Our fast-paced lifestyle can make eating healthy a challenging task. It seems that we are always on the go from the moment we wake up. This busy life can make it hard to eat healthy meals, and the lack of nutrition from fast food meals is harming our health in so many ways.

Even if we follow a healthy meal plan, it can still be hard to get all the nutrients that our body needs, especially when it comes to eating fruits and vegetables. If you have kids, the task of getting them to eat healthy foods like fruits and veggies can be even more difficult.

Transform simple fruits and vegetables into nutrient-rich juice

Imagine fueling your body every day with over 2 cups of fresh raw veggies and fruits through the power of juicing. Whole juice is not just a drink, it’s a way to flood your system with vitamins, minerals, and antioxidants to support digestion and enhance overall well-being.

8 Benefits of Juicing

  1. Nutrient Powerhouse - Juicing delivers a concentrated source of vitamins and minerals. A single glass of fresh juice can contain the nutrients of several servings of fruits and vegetables.

  2. Improved Digestion Juicing removes insoluble fiber, which can slow down digestion. Without fiber, your body absorbs nutrients more efficiently and quickly.

  3. Boosts Energy Levels - The natural sugars in fruits, combined with essential vitamins, offer quick yet steady energy.

  4. Supports Weight Loss and Management - Juicing can be a helpful tool in weight management. By providing a low-calorie, nutrient-rich alternative to processed snacks, it helps curb cravings while ensuring you’re nourished.

  5. Enhances Detoxification - The liver and kidneys naturally detoxify the body, but juicing can support these organs by providing nutrients that enhance their function.

  6. Strengthens the Immune System - A strong immune system is your best defense against illness. Juicing delivers a high concentration of immune-boosting nutrients like vitamins C, E, and zinc.

  7. Improves Skin Health - Juicing provides the antioxidants and vitamins necessary for healthy, glowing skin.

  8. Mental Clarity and Focus - Juicing can improve cognitive function by delivering essential nutrients like folate and iron, which support brain health.

Why I love the Omega High Speed Juicer

I have used many types of juicers for making homemade carrot and beet juice, but the Omega High Speed Juicer has some features that make it my favorite juicer. From the extra-wide chute that a whole apple fits in to the fast speed to the large pulp container, I find myself using this juicer several times a week.

My favorite way to use the Omega juicer is to make green juice from the kale and beet greens that I am growing in my garden. I just grabbed a handful of fresh greens and added an apple, grapes, and lemon juice. This delicious juice is so good and loaded with nutrition!

Soon, it will be prickly pear season, and I will be using this juicer to make prickly pear juice for my homemade prickly pear lemonade. My old juicer could not handle the seeds from the prickly pears, but the durable stainless steel filter in the Omega Juicer can.

The 4 Health Benefits of Walnuts

Walnuts are part of the nut family and are loaded with healthy nutrients. From plant-based protein to healthy unsaturated fats, walnuts are a healthy food that you need to eat. Discover 4 Health Benefits of Walnuts.

1. Heart health

Walnuts are a great source of alpha-linolenic acid (ALA), an omega-3 fatty acid that is important for reducing inflammation. In fact, it is the only nut significantly high in these omega-3 fatty acids. Their anti-inflammatory compounds may reduce the risk of heart disease.

2. Brain health

Studies have shown that the antioxidants and anti-inflammatory polyphenols found in walnuts may improve brain function and slow mental decline that occurs with aging. Cognitive functions include your memory and ability to think. The cool part is that walnuts actually look like a brain.

3. Gut health

Bacteria and microbes in your intestines and gut are also essential to your health. Research shows walnuts can improve gut health. In a clinical trial, adults who ate walnuts every day had healthier gut bacteria.

4. Cancer prevention

Microbes in your gut take compounds found in walnuts and produce urolithin compounds. These urolithins may help lower the risk of certain cancers. Research is still being done to fully understand walnuts' potential role in cancer prevention.

Swap the olive oil for cold-pressed walnut oil for additional health benefits

Traditional hummus uses olive oil, but this spicy walnut hummus is made with delicious cold-pressed walnut oil. This not only gives the hummus additional health benefits but also intensifies the nutty flavor of the hummus.

Cold-pressed walnut oil is loaded with healthy fats and omega-3 fatty acids. I used a delicious walnut from Fresh Vintage Farms in the hummus.

Fresh Vintage Farms makes its Cold Pressed Walnut Oil from California walnuts. Their Walnut Oil has a robust flavor and smooth finish and is packed with Omega-3s, Antioxidants, healthy Unsaturated Fatty acids, and more.

