Tuna Avocado Rice Bowl With Mango

 If you love sushi, you are going to love this tuna avocado rice bowl with mango. This recipe is perfect for making sushi at home without all the difficult sushi rolling. This bowl has all the flavor of sushi but is so much easier to make.


 My favorite restaurant meals are sushi and poki bowls. Now that I am trying to save money, I am not eating out as much. So I have had to learn how to be creative in the kitchen with the ingredients that I have at home. I quickly learned how difficult it was to make sushi rolls and that I did not have fresh tuna in my fridge.

My Recipe Inspiration Came From A Tuna Sushi Stack Recipe 

 It all started with a can of delicious tuna from Safe Catch. I was browsing through recipes on the Safe Catch website and came across a recipe that was similar to the viral tuna sushi tower. The photo of the tuna tower looked so amazing.

 I wanted to make this recipe for lunch but quickly realized that I did not have sushi rice or the tools needed to make the tower. All I had was a can of Safe Catch Elite Wild Tuna, white rice, an avocado, a cucumber, frozen mango slices, and spicy mayo, along with a craving for sushi. 

So I used my creativity and whipped up the next best thing to a sushi tower. I made a delicious Tuna Avocado Rice Bowl With Mango. This sushi bowl was so easy to make and tasted better than a poke bowl.

The Best Substitute For Sushi Rice

Most people don't have sushi rice in their pantry, but they most likely have white rice. Sushi rice is also more expensive than white rice. You can easily turn white rice into sushi rice with rice vinegar and sugar. 

To make sushi rice with white rice, simply add 1/4 cup of rice vinegar mixed with 1 tablespoon of sugar and 1 teaspoon of salt to a batch of white rice while it is still hot. This will give the rice a sticky texture with a sweet taste.

Steps to making the Tuna Rice Bowl

  1. Scoop rice in a bowl

  2. Add diced cucumber, diced avocado, and diced mango

  3. Sprinkle seaweed 

  4. Top with tuna

  5. Drizzle spicy mayo

 If you cook with herbs and spices, you want the ones that have the best flavor. Most people assume that fresh herbs are the best for flavor, but unless you have an indoor herb garden, that is not the case. 

 Fresh is not always the best when it comes to the best flavor for your recipes. Those fresh herbs that you buy at the store may not be all that fresh; who knows how many days it has been since they were picked.

Problems with fresh store-bought herbs are 

  + Freshness: How many days/weeks since the fresh herbs were picked?

  + Bacterial Contamination: How many people have touched those fresh herbs? Proper washing may strip flavor from herbs.

  + Food Waste: Stores sell you large amounts of herbs when you only need a small amount. You end up tossing the rest.

  + Improper Storage: Many fresh herbs start wilting the moment you pick them. Others don't like cold storage. This can affect the herb's flavor.

  + Cost: Fresh herbs from the store can be expensive.

 Freeze-dried vs. dried herbs: which are better?

While both jars of freeze-dried and dried herbs may say “dried herbs” on the front. They are not the same inside. These herbs are processed in different ways. The aroma, taste, and color of the herbs are so different.

Dried herbs process

Air drying pulls water out of a leaf with heat. The trouble is that the compounds that make a herb smell like itself are volatile — they leave with the heat too. The leaf collapses, browns, and what is left in the jar is mostly texture and a memory of the plant.

Freeze drying takes a different road. The herb is frozen solid first. Then the pressure around it is dropped so far that the ice turns straight into vapor without ever melting. The water leaves, the aromatic oils largely stay, and the leaf keeps the shape it had when it was frozen. That is why freeze-dried basil is still green and still smells like basil, and why it comes back to life the moment it touches something wet.

I discovered Fresco Flavors at Newtopia Now

My first recipe with Fresco Flavors Freeze-dried herbs

I was sent a variety of organic freeze-dried herbs. The herbs that I was sent were

  + Chives

  + Dill

  + Red Chili

  + Mint

  + Oregano

  + Basil

I was excited to try and taste the herbs. I grabbed a package of gluten-free biscuit mix and decided to use the freeze-dried chives. I added the chive rings directly to my biscuit dough mix. After I added the milk to the mix, the chives rehydrated in a couple of seconds. I loved that I did not have to rehydrate the herbs! 


As I was dropping the biscuit dough on the baking sheet, I thoroughly enjoyed the aroma of the chives.  My biscuits tasted so good!

