Chocolate Mousse Cake

Check out this delicious chocolate cake that I made for Thanksgiving. My family love chocolate when it comes to desserts. I made this cake with the help of a cool baking pan called the Love Cooking Gourmet Fill N Flip™. This cool pan from Love Cooking allows you to fill your cake with your favorite filling. The set comes with two pans that are designed with an opening in the center for your filling and then fit together perfectly to make frosting the cake simple. Your guests will be surprised when you cut into the cake and a yummy chocolate mousse filling is discovered. See my recipe at the end of page.

The Love Cooking Company also makes some other cool baking pans. Here are two others that I had fun trying out,

The PushPan® allows you to remove your cake from the pan without a mess. The pan is an alternative to a spring-form pan and with a simple push, your cake comes out of the pan. No more having half the cake remaining in the pan.

I also used the Push Pan to make a pumpkin cheesecake and loved how easy my cake came out of the pan. It looked wonderful! Try doing that with a pie pan.

The last item that I tried was the Mrs. Fields Cutie Cakes™ Baking Pan. This pan makes 48 bite-size cakes which are perfect for parties.

I did not have much luck with this pan though. I followed the instructions when I filled each section with my cake batter. My cakes still over-flowed and were difficult to get out of the pan. I even greased the pan.

This was all I was able to salvage from the pan. These cakes are very small and hard to frost too, I put a penny on the dish so you could understand the size. This pan involved to much work for me for these little cakes. Maybe you might have better results with the pan.

Here is my recipe for the Triple Chocolate Mousse Cake.

 Chocolate Mousse Cake

1 box chocolate cake mix
Water, vegetable oil and eggs called for on cake mix box

Chocolate Mousse Filling and Frosting
2 cups milk chocolate chips
1 1/2 cups whipping cream
1 container white frosting
1 container chocolate frosting

First, thoroughly butter and flour both pans. Then fill with cake batter, made from directions on box,1 about three quarters of the way. Bake according to your cake recipe. Remove from the oven and let cool. Carefully flip each pan upside down and remove the pieces. Add half the chocolate mousse filling/frosting to the cake with the larger opening. Place the non-filled cake on top of the filled cake. Then frost with the remaining mousse/frosting.

While cake is baking and cooling, you can prepare the filling/frosting.

To prepare the filling/frosting

In medium microwavable bowl, place chocolate chips and whipping cream. Microwave uncovered on High 2 to 3 minutes, stirring once every minute, until chocolate is melted. Stir until mixture is smooth. Refrigerate about 30 minutes or until slightly thickened.

Add frostings to chocolate mixture. Beat with electric mixer on high speed 1 to 2 minutes or until well blended and fluffy.

Brown Sugar Apple Pie And a Giveaway

I made a delicious apple pie for Thanksgiving. While I made many other pies, this was my first pie with a top crust.

My husband has been asking me for a while to make him an apple pie. It is apple season and I do have a new apple slicer to try out, so how could I say no to the man I love. While I have made all kinds of pies before, I have never made an apple pie before. I think the reason I have never made an apple pie before is I have been intimidated by all the work in cutting all the apples that are needed for the pie. My new apple slicer, with the comfortable handles, will now help me core and slice all the apples that I need for my pie. I love that my new apple slicer makes perfect apple slices so my pie will look perfect for my husband. Once I finish making my apple pie, I can place my apple slicer in the dishwasher to be clean.

When I make any kind of pie, I like to make a homemade crust as it tastes so much better than store bought. A homemade crust does require more work as you have to mix the dough and roll it out. I just use my food processor to mix up the dough. My silicone rolling pin makes rolling out the dough a breeze as it has a non-stick surface and nothing sticks to it. It may be small, but that makes it easy to store. I also love using my rolling pin when I make pizza and tortillas. I usually just rinse my rolling pin after use, but this one can go in the dishwasher if needed.

