Red, White & Blue Surf Burgers With Safecatch

Fourth of July is the perfect excuse to fire up the grill and cook up a feast. However, it can get tiring eating the same things—beef or turkey hamburgers. If plant burgers aren’t your thing and you still want an alternative to beef or turkey, it’s time to try a salmon burger. Salmon is lean, has as much protein as beef, and you get the added benefit of omega-3 oils.


 Every 4th of July, my friends invite me over for a barbecue. The menu is always burgers. For someone who does not eat red meat or turkey, I am left with the option of bringing a plant-based burger. This year, I decided to bring something different.

 I discovered an amazing salmon burger recipe from Safecatch, and I want to share it with you. This is a recipe that you are going to like. The burgers are made with Safecatch salmon and packed with protein. The spicy, tangy salmon burger pairs perfectly with a fresh slaw.

For those who have food allergies, the salmon burger can be topped with dairy-free cheese and served on a gluten-free bun. 



Why I like Safecatch Salmon

Safecatch salmon is 100% wild salmon with nothing added. This delicious can of salmon also has the lowest mercury limit of any salmon brand. I just love how they cook the raw salmon in its can.

When you open a can of ordinary seafood like salmon or tuna, the first thing that you do is drain the oil or water from the can. With Safe Catch seafood, no draining is needed as they don't add anything to their can of fish. They don’t add oil, water, fillers, preservatives, or GMO-Soy broth to their salmon. So when you open up the can, all you will find is pure wild salmon. That liquid that you see is natural fish oils, so just stir it back into the salmon. The best salmon burger recipe

The salmon burgers were so delicious and easy to make. I made some modifications to the recipe to accommodate my food allergies. I did not add any cheese to my salmon burger, and I used a gluten-free bun. I also cooked my burgers on an indoor grill.

Ingredients

Burger Ingredients

2 Cans of Safe Catch Salmon

1 Egg

½ Heaping Cup of Quick Oats

1 tsp garlic powder

½ tsp dried ginger

Salt & Pepper to taste

Top with a slice of Pepper Jack cheese or dairy-free cheese


Slaw Ingredients

1/2 Red Cabbage (medium-size)

1 tsp dried ginger

1/2 tsp onion powder

salt & pepper to taste

2 TBSP mayonnaise

1 TBSP apple cider vinegar

1 TBSP lemon juice or squeeze ½ lemon


Instructions

Burger Steps

Beat egg in mixing bowl, add dry spices, mix until incorporated

Flake two cans of salmon in the can (do not drain), then pour each into a mixing bowl

Put Quick Oats in a food processor and pulse until a medium-coarse flour is achieved, then add to the mixing bowl

Fold ingredients with a spatula until evenly mixed together (set aside for 5 mins)

Preheat the grill on high, then fold a single sheet of aluminum foil in half to create a double layer to cover the grill grate

Coat foil generously with cooking spray

Use a 1/3 cup to scoop salmon burger mix and either form by hand or place inside an egg ring to create the classic burger shape

Cook each side 3-4 minutes on the grill, or until golden brown

Add cheese before removing from the grill

 

Slaw Steps

Finely shred half a medium red cabbage

Mix wet and dry ingredients in a mixing bowl until incorporated

Add cabbage & toss until evenly dressed

Cover & set aside in refrigerator (Can make in advance)


Serving Suggestions

Salmon is an amazingly versatile source of lean protein and Omega-3’s, so feel free to add your favorite burger toppings too: lettuce, tomato, pickles, or whatever your family enjoys. This recipe makes 4 Salmon Burgers.

 I got my inspiration for this recipe from the Safe Catch website. Safe Catch makes the best Wild Pacific Pink Salmon as well as Elite Wild Tuna. This fish is sustainably caught and is lower in mercury when compared to other fish.

Ingredients Needed For Kid-Friendly Salmon & Pea Pasta Salad

~ Pasta - Any shape of regular or gluten-free pasta will do. I used a gluten-free Buckwheat Mezzi Rigatoni from Felicia. This organic, naturally gluten-free pasta is brimming with flavor and loaded with fiber, magnesium, and manganese.

