Spicy Breakfast Bean Bowl And Other Bean Recipes

           Beans add a wonderful touch of protein and fiber to this spicy Breakfast bowl.

 Beans are a staple in my house. I always have several cans in my pantry. I find that beans are the ultimate versatile ingredient in many of my meatless recipes. They are a great source of protein and are loaded with fiber. When I go shopping, I always grab several cans of pinto, black, and garbanzo beans. I am glad there is a Walmart store down the street that stocks my favorite Bush Beans.  I like buying canned beans as they are great to use for easy and quick meals. There are some weeks that I use beans for almost every meal, including dessert. You heard right, I even use beans for dessert in my delicious black bean brownies. Most people shy away from beans as they think they are bland but I am here to show how beans can be flavorful and delicious. One meal that I like using beans for is breakfast. Yes, you heard that right, beans can be delicious and healthy for breakfast.

  So how do I use beans for breakfast? I use them in a spicy breakfast bean bowl. This recipe is so simple to make and I like to keep the ingredients in my fridge so I can quickly assemble this delicious dish in the morning. You can use almost any beans in this breakfast bowl but I like using pinto beans. To make this yummy bean dish, you just simply layer the ingredients in a bowl and warm it up in the microwave.

Spicy Breakfast Bean Bowl
1 cup cooked brown rice
1 cup Bush canned pinto beans, rinsed and drained
2 eggs, scrambled
1/4-1/2 cup red or green enchilada sauce
1/4 cup shredded cheddar cheese
1/4 cup diced red and yellow peppers
1/2 avocado, sliced

Place the ingredients in order, except the avocado, in a microwave safe bowl. Heat on high for 1-3 minutes or until warm and the cheese is melted. I like a lot of spicy sauce on my food so I use 1/2 cup of the enchilada on my dish but if you like your food less spicy, I recommend starting with 1/4 cup. Once the dish is heated top with the avocado slices and enjoy.

  I love also like using beans in a homemade hummus. My favorite bean to use is garbanzo beans but I also use white beans.  I love dipping raw veggies and crackers into my hummus. This stuff is so addicting, I can eat a whole bowl in one sitting. That is ok as my recipes use less oil than store bought and is loaded with protein.

  Canned beans can also be great for snacking. My kids love when I make roasted garbanzo beans in the oven. I add some seasonings like garlic and salt to make a crunchy snack that is loaded with protein and fiber.

 My favorite way to use beans is for dessert. I find that black beans make brownies a healthy dessert. The beans add protein and fiber to my brownies thus making them a guilt-free treat.

 My kids love when I make black bean brownies. They think that is the best way to cook with beans. Black beans give brownies some great nutrition and since the beans are pureed you can’t even taste them. These brownies are so moist and decadent with lots of chocolate flavor. I have several different recipes for my black bean brownies and some are even gluten free! Here is my favorite recipe.

Gluten Free Black Bean Brownies


1 15oz can Bush black beans, rinsed/drained
1 tablespoon chia seeds
1/3 cup cocoa powder, unsweetened
3 tablespoons coconut oil
3 large eggs
2/3 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 + 1/4 cup semi-sweet chocolate chips, or any other flavor chips like butterscotch


Preheat the oven to 350 degrees F.
1. Add all of the ingredients except the chocolate chips into a food processor.
2. Blend until completely smooth, scraping down the sides as needed.
3. Remove the blade from your food processor, and stir in 1/2 cup of chocolate chips.
4. Spray an 8 x 10" baking dish with nonstick cooking spray, and line with parchment paper. The parchment will help you lift the brownies out later.
5. Pour the batter into the prepared dish and spread it out evenly.
6. Sprinkle the remaining 1/4 cup of chocolate chips on top.
7. Place the dish in the center of the oven and bake for 25 - 30 minutes or until a toothpick inserted in the center comes out clean.
8. Remove the brownies from the oven and let them cool in the pan for 15 minutes.
9. Using the parchment paper, lift the brownies out of the pan and place them on the counter.

  I like to start my morning with a high protein smoothie as protein is good to have after running.  I started this smoothie craze two years ago and have seen my body transform in a good way. Over these two years, my body has become more tone and I really think adding more protein to my diet has helped. I liked the sound of that! I prefer plant based protein powder and fermented plant based protein not only means no bloating but also helps with the growth of friendly bacteria. So that means I get a happy gut when I make my protein smoothie from fermented protein powder.