Brown Sugar Apple Pie

3/4 cup light brown sugar
1/4 cup all-purpose flour
3/4 teaspoon ground cinnamon
7 medium apples, peeled, cored and sliced
3 tablespoons lemon juice
3 tablespoons butter, diced
1 egg, beaten, for brushing
Sugar, for sprinkling
chilled pie crust dough for top and bottom of pie (recipe below)

Preheat oven to 450 degrees F
Mix together the brown sugar, flour, and cinnamon in a small bowl. In another bowl, sprinkle apples with the lemon juice and toss. Stir in the sugar mixture to evenly coat the apples. Set aside.

Divide out chilled dough into 2 pieces and use 1 to roll out to line a 9-inch pie pan. Chill the other piece until needed for the top of pie.

Mound the apple and sugar mixture into the pie pan lined with dough. Dot with the diced butter.
Then roll out the remaining dough into a 9-inch circle and place on top of the apples. Using a fork, seal the crust along the edges of the pie and trim any excess dough. Brush the top of the  pie with the beaten egg and sprinkle with sugar. Then slice a small in the middle of the pie. Bake for 30- 40 minutes or until golden brown. Cool for 20 minutes before slicing.

Pie Crust
2 1/2 cups all-purpose flour
1/4 teaspoon  salt
3 tablespoons sugar
16 tablespoons butter, cold and cubed
1/4 cup to 1/2 cup ice water

In a large mixing bowl, mix together the flour, salt and sugar. Add the cold butter cubes and work it into the flour with your hands or a pastry cutter. Work it quickly, so the butter doesn't get too soft, until the mixture is crumbly, like very coarse cornmeal. Add the ice water, a little at a time, until the mixture comes together forming a dough. Bring the dough together into a ball.

When it comes together stop working it otherwise the dough will get over-worked and tough. Divide the dough in half and flatten it slightly to form a disk shape. Wrap each disk in plastic and chill in the refrigerator for about 30 minutes. On a floured surface roll each disk out into a 10 to 11-inch circle to make a 9-inch pie.

Yield: 2 (9-inch) pie crusts

Maple-Roasted Brussels Sprouts With Pumpkin Seeds

A delicious sweet & savory side dish for your Thanksgiving meal. These roasted Brussels will be loved by all, even those who hate veggies.

Thanksgiving is almost here! When I think of Thanksgiving, I think of family gatherings and delicious food. I get excited about all the cooking and baking that I get to do for these gatherings. Weeks ahead, I read cooking magazines, and cookbooks, and search Pinterest for new recipe ideas. I just love finding new Thanksgiving recipes and food for my Thanksgiving meal. Pinterest always has the best Thanksgiving recipe ideas and cooking tips to make my Thanksgiving meal the best.

I always try to make healthy dishes when I cook as I want to show my family that healthy food tastes delicious. One of my favorite dishes to cook for gatherings is roasted vegetables. Most people do not eat enough veggies and I want to show people that veggies when made right taste delicious. My favorite veggie is brussels sprouts. Most people do not like brussels sprouts, but once they try this dish they love them. This is the only way I can get my husband to eat brussels sprouts.

Maple-Roasted Brussels Sprouts are:

~ Sweet
~ Healthy
~ Tender
~ Loaded with fiber
~ Full of nutrients
~ Delicious

I have discovered a wonderful way to cook brussels sprouts. Roasting veggies brings out a sweet flavor to the vegetables. Then the drizzle of maple syrup adds an additional sweetness which makes the vegetables irresistible. I cut them in half and roast them in the oven, which brings out a wonderful sweet flavor to them. Then I drizzle maple syrup over them and add roasted pumpkin seeds. My Maple-Roasted Brussels Sprouts are so yummy and irresistible, that even if you normally do not like these sprouts, you will love these. These irresistible sprouts are a holiday favorite but are too tasty to serve just once a year. So I make them year-round.

