The other day I made homemade beet juice from a huge bag of fresh beets. If you have ever made homemade juice, then you know about the leftover pulp. So I finished making my juice from the beets and made about 8 cups of beet juice. That left me with a lot of beet pulp. While most people would toss the vegetable juice pulp, that is a bad idea.
The pulp from making vegetable juice contains a lot of fiber and nutrients. This nutritious beet pulp can be used in so many recipes. So I froze almost all of the beet pulp and decided to use the rest to make plant-based beet burgers and beet waffles. You may have remembered last year when I received a new juicer and made homemade carrot juice. It was then that I discovered how to make carrot juice pulp waffles. So I then knew that the leftover beet pulp would make some delicious purple beet waffles.

I could not wait to make some beet pulp waffles. I just knew that the purple beet pulp would give the waffles a pretty purple color. Purple is my favorite color. Like the carrot waffles that I made last year, I knew that the beet pulp would add some awesome nutrition to the waffles but not add any beet taste.
I like making healthy waffles as they can be enjoyed in so many ways. You can eat the waffles for breakfast or as a healthy snack. I also love using homemade waffles for sandwiches. Beet Juice Pulp Waffles
Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 3/4 cup milk or almond milk
- 2 eggs
- 1/2 cup vegetable oil
- 1 cup beet pulp
Instructions
- In a mixing bowl add and stir together the dry ingredients.
- Add the milk, eggs, and oil to the dry ingredients and mix well.
- Stir in the beet pulp.
- Heat up the waffle iron and spray with cooking spray.
- Ladle batter into the preheat waffle iron and cook until they are the texture of a waffle. The waffle should be a toasted brown/purple color.
- Serve with fresh fruit like strawberries or blueberries.

This is my 2nd time making them. I am known as mswendy. I'm trying to stay healthy in my sixties and I don't like wasting the pulp when it's perfectly good to use. I have a miniature waffle iron. I like putting peanut butter on them and having them as a snack.