Coconut Apricot Vanilla Smoothie
8 fresh apricots, remove the pits
1 cup almond milk
1 scoop Genuine Health fermented protein powder, vanilla flavor
2 tablespoons shredded coconut flakes
6 ice cubes

I Gave Up My Plastic Water Bottle

 I never thought that I would make the switch.

I was never a fan of metal water bottles. I had my purple plastic water bottle that I always carried with me and I was good. I would get metal water bottles in the mail from brands that I was working with and would try them and just did not care for them. The water tasted weird in them and I hated drinking from the wide spout as have the time I would spill water down my shirt. Then there was the problem of me losing the lid and don't get me started on that loud ping sound they made when tipped over. My husband loved his metal water bottle as it kept his coffee hot and water cold but that did not excite me as I just could not get past the way the water tasted. I use a water bottle for drinking water and the water has got to taste good so I was happy with my favorite purple plastic water bottle. I was not going to switch.

  Well that all changed a week ago at Blogfest. In my swag bag, there was a teal water bottle that caught my eye. Once I got home from Blogfest, my teen tried to take my Takeya water bottle and I said "no! It is purple and it is mine!" The teen begged for me to get him one and I said: "we'll see." I am so glad that I made the switch from plastic and I just love how my water stays cold even when I leave it in the hot car. I take this water bottle everywhere! For a spicy taste, use some crushed red pepper. You can even use dried garbanzo beans for this recipe, just cook them first. Garbanzo beans are so easy to cook in a pressure cooker or Instant Pot. Roasted Garbanzo Beans 

1 can garbanzo beans, drained and rinsed
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon salt
optional spices like chili powder, red pepper, seasoned salt, or crushed rosemary- use about 1/4 teaspoon of the desired spice.

Oven 400F
  Pat the garbanzo beans gently with a paper towel to dry them. Then place them in a bowl and add the olive oil and seasoning. Stir until beans are covered with oil and spices. Place the beans on a baking sheet and bake for 15 minutes. Stir the beans and bake 15 more minutes or until toasted and brown. Let the beans cool down and enjoy. Store leftovers in a container with a tight lid. Serves two.

How To Take The Hassle Out Of Car Shopping

 I dread the day we need to replace our car. Car shopping is not my favorite thing to do. I think I would rather visit the dentist for an implant than shop for a car. I just love that I can go online and see the selection of cars without having to step foot on a car lot. That means no pesky sales men pressuring me. This website allows you to see the inventory of many car dealers. I remember growing up and seeing the cars that my dad would buy. I think he would buy the first car that the sales man offered as he did not know how to say no to them. With Cars.com, I can look at all the cars available and really check them out without any one breathing down my neck. If I choose to buy a used car, I can plenty of info on the car through the CarFax Report. This website has a huge selection of cars and I love how easy it is to navigate. I can not only choose the type of car but things like color and how much I want to spend.  Cars.com also shows the price of the car, as well as the MSRP and they, have a price comparison tool that provides lots of useful data to help you with your car shopping.

  No longer do I have to have a car in a color that I don’t like. I just love that I can search for my next car by the color I like. My only problem is convincing my husband. The last time my husband bought a car, he was having a tough time deciding which car to get. So I joked with him and said you should buy the car that comes in yellow (he was working a place called Bumble Bees at this time). The next day the car that he was leaning towards was available in yellow so he bought that car. Cars.com made is so easy for us to shop for a car.

  Cars.com is the place that I will be going to when we need to replace our car. I might just like shopping for a car. The only problem will be my husband as he and I don’t always agree on the car we should buy. There are so many cars out there with thousands of different features. Back To School Time Tips for High School Seniors

  It is hard to believe that my middle son is going to be a senior this year. Time flies by so fast. This is my third time around with a senior in the house so I have learned plenty about helping them prepare for that last year of school. Even though most of the prep for college has happened in his junior year there is still plenty for my son to do. I am so thankful for the teachers who are helping my son to prepare him for what needs to be done in his senior year. I am also glad my son is very independent and will do all this work that is needed. With two younger kids at home, I don't have time, nor the desire to be a helicopter parent.

 My son wants to attend the Navy Academy but also has other plans in place if he doesn't get in. I know my son has a good chance to get into the academy based on his grades. Proud mama brag time: My son is #1 one in his graduating class!  The competition is tough though so grades alone does not mean he will get into the academy. Now of days academy and colleges want to see a well-rounded student who also is into sports and other school activities. Even then, sometimes even that is not enough but it sure does help. I am glad my son has a portfolio that has many JRROTC and sports events in it as well as volunteer hours.