This recipe is easily halved for smaller gatherings or an everyday family meal. I will be adding these to my Thanksgiving menu.

I made a batch of these maple-roasted "little cabbages" the other day and ate them with dinner. The leftovers were awesome to snack on the next day. The maple syrup gives the sprouts just the right amount of sweetness that will make brussels sprout haters ask for more. The pumpkin seeds give them an extra touch of flavor. I made a batch without the pumpkin seeds and quickly found out the pumpkin seeds add a great taste to the brussels sprouts. You can use raw or roasted pumpkin seeds. I like using the green raw pumpkin seeds that are called pepitas. This recipe serves 6-8 people but is easy to cut in half for a small family.

The first step to making this wonderful dish is preparing the brussels sprouts. You will need to trim any wilted or yellow leaves off the sprouts. Then to make the sprouts bite-size, cut them in half. A cutting board helps get the job done quickly, along with a sharp knife. I like using a bamboo cutting board as it does not dull my knives. It is also durable and lightweight. I use this board for everything. The silicone edges on the board keep the board from moving around and it adds a great look to the cutting board. Most people are afraid of the care that goes into wood-cutting boards. Those fears are gone with this board as I just hand wash mine and hang it up to dry on my pot rack.

Maple-Roasted Brussels Sprouts With Pumpkin Seeds

2 pounds Brussels sprouts
2 tablespoons olive oil
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
2 tablespoons maple syrup
1/4 cup raw or roasted green pumpkin seeds

Preheat the oven to 400°F. Peel off any yellowed or wilted leaves from the outside of Brussels sprouts and trim the bottoms. Cut the Brussels sprouts in half. Combine brussels sprouts in a large bowl with oil, salt, and pepper. Toss until coated. Place the sprouts on a baking sheet and roast, stirring once or twice, until sprouts are almost browned and just tender when pierced at the base with a paring knife, about 25 minutes. Place the brussels sprouts in the serving dish and toss them with the maple syrup and pumpkin seeds.

Does Toothpaste Cause Canker Sores?

Could toothpaste be the cause of mouth sores?

My youngest son tends to get mouth sores, also known as canker sores, almost every week. He has a bottle of "magic mouthwash" that the doctor prescribed and I have taught him how to apply this medicine to his mouth sores. This " magic mouthwash" helps to numb the pain but does not heal the sores. While my son tolerates the taste of this medicine, he dislikes the way it feels in his mouth. I am trying to raise my family more naturally and that includes trying to heal the body with food or natural medicines. I want to be able to find the source of what is causing the mouth sores in my son. I recently attended a natural healthy conference and learned about raising my family with healthy natural products. I met with a lot of companies and gained a lot of new information about new products. I also left the conference with lots of samples of products. One of those products was EarthPaste. The natural toothpaste came in a cinnamon flavor and I could not wait to try it.

When I applied the natural toothpaste to my toothbrush, I quickly noticed that it was brown in color. So I picked up the tube and read it to find out what was in this toothpaste. I was surprised at what was in the toothpaste, but I was even more surprised at what was not in the toothpaste. This natural toothpaste contains only five ingredients- Water, Redmond Clay, Real Salt, essential oils, and xylitol. The Redmond clay was a turn off at first until I went to the website and read more about it. It what was not in the toothpaste that I loved the most. EarthPaste does not contain foaming agents, coloring, glycerin, and sodium laurel sulfate. Through my research, I learned that sodium laurel sulfate could cause mouth(canker sores) in some people. I  just had to try this toothpaste to see how it tasted as I wanted to help my son eliminate his canker sores. Was his regular kid toothpaste the cause of his mouth sores? Learn more about EarthPaste through this funny video. Also, check out the FAQ's.

