-Friendly Salmon Pasta Salad

 Summer break is here and kids are bored. Now is the perfect time for parents to teach kids the joys of cooking. Check out a recipe that is perfect for a summer meal. It is a kid-friendly recipe.


 The kids are on summer break and all they seem to do is eat all day. You are tired of being a short-order cook. Now is the perfect time to teach your children how to make their own meals. Help your kids learn how to cook and let them help out with family meals. 

 This Kid-Friendly Salmon & Pea Pasta Salad is an easy recipe for kids to make. All it requires is a few simple ingredients like pasta, vegetables, and a couple of cans of salmon. It is a one-bowl recipe that kids can make. Younger kids may need help, but older kids can make this recipe without mom or dad.

 I got my inspiration for this recipe from the Safe Catch website. Safe Catch makes the best Wild Pacific Pink Salmon as well as Elite Wild Tuna. This fish is sustainably caught and is lower in mercury when compared to other fish.

Ingredients Needed For Kid-Friendly Salmon & Pea Pasta Salad

~ Pasta - Any shape of regular or gluten-free pasta will do. I used a gluten-free Buckwheat Mezzi Rigatoni from Felicia. This organic, naturally gluten-free pasta is brimming with flavor and loaded with fiber, magnesium, and manganese.

~ Salmon - I used boneless canned salmon from Safe Catch.

~ Mayo - Any mayo will work in this recipe

~ Cherry Tomatoes

Teaching Kids How To Make The Salmon Pasta Salad

 The first step to teaching kids how to cook is to have them help you in the kitchen. Teach them how to measure ingredients and mix things together. For older kids, show them how to safely use a knife to cut up ingredients, heat up food in a microwave, and cook pasta on the stove. 

 I like to make a big batch of pasta and keep it in the fridge. Then kids can heat it up in the microwave with their favorite topping. Pasta will keep fresh in the fridge for up to a week.

 If you don't want your child using the stove, premake the pasta for this recipe and store it in the fridge.  


Kid-Friendly Salmon Pasta Salad

Makes 4 servings

Ingredients

3 Cups Cooked Pasta, 

2 Cans Safe Catch Wild Pacific Pink Salmon

1/2 Cup Mayo 

1/2 Cup Cherry Tomatoes

Salt & Pepper to Taste

Fresh Dill ~ optional for garnish

Tools Needed

Large Mixing Dish

Measuring Spoons

Measuring Cups

Pairing Knife

Instructions

1. Open the cans of salmon and pour them into a large mixing dish; no need to drain the liquid.

2. Add the cooked cold pasta to the salmon and toss.

3. Add the mayo, salt and pepper to taste to your pasta mixture and combine evenly.

4. Slice the cherry tomatoes in half and stir into the pasta. If top with fresh dill.

5. Enjoy immediately or store in the fridge in an air-tight container for up to 3 three days.

Optional Add-In Ingredients

~ 1 Cup of Vegetables like peas, corn or broccoli

~ Top with Sunflower Seeds for a nice crunch

Since I am allergic to wheat, I decided to swap out the wheat gluten in the recipe and instead use oatmeal and chia eggs. The result was a delicious gluten-free plant-based sausage link that tasted like a bratwurst.

 When you think of sausages and bratwurst, what is the best part of the sausage? For me, it is the texture and the crispy outside. The flavor is also important. I want a plant-based sausage that does not fall apart, and it has to be firm enough so I can enjoy it in a gluten-free bun or gluten-free tortilla.

 These meatless sausages taste just like the vegan sausages that you can buy at the grocery store! I am not going to compare them to the disgusting animal-based sausages, as I never like the taste of those. Ironically, I hated bratwurst as a kid but once I had a taste of a vegan bratwurst, that all changed. Vegan bratwurst just tastes so much better.

My favorite way to enjoy these delicious plant-based sausages is served in a sandwich or hot dog bun with plenty of ketchup. Other delicious toppings to add to the bratwurst-style sandwich are grilled onions, mustard, or barbeque sauce.

+ Breakfast: These veggie sausages can be served with vegan scrambled eggs or wrapped up in a tortilla. You can even chop up the grilled sausage to make the best breakfast burrito with vegan scrambled eggs.

How to Store the Sausages

The leftover vegan sausages can be stored in the refrigerator for a week in an air-tight container. To enjoy the leftover sausages, I recommend heating them up in a skillet. 

 For longer storage, freeze the sausage links after they are steamed and before you grill them. I recommend wrapping them in parchment paper and placing the sausages in a freezer bag. 

To reheat the sausages, grill them while they are frozen for the best texture.

1. Process all ingredients, except oil, in a food processor until blended.

3. Heat a nonstick skillet on medium. and lightly oil.

4. Swirl the pan to spread the batter

5.  Cook for about 3 minutes.

6. Flip and cook the other side for another 2 minutes.

+ Use a measure for measure gluten-free flour ~ Gluten-free flour does not perform like wheat flour as it does not have gluten. So gluten-free baking recipes require other ingredients like xanthan and tapioca starch to replace the gluten. So using a measure for measure gluten-free flour will give better results as it has those thickener ingredients in the flour.

