 When life hands you a huge amount of tomatoes, one has to get creative. This past spring I planted a garden for the first time in 20 years. Living in the desert has always been my reason to not try planting a garden as the lack of rain and sandy soil makes growing things difficult. The only thing that seems to grow in my backyard is weeds. I do have some other plants but they are drought-resistant plants that require no water or care whatsoever.

The virus pandemic made me garden

 If someone had told me a year ago that I would start a garden, I would have laughed at them. I am the person who has killed a cactus. I really don't know what got a hold of me when I decided to grow tomatoes and other veggies. Maybe it was my way of coping with having to quarantine from the Covid lung virus or maybe it was seeing my friends on Facebook starting a garden. Maybe it was not being able to go to the grocery store to buy fresh vegetables. Maybe it was because I had time on my hands. Whatever the reason that motivated me to grow my own food, is a thing of the past, as I have caught the gardening bug and I am proud to say that I am growing veggies. My garden is producing kale, beets, spinach, and tomatoes. While I don't have a huge amount of produce, I have enough to enjoy some fresh veggies every day.

When life hands you lots of tomatoes



 When your garden produces a huge amount of tomatoes and you need recipes for unique ways to cook tomatoes. Then you need to check out this recipe for oven-roasted sun-dried tomatoes. Oven-roasted tomatoes are so sweet and they are the best way to preserve garden-fresh tomatoes.  My tomato plants only gave me about 10 tomatoes so my dream of filling my freezer with dried tomatoes for recipes did not happen. God had other plans and I am glad that His plans were my husband's surprise of 20 pounds of fresh Roma tomatoes that were leftover from the church food pantry.


While I was busy drying the tomatoes in the oven, I decided to cook some of the tomato slices in the air fryer. I really was not sure if the air fryer could sun-dry the tomatoes like the oven as I was looking for a faster way to roast my tomatoes. I gave the air fryer a chance at cooking my fresh tomatoes and I am glad that I did. The end result of cooking tomatoes in the air fryer was a tomato that was packed with flavor. The tomatoes ended up being incredibly succulent and delicious. They were so sweet and juicy.

To make these delicious morsels of tomatoes you just need a couple ingredients and an air fryer. You will need 6-12 Roma tomatoes, olive oil, salt, and fresh rosemary. If you don't have a rosemary bush in your backyard, you can use dried rosemary.

Can I use other varieties of tomatoes?

 I have not tried other varieties of tomatoes in the air fryer but if you grew other kinds of tomatoes like beefsteak, Early Girl, etc, I think they would cook just fine in the air fryer. I would not recommend cherry tomatoes as they are too small. If you choose to cook a different type of tomato, slice the tomato in half and keep the skin on. Place the tomato in the air fryer basket skin side down. You may have to adjust the time so check the tomatoes halfway so they don't burn. You may also have to cook bigger tomatoes longer.

Tomatoes are healthy

 Tomatoes are not only delicious but they are also healthy. These red gems have the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. How to air fry tomatoes


Before you start cooking, make sure to wash all of the tomatoes and pat them dry.

Cut each of the tomatoes in half and put them in a bowl.

Drizzle in the olive oil and add the rosemary, and salt to the tomatoes. Toss everything really well to coat evenly. I have made these roasted tomatoes without using oil and they turned out fine but were more chared. They also lacked flavor. So I recommend using the oil if you want amazing flavor.

Transfer the tomato slices to the bottom of the air fryer basket, skin side down. It is ok if the tomato halves touch each other. Cook them in the air fryer at 390 degrees for 20-25 minutes. The tomatoes are roasted when they are wilted with a small amount of blackness. The black part is the sugar of the tomatoes caramelizing.

Carefully remove the roasted tomatoes from the air fryer and enjoy.

Cooking Tips



~ If you’re worried about making a mess in the air fryer or want minimal cleanup, you can lay a piece of parchment paper at the bottom of the air fryer but that is not necessary and cleanup is a breeze. The tomatoes will not stick to the pan.




~ You can substitute other spices for the rosemary like Italian seasoning or Thyme. You can even add some garlic to the tomatoes.

~ The extra roasted tomatoes can be stored in the fridge for a week.

Rosemary and Caramelized Onion Sun Dried Tomato Focaccia

Focaccia is a flat oven-baked Italian bread product similar in style and texture to pizza dough.

               I received a sample from Secolari to facilitate this post

 The other day my church had a celebration that included a cookout with burgers. I helped with the preparation of the food and that included slicing onions and tomatoes. While I was slicing the tomatoes for the burgers, I placed the top slices of the tomatoes aside so I could take them home. The top slices had the stems in them so they were not going to be used for the burgers and I hated throwing them away as I knew that I could use them in my cooking. When the church event was over there was also leftovers of onion slices and tomato slices, so I took those home with me. One of the perks of helping in the church kitchen is being offered the leftovers.





