 The pandemic of 2020 has brought so many new experiences into my life. Having to stay home and practicing social distancing has left me with time on my hands. Last summer, I started a garden as I worried about food supplies. I thought growing food would help me fill up my deep freezers with fresh veggies. For me, growing a garden has always been something that I wanted to do but have put off simply due to the fact that I live in a desert. So when this lung virus covid thing hit and I had time on my hands, I gave growing vegetables a try. I started a small garden with the hopes of growing tomatoes, peppers, spinach, beets, and kale.

 My garden last year did not give me much, but I enjoyed the vegetables that I did grow. I was amazed that I could grow food, and that inspired me to grow a swingset garden. I had big plans and I expanded my Southwest garden the next year. I started a compost pile to enrich my soil and planted seeds to grow beets, kale, chard, and watermelon. I also bought tomato plants, pepper plants, and several herbs. I had a passion for growing food.

Beets are my favorite garden vegetable

 Last year I grew beets in my garden. I was amazed that beets grow well in the desert. My beet plants gave me plenty of beet greens that were so delicious but only a couple of small beets. I think it may have been that my soil was too rocky, so the beets did not have room to grow. So this year I made a new space for my garden and bought several bags of soil. I planted two packages of beet seeds as I had big plans to grow lots of beets.

I was blessed with beets

 My garden gave me plenty of beet greens and only a couple of beets. I roasted beets in the pressure cooker, but did not have enough beets to make beet powder. Then God blessed me with beets in an amazing way.


 My church has a monthly food pantry that my husband runs, and we received a huge pallet of fresh beets. I had never seen that many beets in my life. The beets were packaged in 25-pound bags, and we gave out plenty of beets. When the food pantry was over, we still had 15 bags of beets left for the volunteers to take home. I was able to take some of the fresh beets home. I was excited to process the beets into many different recipes, including my beet powder.

While I was dehydrating all the beets, I remember last year's huge supply of fresh carrots that I received from the food pantry and how I made delicious homemade carrot juice. So I grabbed my vegetable juicer from the pantry so I could make beet juice. I was excited to turn fresh beets into purple beet juice.

Since I had a lot of beets, I made a huge jar of beet juice and that left me a big bag of beet pulp. So I had fun creating beet pulp recipes. I also froze the beet pulp for future recipes.

  • 1 pound fresh beets
  • 1 large apple

Instructions

  1. Cut off the ends of the beets.
  2. Scrub and peel the beets. Slice into pieces that will fit into the juicer chute.
  3. Chop the apple into 4 pieces, no need to peel
  4. Place the beets and apple slices into the juicer.
  5. Place the juice into a container with a tight lid and store it in the fridge.
  6. Use up within a week. For longer storage, freeze in serving-size portions.

Simple Beet Burgers Made With Oatmeal

 Lately, I have been creating plenty of beet recipes as I was blessed with a huge amount of fresh beets. In the past week, I have dehydrated beets, cooked beets, and roasted beets. I also juiced the beets, made beet hummus, and made beet powder. All these recipes will be at the end of this post. So my freezers are filled with roasted beets and beet pulp. I think I may have hit my limit on eating beets.

 So when I picked my final crop from my swingset garden, before the cold front came, I dug up several tiny beets. The beets were about the size of a super ball or smaller. Not wanting to waste food, I cleaned the tiny beets up and cooked them in the microwave. I stuck the cooked beets in the fridge, with my other beet creations. I figured that I would eat them for lunch the next day.

 Earlier that day, I went grocery shopping and was going to buy some plant-based burgers but I passed on them after I saw the price. So I decided to make some homemade veggie burgers at home. While I was gathering up the ingredients for DIY veggie burgers, I remembered the cooked beets that were in the fridge. I knew that the fresh beets would make delicious beet burgers that would be so nutritious.

 These beet burgers are simple to make and are plant-based when made with a vegan egg. I made my beet burgers with eggs but an egg substitute will work in this recipe. The ingredients needed for these meatless burgers are simple and you probably have most of them in your pantry. I used garbanzo beans in my beet burgers but you can use other beans like white navy beans or black beans. Using the darker beans will change the color and taste of the burger.

 These vegan beet burgers also use cooked beets and you can use many types of cooked beets. I prefer using fresh beets in my recipes. I used fresh beets that I cooked in the microwave but oven roasted beets would work too. If you are short on time, check out this simple way to cook beets in the instant pot.  The above ingredients are what I used in my burgers with beets as they give the best flavor and texture to the veggie bugers. While I have used rice in my bean burger recipe for one, I find that oatmeal keeps the vegetarian burgers from falling apart and gives a better chewy texture. I also used chopped walnuts as it has hearty flavor and that is what I had in my pantry. You could use other chopped nuts like cashews. 


Beet Burger Ingredient Swaps

+ Replace the oatmeal with ~ brown rice, white rice or cooked grain of your choice

+ Replace the walnuts with ~ cashews, peanuts, pecans, or other chopped nuts

How To Make Beet Burgers

 That is how easy it is to make beet burgers. Once you make this recipe, you will never buy frozen veggie burgers again. Speaking of frozen burgers. These burgers can be frozen after you cook them. So double the recipe and freeze several of the burgers for later. I like to freeze two burgers per freezer bag. Just place a piece of wax paper or parchment paper between the burger patties. You can freeze them for up to 2 months.