Unlike other refined Walnut Oils on the market that utilize rancid walnuts with high-heat expellers and refineries, Fresh Vintage Farms Virgin Oils are cold-pressed from fresh Walnuts, grown on ground that was proudly farmed on the forefront of environmental stewardship.

About Fresh Vintage Farms

Fresh Vintage Farms specializes in cold-pressed artisan cooking oils made from nuts. They currently produce 3 different types of nut oils that are made from almonds and walnuts. The tree nuts used in their Artisan Cooking Oils are grown in a 90-mile radius of Turlock, California.

Fresh Vintage Farms was founded in 2019 by husband and wife Tommy and Tara Tickenoff. As third-generation almond farmers, their connection to farmers and sustainable farming practices led them to create Fresh Vintage Farms.  They take pride in their cooking oils - use only whole, edible nuts in their small batch manufacturing process - and cold press extraction to guarantee an exceptional taste while still providing maximum nutritional value.

What are cold-pressed nut oils &  how do I use them?

Almond Oil

Fresh Vintage Farms Almond oil is made from California-grown whole almonds and is 100% cold pressed, preserving all its nutritional benefits. With fewer calories and fat than olive and avocado oil, it is a healthy cooking option. Its high smoke point makes it suitable for high-temperature cooking without releasing harmful toxins. Rich in monounsaturated and polyunsaturated fats, it can help reduce the risk of heart disease and is a good source of vitamin E.

It can be used for cooking, BBQing, Smoking, dressings, and marinades, or as a finishing oil for soups and stews.

Walnut Oil

Fresh Vintage Farms Walnut oil is made from California-grown walnuts and is 100% cold-pressed to retain all its natural goodness. It is rich in monounsaturated fats, known to be heart-healthy, and contains 3 times more omega-3s than olive oil. It is also a good source of antioxidants, which can protect the body against free radicals and reduce the risk of chronic diseases.

Its unique flavor makes it a versatile choice for use as a finishing oil on salads, baking, marinating, and even cocktails.

How To Cook Spaghetti Squash In The Pressure Cooker

Looking for a quick and easy way to cook spaghetti squash? Using a pressure cooker is the easiest way to cook any hard squash like spaghetti squash. The best part is that no peeling is required.

Spaghetti squash is a delicious low-carb substitute for pasta and many people like to serve it with tomato sauce. Cooking this hard winter squash has never been easier when you use a pressure cooker. You simply place the whole squash and 2 cups of water into the Instant Pot. The best part is you don't need to cut into the hard squash before cooking.

So grab your pressure cooker and save your fingers from being injured. In no time at all, you will have perfectly cooked spaghetti squash, that will be ready to use in all of your favorite low-carb recipes.

Spaghetti squash is a healthy alternative to pasta

Using spaghetti squash as a pasta replacement is one of the best low-carb diet secrets. When cooked correctly and cut correctly, the spaghetti squash strands really give you the feel of eating a plate of pasta with sauce.

I like to eat my spaghetti squash with a Thai Peanut Sauce. This delicious peanut butter sauce is so easy to make. Get the recipe here.

Why cooking spaghetti squash in a pressure cooker is better than an oven

Most people dislike cooking spaghetti squash as it requires one to cut the squash in half before cooking. Most winter squashes, like spaghetti squash, are hard vegetables. Cutting the squash in half requires a sharp knife and lots of skill. Squash is typically round and it moves around, so fingers tend to get injured. The squash skin is so tough, that one needs a saw to cut it in half.

Other reasons why cooking squash in the oven is a bad idea.

~ Then there is the slimy uncooked squash! It can be quite messy to remove all the squash seeds.

~ Don't get me started on the long cooking time of baking spaghetti squash in the oven and how it heats up the house.

FAQ About Cooking Spaghetti Squash in The Pressure Cooker

~ Do I have to poke holes in the squash?

Nope! All you have to do is wash the squash and peel off any stickers. No need to cut the squash in half either. Just place the whole squash in the pressure cooker.

~ I have an Instant Pot or a Ninja Foodi, is this the same as a pressure cooker?

A pressure cooker is the same as an Instant Pot or a Ninja Foodi, so these will work for the recipe.

~ What size squash works best?

As long as it fits in the pot and you can close the lid, any size will work. I have cooked 2 small squashes at the same time in my pressure cooker.

~ How many cups of spaghetti squash will I get?

