Spicy HARISSA Hot Chili Hummus

A creamy hummus with a flavorful kick of heat from Harissa chili paste

Ingredients

  • One can chickpeas, drained and rinsed
  • 1 clove garlic
  • 1/2 cup Mighty Sesame Harissa Tahini 
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 cup water

Instructions

  1. Place all the hummus ingredients in a food processor, except the water,  and blend until smooth.  Add the water gradually until you reach the desired consistency.
  2. Place the hummus in a bowl and drizzle additional olive oil over the top if desired.
  3. Serve with raw vegetables, crackers, and pita bread.

How To Cook Chickpeas In A Pressure Cooker

Save money by cooking dried chickpeas in the pressure cooker~ cheaper than buying can chickpeas.


 I love how easy it is to cook dry chickpeas in a pressure cooker. I used to cook my beans in the slow cooker but that all changed when I bought a pressure cooker, which also goes by the name of Instant Pot. Cooking beans or chickpeas in a pressure cooker takes less than an hour compared to 6 hours in a slow cooker. So the time thing is why I love using my pressure cooker instead of my slow cooker. The chickpeas or garbanzo beans have the same great taste too. When you cook the chickpeas they do not have any salt or preservatives on them nor is there the worry of things like BPA and other can food dangers.



I use chickpeas in many recipes
 I admit that I sometimes use canned chickpeas and keep a couple of cans in my pantry for emergencies when I am hungry and don't want to wait even an hour for my garbanzo beans to cook. So when I do cook a batch of dried chickpeas in my pressure cooker, I always double the recipe and freeze the extra chickpeas. I like to freeze the cooked chickpeas in batches of 1-2 cups so I can just thaw them and use them in recipes like my homemade red pepper hummus. These delicious beans freeze so well and taste great too. Cooking dried chickpeas is also a money saver. One pound dried garbanzo beans is equal to about 4 cans of chickpeas. So you are saving lots of money!




Chickpeas make a great vegan tuna salad

One of my favorite ways to use chickpeas is in vegan tuna salad. This plant-based recipe looks and tastes just like tuna salad but contains no real tuna so it is a perfect vegetarian recipe for a meatless meal. You have to try this recipe! I also love to roast cooked garbanzo beans for a tasty snack that is so easy to make. Homemade roasted garbanzo beans are so delicious and are a heart-healthy snack.

How To Cook Chickpeas In A Pressure Cooker

Healthy Chickpeas cook so easy in a pressure cooker. Better than canned and quick to make.

ingredients:

  • 2 cups dry chickpeas or garbanzo beans
  • 6 cups of water

instructions:

  1. Rinse the chickpeas and pick out any stones.
  2. Add the chickpeas along with the water to the pressure cooker pot insert. 
  3. Close the lid with the vent in sealing position.
  4. Set the pressure cooker for 40 minutes and press start.
  5. When the cooking time is up, turn off the pressure cooker and do a natural release for 10 minutes. Then further release the steam and drain the liquid from the chickpeas.
  6. Use the chickpeas in a recipe or place in the fridge. The chickpeas freeze well in small batches of 1-2 cups.

Easy To Make Homemade Hummus

Easy to make hummus, you will never buy store-bought again.


 Making hummus is so simple and it takes less than five minutes to make. Once you make homemade hummus, you will never buy expensive store-bought hummus again. Making your own hummus can save you so much money when compared to premade hummus. This vegetarian dish requires only a couple of ingredients like can chickpeas, which are also called garbanzo beans, and tahini, also called sesame paste. I like to keep a couple of cans of chickpeas in my pantry so I can enjoy hummus often. When I want to save even more money, I buy dried garbanzo beans and cook them in my pressure cooker. Cooking beans in a pressure cooker are so simple and require less than an hour of cooking time. If you don't have a pressure cooker, you can cook the garbanzo beans in a slow cooker or on the stove. Cooked chickpeas/garbanzo beans can be frozen so I like to freeze them in small batches for other recipes like my vegan chickpea tuna. Chickpeas can also be roasted for a delicious healthy snack that is high in protein. Roasted Sunflower seeds are a great substitute for tahini

