Cookies for breakfast don't sound like a healthy item to eat. Most cookies are loaded with sugar, fat, and processed ingredients. Usually, there are no nutritional ingredients in cookies so why would I be telling you to eat cookies for breakfast. Cookies for breakfast go against all the healthy rules.
Who says cookies can't be made with healthy ingredients. These breakfast cookies are made with nutritious healthy ingredients and are a great option for breakfast. Made with plant-based ingredients that are loaded with nutrition. So grab that cup of coffee and enjoy cookies for breakfast.
4-ingredient mocha coconut cookies are so easy to make
The best part about these delicious breakfast cookies is how simple they are to make. One bowl is all you need to mix up the 4 ingredients. You can save time by making the cookies the night before so they are ready for a grab-and-go nutritious breakfast. These cookies that are for breakfast are perfect for morning exercise recovery as they are loaded with high-quality clean vegan protein.
Each cookie has 3.5 grams of protein. So three cookies would be over 10 grams of protein!
I used my favorite allergy-friendly plant-based protein powder in this breakfast cookie recipe. Nuzest vegan protein is the best for baking as it makes a great substitute for flour in recipes. I found this recipe on the Nuzest website. While you could use a different protein powder, I don't recommend it as you will not get the same results. Your cookies may not be as moist or hold together if you use a different protein powder. I had a reader make my Healthy Chocolate Zucchini Protein Bread using a different protein powder and they said that the middle was too gooey. So make sure to purchase Nuzest protein powder. I just love the sweet taste of coffee that is in these breakfast cookies. The cookies also have a hint of coconut flavor. The coffee flavor comes from the Nuzest Coffee Coconut protein powder. This nutritious protein powder also has MCT oils in it. I love it when protein powder has additional superfoods in it. The Nuzest Coffee Coconut smells so good even before you mix it into water. When I was making these cookies, my son could smell the coconut from across the room.
If the coffee flavor is not your thing, just use a different Nuzest protein. Nuzest protein powder comes in 9 different flavors including Vanilla Matcha, Chai Turmeric + Maca, Rich Chocolate, and more. I am sure you will find a favorite flavor or two to use in these breakfast cookies or in a delicious protein shake. Nuzest protein powder is also great for after your workout to help your muscles recover. This gluten-free protein mixes up completely in water and tastes so delicious. I find that drinking a protein smoothie right after I exercise takes care of that hunger that I get from exercising. So I don't crazy eat after I work out.
Your body needs protein for strong muscles and more
When I turned 50, my body started to turn on me. My muscles started to sag, especially in the arms. So I added a daily Nuzest protein smoothie into my diet after I worked out, and I was amazed that my body started to firm up after a couple of months. Looking back at my before and after photos of my body transformation shows me that my body needed more protein. The first photo was from 2019 and the last was taken several months ago.

I have a son who loves bananas. This son is a college athlete in track and field, so eat eats 2 bananas a day for potassium. His coach encourages the banana thing. So when he comes home for breaks, I buy plenty of bananas for him. Sometimes the bananas ripen too quickly and rather than toss them, I freeze them in my freezer. I then use the frozen bananas in smoothies and recipes. Bananas are easy to freeze. Just peel them and place them on a baking sheet. After they are frozen, store the whole bananas in a freezer bag.