I thought of sun-dried tomatoes
  On the drive home from church, I decided to make sun-dried tomatoes with all the leftover tomato slices. This is my go-to recipe when I have an abundance of tomatoes as it is a great way to preserve them. I have a wonderful recipe for making sun-dried tomatoes in the oven that is so simple. I love tomatoes that are roasted in the oven as they are so flavorful and sweet. My favorite way to use oven-roasted tomatoes is on focaccia. I love using rosemary on my focaccia as it gives it a great flavor but my family is not too fond of the wood-like texture that rosemary has and the fact that the pieces tend to get stuck in your teeth. So I decided to use a Fused Rosemary Flavored Olive Oil. My favorite olive oil is made from fresh-picked rosemary leaves and has the full flavor of rosemary without the woodsy pieces. That way I get the taste of rosemary on my focaccia without upsetting my family. When my youngest saw this bottle of olive oil, he asked me if we could use it to make my Lemon Frosted Rosemary Holiday Sugar Cookies. That boy loves cookies and already is thinking of Christmas cookies. I told my son that since this olive oil has a light smooth flavor, it might be great for cookies.

Caramelized onions
 Since I had an abundance of onions, I decide to make a batch of caramelized onions. Caramelized onions are also great to use in my recipes like pizza and focaccia. When onions are caramelized they last longer in the fridge so I would have plenty of time to use them in many recipes. I knew that my Secolari Rosemary Oil would be useful for sauteing all the onions and would give a unique flavor to my caramelized onions. Secolari makes so many gourmet Artisan oils that I know will add some intense flavor to my cooking. To me, quality olive oil is like a fine bottle of wine. Good olive oil equals the best flavor. So I don't skimp on that bottle of olive oil. You will love that this recipe is vegan and plant-based. 


Focaccia is like a pizza
 Focaccia is so similar to a pizza and is the perfect canvas to so many pizza toppings. So I decided that my homemade focaccia bread needed some olives. My favorite olives are black olives and green ripe California olives. I always have a can or two of these delicious olives in my pantry for snacking or for recipes. I knew that that the jumbo ripe black olives would add some additional flavor to my chewy focaccia. So I sliced the black olives in half. You can slice the olives anyway you like for this recipe but I thought that halved olives would give this homemade bread a cool look. Fused vs infused olive oil
An infused oil is when the flavor or extracts are added after the oil is pressed which causes the oil to breakdown faster. When olives and fresh-picked rosemary are fused, cold-pressed, together at the same time, the result is a better quality flavorful olive oil.


Kneading dough is so relaxing
 I love kneading dough and find it to be so relaxing. It takes away any stress if I have any, but I really just enjoy the way it feels in my hands. I love making homemade bread and pizza when the weather cools down as the oven heats up the house. The smell of fresh-baked bread is a pleasing aroma that I also love. Have you ever walked past a bakery when they are making bread? It is one of the best smells in the world. The smell of bread baking in the oven is so intoxicating! Fall is the perfect time to make my homemade pretzel bread or honey whole wheat bread for sandwiches. 



 Once the dough rises, press it to fit a 13×9 inch lightly oiled baking pan.  Dimple the dough all over with your fingers and drizzle with the fuse Rosemary Olive Oil. Add the topping and press them gently into the dough. I love the art of making bread. To bring out the taste of the garden-fresh ingredients, sprinkle the focaccia lightly with some sea salt.


Bake until golden brown then transfer to a rack to cool

Rosemary and Caramelized Onion Sun-Dried Tomato Focaccia

Focaccia is a flat oven-baked Italian bread product similar in style and texture to pizza dough.

ingredients:

  • 1 Package Dry Yeast
  • 1 Cup Warm Water, 110°F – 115°F
  • 1 Teaspoon Honey
  • 2 1/2 Cups All-Purpose Flour
  • 1Teaspoon Salt
  • 1/4 Cup Olive Oil, I love using Rosemary Olive Oil
  • 1 Large Onion, thinly sliced and chopped into small pieces
  • 1 Tablespoon Olive Oil, for cooking the caramelized onions
  • 1/2 Cup Sundried Tomatoes
  • 1 Cup Black Olives,  pitted and sliced into half or quarters
  • 1/4 Cup Olive Oil divided in half for drizzling over the dough

instructions:

