Beet Waffles Made With Beet Juice Pulp

 A delightfully delicious waffle that is made with leftover beet pulp from homemade beet juice.  The waffles have a pretty purple color but with no taste of the beets. The beet pulp adds fiber and extra nutrients to the waffles making them healthier.

 The other day I made homemade beet juice from a huge bag of fresh beets. If you have ever made homemade juice, then you know about the leftover pulp. So I finished making my juice from the beets and made about 8 cups of beet juice. That left me with a lot of beet pulp. While most people would toss the vegetable juice pulp, that is a bad idea.

 The pulp from making vegetable juice contains a lot of fiber and nutrients. This nutritious beet pulp can be used in so many recipes. So I froze almost all of the beet pulp and decided to use the rest to make plant-based beet burgers and beet waffles. You may have remembered last year when I received a new juicer and made homemade carrot juice. It was then that I discovered how to make carrot juice pulp waffles. So I then knew that the leftover beet pulp would make some delicious purple beet waffles.

 I could not wait to make some beet pulp waffles. I just knew that the purple beet pulp would give the waffles a pretty purple color. Purple is my favorite color. Like the carrot waffles that I made last year, I knew that the beet pulp would add some awesome nutrition to the waffles but not add any beet taste. 

 I like making healthy waffles as they can be enjoyed in so many ways. You can eat the waffles for breakfast or as a healthy snack. I also love using homemade waffles for sandwiches. Waffles also make great buns for my homemade veggie burgers. If you want to add even more nutrition to waffles, then add a couple scoops of protein powder to the waffle batter. Beet Juice Pulp Waffles

Beet Juice Pulp Waffles

A delightfully delicious waffle that is made with leftover beet pulp from homemade beet juice. The waffles have a pretty purple color but with no taste of the beets. The beet pulp adds fiber and extra nutrients to the waffles making them healthier.

Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 3/4 cup milk or almond milk
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup beet pulp

Instructions

  1. In a mixing bowl add and stir together the dry ingredients.
  2. Add the milk, eggs, and oil to the dry ingredients and mix well.
  3. Stir in the beet pulp.
  4. Heat up the waffle iron and spray with cooking spray.
  5. Ladle batter into the preheat waffle iron and cook until they are the texture of a waffle. The waffle should be a toasted brown/purple color.
  6. Serve with fresh fruit like strawberries or blueberries.
