When life hands you a huge amount of tomatoes, one has to get creative. This past spring I planted a garden for the first time in 20 years. Living in the desert has always been my reason to not try planting a garden as the lack of rain and sandy soil makes growing things difficult. The only thing that seems to grow in my backyard is weeds. I do have some other plants but they are drought-resistant plants that require no water or care whatsoever.
The virus pandemic made me garden
If someone had told me a year ago that I would start a garden, I would have laughed at them. I am the person who has killed a cactus. I really don't know what got a hold of me when I decided to grow tomatoes and other veggies. Maybe it was my way of coping with having to quarantine from the Covid lung virus or maybe it was seeing my friends on Facebook starting a garden. Maybe it was not being able to go to the grocery store to buy fresh vegetables. Maybe it was because I had time on my hands. Whatever the reason that motivated me to grow my own food, is the thing of the past as I have caught the gardening bug and I am proud to say that I am growing veggies. My garden is producing kale, beets, spinach, and tomatoes. While I don't have a huge amount of produce, I have enough to enjoy some fresh veggies every day.

When you have too many tomatoes
When your garden produces a huge amount of tomatoes and you need recipes for unique ways to cook tomatoes. Then you need to check out this recipe for oven-roasted sun-dried tomatoes. I have not tried other varieties of tomatoes in the air fryer but if you grew other kinds of tomatoes like beefsteak, Early Girl, etc, I think they would cook just fine in the air fryer. I would not recommend cherry tomatoes as they are too small. If you choose to cook a different type of tomato, slice the tomato in half and keep the skin on. Place the tomato in the air fryer basket skin side down. You may have to adjust the time so check the tomatoes halfway so they don't burn. You may also have to cook bigger tomatoes longer.

Drizzle in the olive oil and add the rosemary, and salt to the tomatoes. Toss everything really well to coat evenly. I have made these roasted tomatoes without using oil and they turned out fine but were more chared. They also lacked flavor. So I recommend using the oil if you want amazing flavor.
Transfer the tomato slices to the bottom of the air fryer basket, skin side down. It is ok if the tomato halves touch each other. Cook them in the air fryer at 390 degrees for 20-25 minutes. The tomatoes are roasted when they are wilted with a small amount of blackness. The black part is the sugar of the tomatoes carmelizing.
Carefully remove the roasted tomatoes from the air fryer and enjoy.
Cooking Tips
If you’re worried about making a mess in the air fryer or want minimal cleanup, you can lay a piece of parchment paper at the bottom of the air fryer but that is not necessary and cleanup is a breeze. The tomatoes will not stick to the pan.
You can substitute other spices for the rosemary like Italian seasoning or Thyme. You can even add some garlic to the tomatoes.
The extra roasted tomatoes can be stored in the fridge for a week.
