 When life hands you a huge amount of tomatoes, one has to get creative. This past spring I planted a garden for the first time in 20 years. Living in the desert has always been my reason to not try planting a garden as the lack of rain and sandy soil makes growing things difficult. The only thing that seems to grow in my backyard is weeds. I do have some other plants but they are drought-resistant plants that require no water or care whatsoever.

The virus pandemic made me garden

 If someone had told me a year ago that I would start a garden, I would have laughed at them. I am the person who has killed a cactus. I really don't know what got a hold of me when I decided to grow tomatoes and other veggies. Maybe it was my way of coping with having to quarantine from the Covid lung virus or maybe it was seeing my friends on Facebook starting a garden. Maybe it was not being able to go to the grocery store to buy fresh vegetables. Maybe it was because I had time on my hands. Whatever the reason that motivated me to grow my own food, is a thing of the past, as I have caught the gardening bug and I am proud to say that I am growing veggies. My garden is producing kale, beets, spinach, and tomatoes. While I don't have a huge amount of produce, I have enough to enjoy some fresh veggies every day.

When life hands you lots of tomatoes



 When your garden produces a huge amount of tomatoes and you need recipes for unique ways to cook tomatoes. Then you need to check out this recipe for oven-roasted sun-dried tomatoes. While I was busy drying the tomatoes in the oven, I decided to cook some of the tomato slices in the air fryer. I really was not sure if the air fryer could sun-dry the tomatoes like the oven as I was looking for a faster way to roast my tomatoes. I gave the air fryer a chance at cooking my fresh tomatoes and I am glad that I did. The end result of cooking tomatoes in the air fryer was a tomato that was packed with flavor. The tomatoes ended up being incredibly succulent and delicious. They were so sweet and juicy.

 Air fryer roasted tomatoes are delicious all on their own but they are also perfect for so many dishes that you would add tomatoes to. These succulent roasted tomatoes would be perfect on a salad or a pasta dish. They would make an amazing tomato bruschetta appetizer. The heat from the air fryer causes the Roma tomatoes to wilt just a little bit and become extremely juicy. They end up looking amazing and you could only imagine the way they taste. To make these delicious morsels of tomatoes you just need a couple ingredients and an air fryer. You will need 6-12 Roma tomatoes, olive oil, salt, and fresh rosemary. If you don't have a rosemary bush in your backyard, you can use dried rosemary.

Can I use other varieties of tomatoes?

 I have not tried other varieties of tomatoes in the air fryer but if you grew other kinds of tomatoes like beefsteak, Early Girl, etc, I think they would cook just fine in the air fryer. I would not recommend cherry tomatoes as they are too small. If you choose to cook a different type of tomato, slice the tomato in half and keep the skin on. Place the tomato in the air fryer basket skin side down. You may have to adjust the time so check the tomatoes halfway so they don't burn. You may also have to cook bigger tomatoes longer.

 Tomatoes are not only delicious but they are also healthy. How to air fry tomatoes


Before you start cooking, make sure to wash all of the tomatoes and pat them dry.

Cut each of the tomatoes in half and put them in a bowl.

Drizzle in the olive oil and add the rosemary, and salt to the tomatoes. Toss everything really well to coat evenly. I have made these roasted tomatoes without using oil and they turned out fine but were more chared. They also lacked flavor. So I recommend using the oil if you want amazing flavor.

Transfer the tomato slices to the bottom of the air fryer basket, skin side down. It is ok if the tomato halves touch each other. Cook them in the air fryer at 390 degrees for 20-25 minutes. The tomatoes are roasted when they are wilted with a small amount of blackness. The black part is the sugar of the tomatoes caramelizing.

Carefully remove the roasted tomatoes from the air fryer and enjoy.

Cooking Tips



~ If you’re worried about making a mess in the air fryer or want minimal cleanup, you can lay a piece of parchment paper at the bottom of the air fryer but that is not necessary and cleanup is a breeze. The tomatoes will not stick to the pan.

Roasted Tomatoes Made In The Air Fryer

The best way to cook tomatoes. These air fryer roasted tomatoes are incredibly sweet and full of flavor.
