Tuna Avocado Rice Bowl With Mango

 If you love sushi, you are going to love this tuna avocado rice bowl with mango. This recipe is perfect for making sushi at home without all the difficult sushi rolling. This bowl has all the flavor of sushi but is so much easier to make.


 My favorite restaurant meals are sushi and poki bowls. Now that I am trying to save money, I am not eating out as much. So I have had to learn how to be creative in the kitchen with the ingredients that I have at home. I quickly learned how difficult it was to make sushi rolls and that I did not have fresh tuna in my fridge.

My Recipe Inspiration Came From A Tuna Sushi Stack Recipe 

 It all started with a can of delicious tuna from Safe Catch. I was browsing through recipes on the Safe Catch website and came across a recipe that was similar to the viral tuna sushi tower. The photo of the tuna tower looked so amazing.

 I wanted to make this recipe for lunch but quickly realized that I did not have sushi rice or the tools needed to make the tower. All I had was a can of Safe Catch Elite Wild Tuna, white rice, an avocado, a cucumber, frozen mango slices, and spicy mayo, along with a craving for sushi. 

So I used my creativity and whipped up the next best thing to a sushi tower. I made a delicious Tuna Avocado Rice Bowl With Mango. This sushi bowl was so easy to make and tasted better than a poke bowl.

The Best Substitute For Sushi Rice

Most people don't have sushi rice in their pantry, but they most likely have white rice. Sushi rice is also more expensive than white rice. You can easily turn white rice into sushi rice with rice vinegar and sugar. 

To make sushi rice with white rice, simply add 1/4 cup of rice vinegar mixed with 1 tablespoon of sugar and 1 teaspoon of salt to a batch of white rice while it is still hot. This will give the rice a sticky texture with a sweet taste.

Steps to making the Tuna Rice Bowl

  1. Scoop rice in a bowl

  2. Add diced cucumber, diced avocado, and diced mango

  3. Sprinkle seaweed 

  4. Top with tuna

  5. Drizzle spicy mayo