 If you do not have any tahini in your pantry, you can substitute 1/3 cup of roasted sunflower seeds or even sunflower seed butter. I have even used cashew butter and roasted peanuts in place of the tahini paste. To give the hummus a different taste, I love to add a couple of roasted red pepper slices to make roasted red pepper hummus. Other ingredients like Oven-Dried Roasted Sun-Dried Tomatoes also make a flavorful hummus. Hummus is such a healthy snack as it is loaded with plenty of plant-based protein and heart-healthy fiber. When you pair the hummus with whole wheat crackers and veggies it makes a healthy lunch. This is my husband's favorite lunch to pack and it helps him to eat his veggies. I like to spread homemade hummus on a sandwich for great flavor. Hummus is also my favorite dish to bring to a potluck.

Garlic paste adds awesome flavor


 I discovered this amazing garlic stir-in-paste and I love how convenient it is for recipes. I used this delicious garlic paste in my homemade hummus instead of the garlic cloves. I no longer have to peel and chop the garlic cloves when I want to use fresh garlic in my recipes. This easy to use tube of garlic paste contains 23 cloves of organically grown garlic that keeps fresh for weeks. Gourmet Garlic replaces those garlic bulbs from the grocery store that I was buying. In the past, I would buy a garlic bulb and use a couple of cloves and then forget to use the rest of the cloves. This garlic paste tastes way better than the powder garlic that I was using. The garlic flavor is so bold. My favorite way to use this delicious garlic paste is on homemade garlic bread. I just mix the fresh finely chopped garlic paste into my butter and then spread it on my bread for the most amazing garlic bread.

A super simple recipe for hummus

ingredients:


  • 1 can chickpeas, drained and rinsed or 2 cups cooked chickpeas (garbanzo beans)

Easy Beet Hummus Dip ~ Made With White Beans

Looking for a stunning appetizer to serve at a party? Beet hummus has a pretty pink color with a delicious taste. Plus it is loaded with plenty of nutrition. Perfect for a vegetable tray or a charcuterie board.


 A couple of months ago I attended a health conference and they served these amazing hummus products. From regular hummus to a spicy carrot hummus, there were so many different flavors. Of course, I had to try them all and my favorite flavor was the beet hummus. The taste was so amazing that I had to buy it at my grocery store. It has become my healthy impulse buy when I go shopping. While I loved the hummus made with beets, I did not like the price.

 The last time I was at the store, I decided to try and make this delicious beet hummus at home. So I bought some can beets and can white beans. Then I searched the internet for a recipe and checked the ingredients on the last container of my store-bought hummus. The recipes that I found online did not have most of the ingredients that were listed on the store-bought container so I decided to experiment in the kitchen. I was so surprised that I was able to make a homemade version that is very similar to my favorite store-bought beet hummus.

Canned beets vs fresh beets

 The first time I made this beet hummus recipe I used can beets and can white beans as I did not feel like roasting beets or cooking beans. The flavor of my first attempt at making beet hummus was so delicious. Then I just had to try making my beet hummus recipe with fresh roasted beets and the flavor was so good and so similar to using can beets.

 So it is really a matter of time and preference for making the beet hummus with canned beets or fresh beets. Both types of beets still made a delicious pretty purple hummus dip.


Easy recipe for cooking fresh beets

 If you want to use fresh beets for this delicious beet hummus recipe, then I have a super easy recipe for cooking beets in the pressure cooker. The best part of roasting the beets is the pressure cooker is you don't have to peel the beets before cooking. Of course, you can also roast the beets in the oven and I included that recipe as well.

How to roast beets in the oven

 I have made this beet hummus several times since I first made it will canned beets. Canned beets are a quick way to make this beet hummus but if you have the time, I highly recommend using roasted beets that you roasted in the oven. The roasted beets give this hummus a better flavor. I start with fresh beets and then use this recipe for easy roasted beets in the oven.