Simple Beet Burgers

Simple Beet Burgers

Ingredients

  • 1 cup cooked garbanzo beans or white beans
  • 1 cup cooked beets or canned beets
  • 1 medium onion chopped and sauteed
  • 2 eggs or make it plant-based with 2 flax meal eggs
  • 1/2 teaspoon salt
  • 1 teaspoon chopped garlic
  • 1 tablespoon fresh rosemary or 1 teaspoon dried
  • 1 cup oatmeal
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 375F and line a baking sheet with a silicone mat or parchment paper.
  2. Chop the cooked beets and the beans in a food processor until in bite-size pieces.
  3. Peel and chop the onion into small pieces. Then saute until cooked.
  4. In a small bowl whisk the eggs. If using flax meal eggs ~ combine 2 tablespoons ground flax meal + 6 tablespoons water. Stir and let sit for 2 minutes.
  5. In a large bowl combine the remaining ingredients. Then add the beet mixture, cooked onions, and eggs. Combine well, adding water, 1 tablespoon at a time, if needed to make the mixture moist enough to form into the burgers.
  6. Scoop out the burger “batter” to form patties; I used a ½ cup measure to make 6 large patties. Use slightly damp hands to flatten and shape the burgers, then place them on the baking sheet.
  7. Bake the burgers in the oven for 20 - 30 minutes until they resemble a soft cookie and are slightly brown on the top.
  8. Serve as desired; leftovers will keep in the fridge for up to 5 days or can be frozen for up to two months.
  9. To freeze the burgers, place 2 cooked burgers with a small square of wax paper between them in a freezer bag

 The other day, I made homemade beet juice from a huge bag of fresh beets. If you have ever made homemade juice, then you know about the leftover pulp. How To Make Beet Powder From Fresh Beets

 Beet powder is a superfood with super amazing benefits, but it can be pricey. Find out how to make beetroot powder from fresh beets. This beet powder can be used as a natural food coloring, in smoothies, or in recipes. 

 This past year, I discovered beet powder, and I love adding it to my healthy protein smoothies several times a week. I just love the amazing purple/pink color that beet powder adds to my smoothies.  One of the perks of working at a food pantry is taking home leftover food items that can not be used at the following food pantry event. So after we served all the people at the food pantry and I begged the volunteers to take some beets, we had way too many bags of beets left over. So, I had my sons load several bags of beets into the car. I was super excited that I could make beet powder.

While I wanted to fill my freezers with plenty of roasted beets, I did not have much space in my two deep freezers. So I knew that the best use of fresh beets was dehydrating them into beetroot powder. 


 I had never dehydrated beets before. When I buy beets, my favorite way to cook them is in the pressure cooker. Cooking beets in the pressure cooker is so simple. So I did a search online on how to make beet powder. I discovered that the first step to making beet powder is drying the beets into beet chips.

How to dehydrate beets

 Dehydrating beets is so simple. If your oven temperature can be set to 200 F, then you can dry the beets in the oven. You simply peel and slice the beets into thin slices. Then you place the beet slices on cooking sheets and place them into the oven, which is set at 200 F. The drying of the beets can take 10 or more hours. So choose a day that you will be home to dehydrate the beets. 


 The beet chips are done when they are brittle and can be easily be snapped into pieces. It is the crispy beet slices that you will use to make the beet powder. The best part of drying beets into beet chips is you can't over-dry them. So, if you don't mind the oven on while you are sleeping, then have the beets dehydrate overnight. I have left the house for a couple of hours while my beet slices were in the oven. 


Dehydrated beets also make a tasty snack

While I was dehydrating my beet slices, I discovered that dried beet chips make a tasty snack. You can eat the dried beets just like chips. The dried beet chips have a nice sweet taste to them. My husband even enjoyed snacking on the beet chips. It was then that I decided to store the dehydrated beet chips and just make my beet powder as needed. Dehydrated beets can last for years when stored properly in airtight containers. 

Steps for dehydrating beets

+ Wash and scrub the beets

+ Slice off both ends of the beet

+ Peel the beets

+ Slice the beets into thin slices

+ Place on cookie sheets in a single layer

+ Set oven to 200 F

+ Place the beets in the oven for 8 or more hours

+ Beets are dried when brittle and can be easily broken

+ Let the beet slices fully cool before storing

+ Store in containers with tight lids 


Beet chips to beet powder


Once your beet slices are dried, they can be made into beet powder. I like to use a clean coffee grinder to make the beets into beet powder. So grab your coffee grinder and clean out all the coffee residue. Then place a couple of dried beet slices into the coffee grinder. If your beet slices are big, break them into pieces before you place them into the grinder. Then grind the beets, like coffee beans, until you don't hear any beet chips hitting the sides of the coffee grinder. 

 Slowly take off the lid to the coffee grinder as beet powder will fly into the air. The beet powder will be messy, so open the coffee grinder over a bowl. My advice is to just grind up enough beet powder to last for a month. Homemade beet powder will turn brown after a couple of months. The dried beet chips will last longer in storage.