~ Salmon - I used boneless canned salmon from Safe Catch.

~ Mayo - Any mayo will work in this recipe

~ Cherry Tomatoes

Teaching Kids How To Make The Salmon Pasta Salad

 The first step to teaching kids how to cook is to have them help you in the kitchen. Teach them how to measure ingredients and mix things together. For older kids, show them how to safely use a knife to cut up ingredients, heat up food in a microwave, and cook pasta on the stove. 

 I like to make a big batch of pasta and keep it in the fridge. Then kids can heat it up in the microwave with their favorite topping. Pasta will keep fresh in the fridge for up to a week.

 If you don't want your child using the stove, premake the pasta for this recipe and store it in the fridge.  


Kid-Friendly Salmon Pasta Salad

Makes 4 servings

Ingredients

3 Cups Cooked Pasta, 

2 Cans Safe Catch Wild Pacific Pink Salmon

1/2 Cup Mayo 

1/2 Cup Cherry Tomatoes

Salt & Pepper to Taste

Fresh Dill ~ optional for garnish

Instructions

1. Open the cans of salmon and pour them into a large mixing dish; no need to drain the liquid.

2. Add the cooked cold pasta to the salmon and toss.

3. Add the mayo, salt and pepper to taste to your pasta mixture and combine evenly.

4. Slice the cherry tomatoes in half and stir into the pasta. If top with fresh dill.

5. Enjoy immediately or store in the fridge in an air-tight container for up to 3 three days.

Optional Add-In Ingredients

~ 1 Cup of Vegetables like peas, corn or broccoli

~ Top with Sunflower Seeds for a nice crunch

 So I was delighted when I discovered a plant-based smoked salmon when I attended Expo East 2 months ago. This vegan salmon that is made from carrots tasted so much like the real thing. I was bummed when I could not find this carrot salmon at my local stores. So I set out to make homemade vegan smoked salmon.

 I already have a recipe for vegan tuna that tastes like real tuna so I knew that I could make vegan salmon at home. Creating plant-based recipes that taste like traditional seafood products helps me to follow a plant-based diet. If you love seafood and want to eat more plant-based foods, you need to make this vegan smoked salmon recipe!

 This recipe for vegan smoked salmon is perfect to enjoy with bagels and cream cheese for breakfast or brunch. You could also enjoy the salty salmon on crackers for a perfect party appetizer. This carrot salmon would look so yummy on a vegan charcuterie board with an assortment of bagels, dairy-free cream cheese, and other bagel toppings like sliced olives, roasted red peppers, homemade sun-dried tomatoes, and capers.

Ingredients Needed for Vegan Salmon Lox

+ Carrots ~ Make sure to buy large carrots and not baby carrots

+ Soy Sauce(wheat-free) or coco aminos

+ Lemon Juice

+ Smoked Paprika

+ Olive Oil

 To make plant-based smoked salmon, you will need several ingredients. You may already have most of them at home like the spices. The main ingredient in this recipe is carrots. You will need to buy large raw carrots, not baby carrots. Since you will be using a vegetable peeler to make long strips of carrots for the recipe, select the large & fat carrots. I like this vegetable peeler as it has a nice grip on it.

 Make sure to buy smoked paprika as this will give the vegan salmon that smoky taste. If you want to make this recipe gluten-free, then buy tamari sauce instead of soy sauce. Any type of salt will work for the recipe, I use sea salt in most of my recipes and buy sea salt in bulk containers.

Basic Steps To Make Vegan Smoked Salmon

+ Roast the whole carrots in salt

+ Slice the carrots into thin strips

+ Marinate the carrot strips in the seasonings

 Making plant-based smoked salmon is quite simple but the preparation will take a couple of hours. Most time of the preparation time will be roasting the carrots in the oven to get the carrots soft. This can take up to an hour. Using the peeler to slice the carrots into thin strips may take a while also. Trust me, it is worth it as this vegan salmon is amazing.