The main star of this delicious summer sandwich is Fishwife Sardines with Preserved Lemon. If you are a fan of sardines, you need to try Fishwife sardines with lemon; these are my favorite sardines. The flavor of this tin of sardines is bursting with flavor. The sardines are drenched in a lemon-flavored oil.

Fishwife calls the sardine oil "liquid gold" and recommends saving it for the sandwich dressing. Trust me, this 'liquid gold" is good. I have been known to lick the tin after I eat the sardines.

Ingredients for Summer Squash Salad & Sardines on Toast

 Recipe was discovered here

  + 1 can of Fishwife Sardines with Preserved Lemon; save the “liquid gold” for the recipe!

  + 1 summer squash, cut into ribbons using a vegetable peeler

  + 1 celery stalk, thinly sliced

  + 1 handful of parsley or cilantro chopped (or both!)

  + ¼ onion or shallot, thinly sliced

  + Salt and Pepper to taste

  + 2 well-toasted slices of your favorite bread

  + A Schmear of mayo

  + Heirloom tomato slices

Directions

To make the salad, combine the first 6 ingredients in a medium bowl. Make sure to dump the whole can of sardines, including the liquid, in the bowl. The liquid from the sardines is what gives this sandwich its intense flavor.

Gently toss this around until everything is well coated and shiny.

Taste and adjust with more lemon juice or salt according to your liking.

To build your toast, grab a toasted slice of bread & schmear it up with mayo.

Place your tomato slices and season them with a little salt and pepper.

Finally, pile your squash ribbon sardine salad high on top. Go big here, people!

Can I make modifications to the recipe?

You might notice that the original recipe from the Fishwife website included a lemon and three slices of bread. I did not use additional lemon, since I used the lemon slice from the can of sardines. Since I piled my sandwich high with the sardine salad, I only needed two slices of bread. Plus, I was not sharing this sandwich with anyone else. 

 I also omitted a couple of ingredients from the one posted on Fishwife's website. I made my sandwich without the celery and parsley. I am not a fan of celery in sandwiches; I don't care for the texture. I also dislike the taste of parsley and cilantro: I have the gene that makes it taste like soap. 

I also substituted gluten-free bread, as I have a wheat allergy.

Red, White & Blue Surf Burgers With Safecatch

Fourth of July is the perfect excuse to fire up the grill and cook up a feast. However, it can get tiring eating the same things—beef or turkey hamburgers. If plant burgers aren’t your thing and you still want an alternative to beef or turkey, it’s time to try a salmon burger. Salmon is lean, has as much protein as beef, and you get the added benefit of omega-3 oils.


 Every 4th of July, my friends invite me over for a barbecue. The menu is always burgers. For someone who does not eat red meat or turkey, I am left with the option of bringing a plant-based burger. This year, I decided to bring something different.

 I discovered an amazing salmon burger recipe from Safecatch, and I want to share it with you. This is a recipe that you are going to like. The burgers are made with Safecatch salmon and packed with protein. The spicy, tangy salmon burger pairs perfectly with a fresh slaw.

For those who have food allergies, the salmon burger can be topped with dairy-free cheese and served on a gluten-free bun. 



Why I like Safecatch Salmon

Safecatch salmon is 100% wild salmon with nothing added. This delicious can of salmon also has the lowest mercury limit of any salmon brand. I just love how they cook the raw salmon in its can.

When you open a can of ordinary seafood like salmon or tuna, the first thing that you do is drain the oil or water from the can. The best salmon burger recipe

The salmon burgers were so delicious and easy to make. I made some modifications to the recipe to accommodate my food allergies. I did not add any cheese to my salmon burger, and I used a gluten-free bun. I also cooked my burgers on an indoor grill.

Ingredients

Burger Ingredients

2 Cans of Safe Catch Salmon

1 Egg

½ Heaping Cup of Quick Oats

1 tsp garlic powder

½ tsp dried ginger

Salt & Pepper to taste

Top with a slice of Pepper Jack cheese or dairy-free cheese


Slaw Ingredients

1/2 Red Cabbage (medium-size)

1 tsp dried ginger

1/2 tsp onion powder

salt & pepper to taste

2 TBSP mayonnaise

1 TBSP apple cider vinegar

1 TBSP lemon juice or squeeze ½ lemon


Instructions

Burger Steps

Beat egg in mixing bowl, add dry spices, mix until incorporated

Flake two cans of salmon in the can (do not drain), then pour each into a mixing bowl

Put Quick Oats in a food processor and pulse until a medium-coarse flour is achieved, then add to the mixing bowl

Fold ingredients with a spatula until evenly mixed together (set aside for 5 mins)