How to cook Rosemary and Caramelized Onion Sun-Dried Tomato Focaccia

  1. In a large mixing bowl, combine the water and honey. Sprinkle the yeast on top and allow it to stand for about 5-10 minutes or until foamy.
  2. When the yeast is ready, stir in the flour, 1/4 cup olive oil, and salt. Turn the dough onto a well-floured surface and knead until dough is smooth 5 to 10 minutes. Place dough in a lightly oiled bowl, cover with a clean kitchen towel or plastic wrap, and let rest in a warm place until dough doubles in size, about 1 hour
  3. While the dough is rising, heat 1 tablespoon olive oil in a large skillet set over medium heat. Add the onion slices and cook until onion is golden brown, stirring frequently about 20 minutes.
  4. After the dough has doubled in size, remove dough from bowl and press it into a lightly oiled 9- by 13-inch baking sheet until it touches the edges. Using your finger, poke holes all over the dough. Drizzle the dough with 2 tablespoons olive oil. Let rest until the dough becomes puffy, about 20 minutes.
  5. Once the dough has rested, preheat oven to 450 degrees F. Lightly press the sundried tomato slices and olive slices into the dough. Sprinkle or press the caramelized onions into the dough. Drizzle 2 tablespoons olive oil over the toppings and bake for 20 minutes or until golden.
  6. Transfer to a wire rack to cool.
  7. Cut into pieces and serve.

Oven-Dried Roasted Sun Dried Tomatoes

   Got an abundance of tomatoes from your garden? Check out this delicious way to preserve fresh tomatoes. These sweet & flavorful tomatoes can be stored in your freezer for future recipes.


  I usually make oven-dried roasted tomatoes in the summer when friends give me an abundance of tomatoes from their gardens. Roasting the tomatoes in the oven are very similar to sun-dried tomatoes. I like to make oven-roasted tomatoes year-round as they can be used in so many dishes. I usually make roasted tomatoes with cherry or grape tomatoes but any size tomato will work. Oven-roasted tomatoes taste so sweet and I eat them like candy.

 You can make oven-roasted sun-dried tomatoes with any size tomatoes. Plum tomatoes are the best for roasting in the oven as you just have to slice them in half. If you are using round garden tomatoes like Beefsteak tomatoes, slice the tomato in thick slices as thin slices tend to burn. The thick tomato slices make for a nice chewy sun-dried tomato. You can even use cherry tomatoes, just slice them in half.

These tomatoes were the perfect size for roasting


 Making sweet roasted tomatoes is so easy. You just slice the tomatoes into slices and then place them on a baking sheet that is covered with a silicone sheet or parchment paper. For additional flavor, you can drizzle olive oil on the tomato slices and sprinkle them with salt. You can even sprinkle some herbs like rosemary over the sliced tomatoes. The tomatoes will cook just fine with nothing on them.


A weekend day of cooking
 You can't rush the slow roasting that the oven-dried tomatoes require. The cooking time will be 4-6 hours. So plan on making these delicious red sweet tomatoes on a day that you are going to be home for several hours. After 4 hours of cooking time, you will need to check on the slices of tomatoes every 30 minutes to see if they are becoming dry. You can oven-roast them to a chewy texture that leaves the tomatoes flexible or you can keep the tomato slices a bit moist. It all depends on how you like them to taste. When the tomatoes are done roasting in the oven, make sure to store the tomato pieces in the fridge or in the freezer for longer storage.

  My favorite way to eat tomatoes that were roasted in the oven is on a cracker with dairy-free cream cheese. I also love using roasted tomatoes on pizza and Rosemary and Caramelized onion Focaccia. Oven-roasted tomatoes can be stored for a week in the fridge. If you don't eat them all then you can place them in a freezer bag and store in the freezer. When your garden explodes with tomatoes, just slice them up and make oven-dried roasted sun-dried tomatoes. I don't have a garden so I love making sun-dried tomatoes when tomatoes go on sale at the store. They are so easy to make.


Uses for oven-roasted tomatoes

Oven-Dried Roasted Tomatoes
  oven 250 F degrees
cook time 4- 6 hours

Ingredients
   Tomatoes, any kind will work but I love using cherry or plum tomatoes

 All you do is wash the tomatoes and trim off the tops. For plum tomatoes, you just cut in them half. For bigger tomatoes slice in 1/4 inch or bigger slices. Place them on parchment paper or silicone baking sheets. Sprinkle with salt. Bake them until they are dried but still flexible. The texture is similar to a moist raisin or prune. I recommend trying a couple as they bake to see what texture and taste that you prefer. If you will be using them within 1-2 weeks then they can be on the moist side. If you are freezing them to use later, make them more dried like a raisin. The smaller ones will dry quicker so check them after 4 hours. Cool on plates. 

 The roasted tomatoes are wonderful on pizza or in pasta dishes. I love to eat the dried tomatoes on crackers with cream cheese. Store them in the fridge if you will be enjoying them within 2 weeks or freeze them for longer storage. To freeze them, lay the tomatoes on a baking sheet. Then freeze for several hours in the freezer. Once the tomatoes are frozen, place them into a freezer bag. These delicious sun-dried tomatoes will last for several months in the freezer. To enjoy the tomatoes, just thaw them from the freezer or toss the tomato slices into recipes. 

When I make homemade pizza, I place the frozen tomatoes from the freezer directly on the pizza dough, no need to thaw them.