Tips for slicing the roasted carrots into thin strips: To get thin strips or ribbons from the carrots, that resemble lox strips, use a vegetable peeler. Starting from the top of the carrot, press the peeler into the carrot and in a downward motion slice it into a thin strip. After slicing a couple of strips of carrot from the carrot, it may be hard to get more thin strips. So take a sharp knife and cut the rest of the carrot into long thin pieces. These thicker pieces of carrot will still absorb the marinade and taste like salmon. Don't worry if all the carrot strips don't look the same as the taste will still be delicious.

Tip for how long to marinade the carrot strips: The carrot strips need to soak in the liquid mixture for at least 30 minutes.The longer the better as it gives more time for the flavors to infuse the carrots. You can also prep it up to 5 days ahead and leave it in the marinade in the fridge until ready to serve.

Storage tips: Carrot smoked salmon lox will keep fresh in an airtight container for up to 5 days in the fridge. It is not recommended that you freeze vegan smoked salmon as the texture will change once it is defrosted.

The Best Spicy Salmon Waffles Recipe

Everything tastes better when made in a waffle machine


         I received samples from Safe Catch to facilitate this post

 I do love waffles and I like to make them every chance that I get. My favorite waffle recipe is one that is made with savory ingredients. My family thinks that I am strange as I like waffles that have roasted sunflower seeds in them. I am just not into sweet waffles covered in sweet sticky syrup. I like my waffles crispy and savory. Sometimes I even like my waffles spicy. How do you like your waffles?

The waffle maker can be so useful beyond making waffles. I have seen recipes for the waffle maker that uses muffin and brownie mix. I have also heard of people cooking mac and cheese in the waffle maker, I am not so sure of the mess with this recipe. I am sure that my boys would love mac and cheese in the waffle iron or maybe a peanut butter creation. I will stick with my savory sunflower seed waffles.


 So when I saw this waffle recipe over at Safe Catch salmon waffles, I just knew that I had to make it as it sounded so delicious and it was a savory recipe. This waffle recipe was so me as I love that it was made with salmon. I do love salmon. Salmon is my favorite kind of fish. One of the best ways to enjoy salmon is straight from a can. I am not talking about just any can of salmon. This healthy girl demands sustainably caught salmon. I also want my salmon to be low in mercury.



A box of the most amazing seafood

  I had just received the most amazing box of goodies in the mail the other day from Safe Catch. This company sure does know how to make me smile as this amazing box was loaded with so many delicious cans and pouches of seafood. I have never seen so many delicious varieties of tuna and salmon. The taste is what I like the best

If you don't like spicy, just use regular mayo. You can also substitute coconut flour for the flour if you need a gluten-free option or a keto-friendy recipe. These waffles could be made with tuna also, depending on your preference. You could eat these like you would regular waffles with a drizzle of chipotle mayo and a sprinkle of everything spice. I was out of avocados but sliced avocados would be amazing on my spicy salmon waffles.  You could also place this delicious salmon waffle patty in a flour tortilla with some coleslaw. ingredients:

  • 1 Can of Safe Catch Salmon, 5 ounces (Don’t drain)
  • 1 tablespoon  Flour
  • 1 tablespoon Chipotle Mayo
  • 1 egg
  • 1 teaspoon minced garlic

instructions:

How to cook Spicy Salmon Waffles

  1. Heat up the waffle maker.
  2. Mix one can of Safe Catch Salmon with all the remaining ingredients.
  3. Stir until all ingredients are incorporated.
  4. Spray or brush the heated waffle maker with coconut or olive oil.
  5. Then pour the mixture into the waffle maker, making sure to spread it evenly.
  6. Cook for 3-5 minutes or until brown.
  7. Remove from waffle maker and serve on a plate of fresh greens. Drizzle or spread additional chipotle mayo over the waffles and serve with avocado or sweet pepper slices. For an additional awesome taste, sprinkle everything spice on the salmon waffles.