 My husband used to not like beets, his mom would serve him boiled beets, but when I make roasted beets in the oven he loves them. The other night I boiled beets and now I understand why my husband did not like beets. When you boil beets, all the flavor goes down the drain with the cooking water. That makes for one bland beet. Roasting the beets keeps all the flavor of the beets as you don't use water.

Homemade Roasted Red Pepper Hummus


   This past week at my church we celebrated a wonderful event! The celebration was for the pastor and his family, as they have been with our church for ten years. The congregation wanted to say thank you to them with a party. We served a wonderful cake and I also made a vegetable tray with roasted red pepper hummus. I chose to make hummus as our pastor was following a plant-based diet and this was the perfect vegan snack that everyone would enjoy. So many people enjoyed the hummus and asked my husband where he had bought it. They were surprised when he told them that I had made it. I told them it was so easy to make hummus and they wanted the recipe. So I am posting my recipe for Roasted red pepper hummus. It is so simple to make and all you need is a few ingredients and a food processor. I love serving my hummus with veggies and crackers. This vegetarian recipe is one of my favorites.

So easy to make

Once you see how easy it is to make hummus, you will never buy the expensive containers of hummus at the grocery store again. All you need to make delicious hummus is a can of chickpeas, tahini, and a couple of other ingredients. So make sure that you stock your pantry with chickpeas, also known as garbanzo beans, and tahini. Tahini is a paste made from roasted sesame seeds and has a taste similar to peanut butter. It is the roasted sesame paste/tahini that gives hummus its great taste.

Hummus is healthy

I love snacking on hummus as it is a healthy snack that is high in protein and fiber. Hummus is the guilt-free snack that I love to eat with fresh vegetables and crackers. My favorite crackers are wheat crackers. Hummus is also my favorite healthy dish to bring to a party or potluck. It seems that people enjoy the taste of hummus. I don't know about you but I tend to eat more veggies when I have a bowl of hummus to dip them into.

 It is pumpkin season and everywhere you look, you will find some sort of food made with pumpkin. From pumpkin spice coffee to pumpkin pie, people just can't get enough of the great taste of pumpkin. If all you can find is the bigger carving pumpkin, that will work in this plant-based recipe. Of course, the pumpkin in the can is the easiest option.

How To Cook A Pumpkin
 
Cooking a pumpkin is simple. I like to cook my pumpkin in the oven. Just follow a few simple steps. 

1. Wash the pumpkin to get all the dirt off. Pumpkins tend to be dirty when you buy them from the store.
2. Grab a sharp knife and stab it into the pumpkin a couple of times. This is to let the steam out while cooking. 
3. Place the whole pumpkin on a baking sheet and place it in the oven. No need to cut it up.
4. Bake the pumpkin in the oven at 400 degrees for one and a half hours or until the pumpkin skin is soft.
5. Once the pumpkin is cooked, let it cool for 15 minutes.
6. Then take a sharp knife and cut the pumpkin in half.
7. Scoop all the seeds and stringy stuff out of the cooked pumpkin. Make sure to save the seeds to roast them. The recipe for roasting pumpkin seeds is at the end of this article.
8. Cut the rind off the pumpkin. Cutting the pumpkin into small pieces makes this easier to do.
9. Puree the pumpkin pieces in a food processor.

Cooked pumpkin stores well in the freezer for many years and is great for future recipes. To freeze the pumpkin, just place about 2 cups of pumpkin puree into freezer bags. Pumpkin White Bean Hummus
Makes 8 servings

1 clove garlic
 2 -15 oz. cans of white beans drained and rinsed 
1/4 cup plain vegan yogurt
1 cup pumpkin puree
3 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
Roasted pumpkin seeds to sprinkle over the prepared hummus
Paprika to sprinkle over the prepared hummus

1. Using a garlic press, press the garlic clove into a food processor. Add remaining ingredients and pulse until well combined.

2. Place hummus into a serving dish and sprinkle with paprika and the toasted pumpkin seeds.
3. Serve with veggies, crackers, pita wedges, or tortilla wedges.