Preheat the grill on high, then fold a single sheet of aluminum foil in half to create a double layer to cover the grill grate

Coat foil generously with cooking spray

Use a 1/3 cup to scoop salmon burger mix and either form by hand or place inside an egg ring to create the classic burger shape

Cook each side 3-4 minutes on the grill, or until golden brown

Add cheese before removing from the grill

 

Slaw Steps

Finely shred half a medium red cabbage

Mix wet and dry ingredients in a mixing bowl until incorporated

Add cabbage & toss until evenly dressed

Cover & set aside in refrigerator (Can make in advance)


Serving Suggestions

Salmon is an amazingly versatile source of lean protein and Omega-3’s, so feel free to add your favorite burger toppings too: lettuce, tomato, pickles, or whatever your family enjoys. This recipe makes 4 Salmon Burgers.

Sauteed Onions and Steamed Carrots

When my AVACRAFT pan arrived, it was a couple of days after my church's monthly food pantry. This month, we had an abundance of carrots and onions. I had already made several gallons of carrot juice and decided to cook some carrots. 

 Since I had plenty of onions, I decided to sautee some in the AVACRAFT Stainless Steel Everyday Pan. I was going to microwave some carrots, but knew they would taste better if they were steamed. The best part of cooking with this everyday pan was that I could cover the pan to steam the carrots, once the onions were cooked.

So I chopped up the onions and carrots. Then I prepared the cookware. Most people who complain that food sticks to stainless steel pans, may not prepare the pan properly. There are certain steps to heating up a stainless steel pan. Once you learn how to prepare stainless steel cookware, your food will not stick to the pan.

How to prepare stainless steel pans

Some people battle a degree of frustration with food sticking or burning in their stainless steel cookware. The solution to these problems is just a little bit of know-how of the steps to follow.

1. Preheat the empty pan by placing it on a burner at low to medium heat for about 2 to 3 minutes.  

2. To determine if your pan is ready, do the water droplet test. If you drop a single drop of water into your pan and hear the “TSSS” sound, your pan is ready.

3. Then add oil to the pan. Heat your oil until it shimmers but does not smoke.

My review of the  AVACRAFT Stainless Steel Everyday Pan

 I liked the size of the pan. The depth allowed me to fit plenty of carrots in the pan. I decided to place both the carrots and the onions in the pan at the same time. I had plenty of space to move the food around while I sauteed the onions. Once my onions were cooked, I placed the lid on the pan and lowered the heat for a couple of minutes. This allowed my carrots to get softer. 

I loved that the glass lid had a tight seal, and it helped me to see the food. The tight lid helped my carrots steam up quickly. 

Once my food was done, the pan was easy to clean. The onions did make a mess in the pan, but I was able to scrub it out with some baking soda and this awesome natural sponge. I usually use Bar Keepers Friend for cleaning my stainless steel pans, but I was out of this cleaner.

I really loved the price of the AVACRAFT Stainless Steel Everyday Pan, and it performed just as well as my expensive stainless steel pans. The AVACRAFT is several hundred dollars cheaper.

 2. Open the can of tuna - Drizzle the spicy oil over rice and stir.

 I have already bookmarked many of the recipes to make. While some of the recipes call for meat, I can easily make them without the meat. Some of the recipes that I am excited about are Poke, Beautiful Indian Spice, and Harvest Veg. 

 One recipe that really got me excited was Savory Oatmeal. I love that Starr Edwards also enjoys her oatmeal savory with vegetables and avocado. Most people think that it is strange that I eat my oatmeal in a savory style.

 The other day, while I was looking at my pantry and trying to figure out what to make for lunch with a box of gluten-free pasta, I spotted a unique-looking small box that was near my canned goods.  I had just finished roasting the last of my garden tomatoes for oven-roasted sun-dried tomatoes and knew that they would be perfect to use in my pasta salad.   1. Cook one serving of gluten-free pasta according to directions on the box. Once cooked, rinse the pasta under cold water.

  2. Steam a handful of fresh kale or spinach - My easy way of cooking the kale is to get the kale slightly wet and cook it in the microwave for 30 seconds.

  3. Chop up 2-3 sun-dried tomatoes

  4. Open the tin of smoked salmon

  5. Combine the above ingredients on a plate and enjoy.

The most delicious lunch

 This pasta salad was so easy to make, and it was ready to eat in under 15 minutes. While I made my meal with gluten-free pasta, you can use regular pasta. If you don't have sun-dried tomatoes, you can use cherry tomatoes. You can also use spinach in place of the kale.