A medium squash usually yields 2-4 cups of cooked spaghetti squash.

~ How long do I set the timer for?

Cook the squash for ten minutes.

~ Natural release or quick release for the pressure?

After the cooking time has ended, let the pressure naturally release.

~ Can I cut the squash in half and remove the seeds before cooking?

You can but why go through that trouble. The spaghetti squash cooks perfectly when left whole and the seeds are so easy to remove after it cooks.

~ Is Spaghetti Squash Keto?

Yes. 1 cup of spaghetti squash is about 10 grams of carbs and contains 1.5 grams of fiber.

~ Do I need to use a wire rack?

A wire rack is preferred but it will cook fine without it. You may just have more liquid to drain once you slice open the squash. I like to place the squash strands in a strainer after I scoop it from the skin.

To make this delicious ice cream, you just need a handful of simple ingredients, a blender, and a Ninja Creami. You also need to have patience as you have to freeze the ingredient mixture for 12-24 hours.

Can I use a regular ice cream maker?

I have not made this recipe in a regular ice cream maker, so I don't know the results. From reading other articles, I have learned that the Ninja Creami works differently from a regular ice cream maker.

Ninja Creami Tips

~ Read the Creami Instruction book ~ if this is your first time making ice cream read the instructions

Blend your ingredients before freezing

~ Don't overfill the Creami Cups ~ stay 1/4 inch below the fill line as the ingredients will go up in volume in the freezer. You need the extra space when blending, as it adds volume to the mixture

Use the RE-SPIN Button ~ After you blend the mixture on the Ice Cream setting, it may look powdery or crumbly. The trick to getting creamy ice cream is to add a splash of plant-based milk and use the RE-SPIN function. If it is not creamy, re-spin again.

Storage and Refreezing Tips

If you have leftover ice cream, you can refreeze it.

~ Just make sure to smooth out the ice cream before freezing, as this will help it re-blend better.

~ Place the lid on the container and stick it back in the freezer.

~ When you want to enjoy the ice cream, add a splash of plant-based milk. Then place the container back in the Ninja Creami, and press the ice cream button.

What are chia seeds?

Chia seeds are tiny, oval-shaped seeds derived from the Salvia hispanica plant, native to Central and South America. Chia seeds have a long history and were an important dietary staple for the Aztecs and Mayans. They were considered sacred food and used in the preparation of folk medicines, food, and canvases.

Chia seeds are considered a superfood as they are packed with plenty of nutrition like protein, omegas, and fiber. Chia seeds are a favorite smoothie add-in not only for their nutrition but for their ability to make smoothies thicker. Chia seeds may start out small and crunchy but once you place them in liquid, they absorb the liquid and rapidly swell up. The result is a thick gelatinous texture that makes chia seeds an awesome ingredient to use in many recipes from chia seed pudding to chia seed jam. Chia seeds can also be used as a vegan egg replacer in plant-based recipes.

Benefits of Chia Seeds

These delicious super seeds are a great way to add a boost of vegan-friendly nutrients including both omega-3 and omega-6 polyunsaturated fatty acids to plant-based meals. Chia seeds also contain plant-based protein, fiber, calcium, and iron.

~ Baking: Chia seeds can be used in baking bread, muffins, or cookies. They can also serve as an egg replacement for vegan baking – just mix 1 tablespoon of chia seeds with 3 tablespoons of water and let it sit for about 15 minutes until it becomes gel-like.

~ Toppings: Sprinkle chia seeds on yogurt, oatmeal, salads, or roasted vegetables for a bit of crunch and a boost of fiber. Always be sure to drink liquids if your chia is not being added to liquids as they like to absorb water.

Eliminating Wheat From Your Diet

Since having to eliminate wheat from my diet 6 months ago, due to a wheat allergy, I have been busy in the kitchen baking up gluten-free recipes. Gluten-free recipes do not contain wheat so they are safe for me to eat. You may be asking how is a wheat allergy different from a gluten-free sensitivity? Read this article Wheat Allergy Vs Gluten Sensitivity, Knowing The Difference, as it explains it in detail.

When one has a gluten issue, their body can not digest gluten and their symptoms involve the gut. When one is allergic to wheat, their symptoms are similar to other food allergies. They can also involve gut issues, hives, breathing problems, and even anaphylaxis. My reaction to eating foods that contain wheat is a severe asthma attack.

I also have a dairy allergy, so my healthy recipes are always dairy-free. I discovered my dairy allergy five years ago, so that is the reason that I have non-dairy recipes on my website.