 Yes, you read that right, a senior needs to have a portfolio 
 A portfolio is very needed for all those college and scholarship applications.  Most people think that your junior year is the best time to fill out all those scholarship applications but there are still plenty to fill out in your senior year.

Take the ACT and SAT tests
 A senior can still take the ACT and SAT tests in their first semester of senior year. My son already took the test twice in his junior year but wants to try one more time to see if he can get a better score. A better score can mean getting into the academy or college of his choice. It can also get him some scholarship money.

Keep the grades up
 Most people tend to slide when it comes to grades in their senior year. That is a big mistake as colleges are still looking at those transcripts. My daughter was neck to neck with several people in her senior year when it came to grades. She became her high school valedictorian because the number one student got a D in a class.

Keep applying for scholarships
There are plenty of scholarships still out there. You can never apply to too much scholarship money. My daughter had a full ride scholarship when she went to college and the scholarship money that went to the college helped pay for her books.

It is never too late to get better grades
 Good grades in your senior year can still help you get into college. There are plenty of prep places and Learning Centers that can help seniors prepare for college.

Have fun
Enjoy your last year of high school. School does not have to be all work and no fun but the smart person is able to balance work and fun. Some kids like to attend the senior prom and while for others it just may not be for them. My son's JRROTC unit has a big ball every year to celebrate their hard work. It brings me such joy to see these high school kids dress up in long gowns and fancy uniforms. It will be bitter sweet to see my son attend this ball and then graduate. My youngest are nine and ten so it will be a while until they graduate from high school.

ALBUQUERQUE, NM – Liam, the son of Josh Hansen the General Manager of the Dion’s on High Resort Blvd. in Rio Rancho was diagnosed with Leukemia in April. When Liam was diagnosed, many Dion’s employees gathered to support the Hansen Family. When Hansen was asked how Dion’s could help, he said his family wanted to give back to the Children’s Cancer Fund of NM by collecting toys to donate.

 Hansen said, “We were first introduced to CCFNM during our initial stay in the hospital when Liam was diagnosed. Part of its mission is to provide a reward for children while they battle their cancer treatments. Liam’s weekly visits to the hospital are difficult, scary, and emotionally draining for him. He looks forward to stopping by the CCFNM Toy Closet after each visit. Receiving a small toy or prize always puts a big smile on his face and it helps him get through his treatments. CCFNM also brings toys to Liam’s two older sisters, making them feel included.”

 Mark Herman, CEO of Dion’s, said, “Josh has been with Dion’s for over 16 years. His family is our family and we want to help however we can.” Dion’s is helping the Hansen family to collect toys to be donated in Liam’s name to the CCFNM Toy Closet. “Some of the toys that Liam has enjoyed
receiving have been toy cars and action figures. If you are able to donate, please remember toys for little boys as well as little girls who are battling cancer, and prizes or gift cards for teens,” said Hansen.

Gravity Park Is For Great Family Fun

My family and I had a blast at this awesome extreme recreation trampoline park!

     My kids and I love to visit Gravity Park. This is a cool family fun place in Albuquerque that has tons of trampolines, foam pits, and other fun things for the whole family. Did you know that jumping on a trampoline for an hour can burn up to 1000 calories!

  When I visit this fun jumping place I get some crazy fun exercise. Usually, the younger boys and I go by ourselves but today the whole family went to have fun jumping. Even my husband got in some exercise and he hates exercising. My husband just could not resist having fun jumping on trampolines.

My teen, I think had the most fun! He was determined to jump high enough so he could touch the yellow and white punching bag. That boy sure does have way too much energy. 
Did I tell you that Gravity Park is a great place for kids to burn off that energy and get some awesome exercise?
I should have worn my Fitness Tracker to see how many steps/jumps that I did.

          After many tries, the teen finally jumped high enough to touch the punching bag!

There is way more than jumping at this family sports place! My youngest son really enjoyed all extreme air sports. This area of the place looked like one of those obstacles shows that my boys like to watch on TV.  Check out all the photos of my youngest son having fun. My other younger son was being camera shy.

      My son loved that there were a swinging trapeze and a fun foam pit to fall into too.

You can even get some climbing into your workout.

If jumping is not your thing or you need to rest there are plenty of places to get comfy.

                These chairs are just too cool. I need a set of these hands in my house.

Here is a view of the room with all the extreme air sports. This place even has a basket ball court. How is that for fun, jumping on a trampoline while trying to shoot baskets.

I wish this place was closer to my house as I would take this fun fitness class that they offer. I could see myself joining in on this class several times a week as jumping is so fun.