I brushed with the EarthPaste toothpaste, expecting it to taste nasty. I was surprised at how awesome it tasted. It did not taste like clay but it had a nice cinnamon taste to it. My teeth felt nice too after I brushed. I just had to know what benefits the Redmond clay had. I found out that it is a natural polisher and cleanser that is also mineral-rich and alkaline. I like the mineral-rich part of it as I have weak teeth that could use some remineralization. I was so excited about this natural toothpaste that I wrote to the company. They sent me all of the flavors of EarthPaste, so my son and I could try them all to see which one we liked best. I was most excited that EarthPaste came in a lemon flavor for my son to try as I was afraid he would not like this toothpaste. My son loved the cinnamon flavor. Even my other son who is picky tried EarthPaste. I think watching the above video helped them get past the fact that the toothpaste is made with clay.

So did the switch to EarthPaste eliminate my son's mouth sores? I am happy to say that, after two weeks of use of EarthPaste, my son no longer has mouth sores. I wish I had known about how sodium lauryl sulfate causes canker sores a lot sooner. As for my use of EarthPaste and my weak teeth, I will not know until February as that is when I have a cleaning. For now, I will enjoy the way my teeth feel after each use of EarthPaste, fresh and clean.

Find out more about this natural toothpaste at

The company that makes EarthPaste also makes other wonderful products and they sent me some of them. I can't wait to try them out. I am thinking that the Real Salt will be awesome on my roasted veggies.

How To Make A Fat Free Iced Matcha Green Tea Latte

Think green tea but more powerful! Matcha green tea is delicious and loaded with health.

Iced green tea lattes are a popular item at the coffee shops. I have seen a lot of people ordering these yummy green drinks. Green tea has a reputation for being a healthy drink. Green tea lattes may be good for you, but the ones at the coffee shops are usually loaded with fat and sugar. I recently went to a website of my favorite coffee house to look at their drink menu. I was shocked to see that my favorite tall cold green tea drinks had 35-45 grams of sugar in them. That 35 grams of sugar is equal to about 9 teaspoons or 3 tablespoons of sugar. I am going to show you how to make a healthy version of the cold green tea latte and it tastes just as good as the ones you buy. Mine will also save you money. Once you see how easy it is to make a cold green tea latte at home, you will never pay big bucks for one at the coffee shop again. If you have dairy issues or follow a vegan diet, then make sure to use non-dairy milk like almond milk. This drink is also great for a gluten-free diet.

Matcha is made from the leaves of green tea.

Here is some info about Matcha Green Tea:

PROVIDES MILD STEADY ENERGY  – it acts both as a stimulant and a relaxant. This is ideal for focusing on whatever the day throws your way.

METABOLISM BOOSTER Consuming matcha green tea can increase thermogenesis (the body’s own rate of burning calories) from a normal 8%-10% of daily energy expenditure to between 35% and 43% of daily energy expenditure.

IMPROVES SKIN HEALTH – Scientists have discovered that Matcha Green Tea helps protect the skin from harmful UV rays while improving blood flow and oxygen levels lifting the overall quality of the skin.

HAS UP TO 137x THE ANTIOXIDANTS OF BREWED GREEN TEA – Antioxidants are essential as you age to boost your body’s natural defenses against oxidation. Researchers have found that a high level of dietary antioxidants can prevent many age-related diseases.

You can buy green tea matcha at local health food stores like Sprouts or online at Amazon

So what is a green tea latte anyway? A green tea latte is simply a drink that is made with milk and matcha green tea powder. Green tea powder or Matcha is made from the leaves of green tea. Now we all know green tea is good for us, but Matcha is even better for us as it has way more antioxidants than a cup of brewed green tea. Matcha is the powerhouse of green tea. It is said that one teaspoon of Matcha equals ten cups of brewed green tea. Matcha has other great benefits too. This green powder enhances your mood, aids in concentration, boosts metabolism, and burns calories. The awesome thing is it does not give you the jitters like coffee, so it is a great alternative. Some people even say that matcha calms the mind and relaxes the body. I love that green tea powder has insoluble fibers, antioxidants, and L-Theanines in it. That is a whole lot of benefits for a small dose of green powder as you only need one teaspoon. I love using matcha daily for the brain, energy, and all those healthy antioxidants. I think it may be the reason my skin looks younger.