 I do not know who first developed the recipe for buckwheat bread made with whole buckwheat and little else, but they were a genius. This one-ingredient bread is amazing and has a nice soft texture that is hard to find in store-bought gluten-free bread. Of course, the best part about this bread is you won't have to shell out an arm and a leg to buy gluten-free bread at the store.

Gluten-Free Bread Made with 1 Ingredient: Buckwheat

This wheat-free bread is made with one simple ingredient, 2 if you count the salt, 100% buckwheat. So you are creating a bread that has ingredients in it that are good for you. Try saying that about most gluten-free bread that you buy. Buckwheat is delicious and nutritious.

Is buckwheat gluten-free and safe for celiacs?

Yes, buckwheat is gluten-free. Buckwheat, also called beech wheat or kasha, does not contain any wheat or gluten. 

 Despite the name, buckwheat is not closely related to wheat—buckwheat isn’t even a grain. Instead, buckwheat is a flowering plant related to leafy vegetables like rhubarb and sorrel. The name buckwheat comes from the resemblance of its small, triangular seeds to larger beech tree seeds.

Make sure to use hulled buckwheat or buckwheat groats in this recipe and not buckwheat flour. If you are not familiar with buckwheat groats or have no clue where to find it in the store, keep reading. Buckwheat groats are a gluten-free whole grain that is often used to make hot cereal. So look for buckwheat groats in the cereal section near the oatmeal. Some stores may have this grain in the gluten-free section. You can always purchase buckwheat groats on Amazon.

Plan ahead

While this gluten-free bread recipe is easy to make, you will need to soak the buckwheat for several hours. I like to soak my buckwheat overnight and start making the bread in the morning. Then the bread batter will have to ferment for several hours.

Steps to make the bread

1. Rinse the buckwheat ~ To remove any residue

2. Soak the buckwheat ~ Place in a bowl with water, cover, and place in the fridge for 12 -24 hours

3. Drain ~ Do not rinse ~ the goo in the water is needed for the success of this bread

4. Process the buckwheat ~ Add salt and water to make the bread batter

5. Let the batter sit ~ This will take another 12 -24 hours 

6. Bake the bread

7. Slather on the vegan butter and enjoy!


Amazing texture

 If you like bread with texture, you will love this bread. This is a dense chewy bread that will remind you of whole-grain bread with nuts and seeds. This bread is great for toasting and avocado toast. If you love seeds in your bread, you are going to love this bread. 

Add toppings

To make this bread even more amazing, sprinkle some seeds on top of the bread before baking. Don't go overboard on the seeds, as too many seeds may weigh your batter down and it may not bake properly.

Eliminating Wheat From Your Diet

Having to eat a gluten-free diet can be frustrating and expensive. Making your own wheat-free bagels is a way better option,

 These homemade oat flour bagels taste way better than the gluten-free bagels that you can get at the store. These bagels have a similar taste and texture to ones that are made with wheat flour.  Six months ago, I eliminated wheat from my diet, thinking that it was going to be a temporary diet change. I started to notice that consuming any food made with wheat triggered an asthma attack.  I was receiving allergy shots at the time, and I was receiving the high doses of the serums. So I thought that my lungs were inflamed from the allergy shots. The allergy doctor even told me that I might have a temporary wheat allergy. I only had 6 more months to go for my allergy shots, so I gave up eating wheat with the hope of being able to eat bread again.

I was diagnosed with a wheat allergy

 Six months later, when I was done with allergy shots, I chose to eat a tortilla made with wheat, and 2 hours later, I experienced a severe asthma attack. The next day, I had my routine allergy blood work. Two weeks later, the allergy doctor told me that my overall IGE allergy test numbers had increased. When I mentioned the symptoms that I had experienced after eating wheat, she tested me for wheat. The test came back positive for a wheat allergy. 

 So, being that I don't like experiencing breathing problems, I knew that I had to be on a wheat-free diet. This new food allergy may have been the result of mold poisoning two years ago. I could no longer eat anything made with wheat. So I had to start learning how to bake gluten-free recipes.

 Gluten-Free Oat Flour Bagels

 When I was able to enjoy eating bread, I loved eating bagels and tortillas. I was not going to let my wheat allergy stop me from enjoying food and my love for bread. The first gluten-free bread recipe that I made was an oat tortillas recipe and they were so delicious. These gluten-free tortillas fold up perfectly for my tacos. 

When I received a package of an oat flour blend, I went to the company's website in search of recipes. The first recipe that caught my eye was oat flour bagels*. I was excited that I could use the Oatsome Oat Flour to make gluten-free bagels. I could once again enjoy eating bagels.

Bagel Flavor Variations ~ Add these toppings or Mix-ins before baking

~ Brush the bagels with an egg wash (whisk an egg and 1 tablespoon of water) or brush with water for a vegan recipe. This helps the toppings stick to the bagels

+ Everything Bagel Seasoning – Make this homemade everything bagel seasoning spice 

+ Poppy seeds

+ Sesame seeds

+ Cinnamon sugar – Add 1 teaspoon of cinnamon and 1 tablespoon of brown sugar to the dough or sprinkle cinnamon sugar on top of the bagels