I add a 1/2 teaspoon of Matcha to my daily smoothie

I love using matcha daily for brain energy and all those healthy antioxidants. I think it may be the reason my skin looks younger.

While I love drinking green cold green tea lattes, you can also make the cold latte a warm drink too. The green tea powder also tastes delicious as a cup of hot tea, just add the powder to a cup of warm water with some sugar for a great cup of tea. The Matcha is also great in smoothies and can be used in recipes like cookies, healthy donuts, or ice cream. I have even seen matcha in candy bars. There are so many delicious ways to use Matcha. Once you get past the green color, you will love all the benefits of  Matcha green tea powder. I love matcha for the way it helps me to concentrate in the morning so I can get my work done. It also gives me energy when I go on a power walk every morning. The antioxidants are a wonderful bonus for my body to stay healthy.

Yes, since Matcha is made from green tea leaves it does contain caffeine.

Is matcha green tea good for you?
Yes, matcha has many health benefits including boosting metabolism and being jam-packed with antioxidants.

Other tips and tricks on this iced green tea latte recipe
You can use any type of milk in this recipe including cow’s milk, almond milk, soy milk, coconut, etc.
This recipe can be made vegan by using non-dairy milk and either maple syrup or agave sweetener instead of honey.

                             Fat-Free Iced Green Tea Latte

1 cup skim milk or milk substitute like almond milk
1 teaspoon Organic Matcha Green Tea Powder ~ Buy on Amazon
2 teaspoons honey or another sweetener like stevia
                                             1 teaspoon vanilla extract
                                            4 ice cubes
Place all ingredients in a blender and process until smooth. Pour into a glass and enjoy with a straw. You can add more sugar if you want it sweeter. To make the drink even more delicious, you can top it with whip cream. The whipped cream does add some fat to this drink, but it is so worth it. I love using a dairy-free whipped topping on my drink.

PlasmaCar Is A Fun Kid Powered Ride On Toy That Even Grown Ups Can Enjoy

My boys are active boys and have a lot of energy. I just wish that I could put that energy to use in ways that benefit me, like powering the TV. Why hasn't someone come up with a TV that will only work as long as the viewer is moving? I may not be able to use my boy's energy to power my TV but I can use it to power their fun new toy. My boys received a ride on toy that needs no batteries, gears or pedals as it is kid powered. This fun ride on toy simply moves with the movement of my child's body. My boys can make this cool car go fast and even turn simply with their arms and body. This ride-on toy harnesses the natural forces of inertia, centrifugal force, friction, and kid power. OK, you kids may not understand those big works, that's OK. All they need to know is this car is super fun to ride.

The Original PlasmaCar is a fun ride-on toy that even us big kids can ride on as it supports up to 220 pounds. This ride-on is easy to operate too. I was the first to try out the PlasmCar and I was able to make this car go simply by turning the steering wheel in fast short movements. The seat design put me in a comfortable position and my legs fit just fine on the base. I was having so much fun that my boys were begging me to let them try the PlasmaCar. So we took the toy up to the park and had a whole lot of fun.

No helmet is necessary to ride the PlasmaCar. My son is just so used to wearing his helmet for his bike that he left it on. You can also ride the PlasmaCar inside as it works in small or large spaces. My boys love riding their car at the park and around the block.

My boys had a hard time sharing the PlasmaCar with each other as they did not want to stop riding it. I think Santa needs to bring another PlasmaCar for Christmas. This kid-powered car comes in many colors and can be found in many stores and online at Amazon. Just check the store locator button on their website. Watch the videos below to see the PlasmaCar in action.

Come back December 1st as I will be having a giveaway for a PlasmaCar!
