Eliminating Wheat From Your Diet

Since having to eliminate wheat from my diet 6 months ago, due to a wheat allergy, I have been busy in the kitchen baking up gluten-free recipes. Gluten-free recipes do not contain wheat so they are safe for me to eat. You may be asking how is a wheat allergy different from a gluten-free sensitivity? Read this article Wheat Allergy Vs Gluten Sensitivity, Knowing The Difference, as it explains it in detail.

When one has a gluten issue, their body can not digest gluten and their symptoms involve the gut. When one is allergic to wheat, their symptoms are similar to other food allergies. They can also involve gut issues, hives, breathing problems, and even anaphylaxis. My reaction to eating foods that contain wheat is a severe asthma attack.

I also have a dairy allergy, so my healthy recipes are always dairy-free. I discovered my dairy allergy five years ago, so that is the reason that I have non-dairy recipes on my website.

Gluten-Free Cookies that are made with Peanut Flour

These delicious cookies are made with a unique gluten-free flour blend that is made from peanuts. The peanut flour blend is loaded with protein so it is perfect for healthy recipes. The wheat-free flour has a light peanut taste and mixes easier into recipes than regular peanut butter. The flour is made by the company that makes the original natural PBfit peanut butter powder and contains 4 simple ingredients ~ Peanut Flour, Buckwheat Flour, Oat Fiber, and Xantham Gum. You have to try this delicious peanut flour blend in your gluten-free baking recipes.

Storage Tips For The Cookies

Once the cookies have cooled, store them in an airtight container for a week. For longer storage, store them in the fridge for up to 2 weeks or freeze them for 3 months.

Make them with vegan dark chocolate chips

You can swap out the vegan vanilla chips for vegan dark chocolate chips. To give the cookies the best flavor, make sure to use pure vanilla extract. My favorite vanilla extract is made by Native Vanilla. This vanilla brings a tantalizingly delicious flavor and aroma to these cookies.

Dairy Free Gluten Free Protein Cookie Dough Cookies

Create your own healthy protein cookies with this easy-to-follow recipe. This cookie recipe is dairy-free and gluten-free. The best part is it is a customizable cookie dough recipe with so many options for flavors.

Protein powder can be a good way to get the needed protein into your diet. With the high prices of eggs and meat, protein powder can be an affordable option for any type of diet. The problem with protein powder that is made into protein drinks is it can be an unsatisfying option for a meal.

Protein drinks lack the excitement of eating, especially when we want to chew out food. While a protein drink may give you protein it can be downright boring. So skip the protein shake for a meal and instead reach for a delicious healthy protein cookie.

One Recipe ~ Many Options of Flavors

Wait! You are telling me I can eat a cookie for a healthy snack or meal? That is correct cookies can be made healthy with the addition of protein powder and swapping out ingredients for healthy ingredients.  This healthy dairy-free gluten-free protein cookie recipe is made with healthy ingredients like plant-based protein powder, natural sweeteners, almond meals, and the goodness of oatmeal.

You won't find any wheat flour in this recipe or unhealthy sugar in this cookie dough recipe. What you will find is a cookie that contains 8 or more grams of protein per serving, depending type of mix-in ingredients added to the cookie batter. You will also find a cookie that is bursting with plenty of flavors that will satisfy your hunger. The best part is you can stop buying protein cookies at the store and save money!

This dairy-free cookie dough recipe is also made with gluten-free ingredients and is customizable with many different flavor options. The healthy cookie recipe starts with one cookie dough base that can be made into chocolate or vanilla cookie dough depending on which flavor of protein powder you add.

Chocolate or Vanilla Cookie Batter

Before you start making the basic cookie dough batter, you need to decide if you want chocolate or vanilla cookie batter. I know that is a hard choice to make as they both sound delicious. Can't decide? Then grab two bowls and make both chocolate and vanilla cookie batter.

The different cookie flavors are made by using either vanilla or chocolate protein powder. Make sure to grab a plant-based protein powder that is made with simple clean ingredients like Nuzest. Using a protein powder that contains gums and fillers will not give good results with baking. I have discovered that Nuzest Clean Lean Protein powder works best in all my baked recipes. Nuzest protein makes the best gluten-free recipes!

Nuzest is made with 3 - 4 simple ingredients

~ Nuzest Rich Chocolate: Pea protein isolate, Cocoa powder (organic), Natural flavors, Thaumatin

~ Nuzest Creamy Vanilla: Pea protein isolate, Natural flavors, Thaumatin

Nuzest protein powder is

+ Many delicious flavors like wild strawberry and coffee coconut

Sugar or natural sugar substitute

This recipe uses a natural sugar substitute to make the cookies healthier. My choice of natural sweetener is a monk fruit-based sweetener. I like baking with monk fruit as it has no bad aftertaste. If you have a favorite sweetener, feel free to use it in this cookie recipe. If sugar is not an issue for you you can use regular sugar.

So Many Mix-Ins Flavors

Once you made the cookie dough base, now the fun part happens. It is time to select your cookie dough mix-ins. The mix-ins give the cookie batter unique flavors. Choose your mix-in ingredients wisely and select stir-in ingredients that contain healthy carbs and proteins. Once you decide your additional ingredients to mix into the cookie batter, figure about 1- 2 cups total for each batch of cookies. Nuts make delicious mix-ins as well as seeds, and dried fruits. Looking for more sweetness, then use vegan chocolate chips. I like my flavor combination to be sweet, salty, and crunchy.

Ingredients Needed ~ Click on red words for easy shopping

~ Almond Flour ~ Check out this amazing deal on 3 lbs of almond flour!

~ Oat Flour

~ Nuzest Protein

~ Almond Butter

~ Eggs

~ Natural Sweetener

~ Dairy-Free Butter

Choose Your Mix-ins

~ Vegan Chocolate Chips or Vegan White Chocolate Chips

~ Chopped Nuts ~ peanuts, almonds, cashews pecans

~ Seeds ~ sunflower seeds, sesame seeds

~ Pretzels

~ Dried Fruits ~ raisins, cranberries, cherries

~ Dried Coconut

Fold in The Mix-ins

Once you have selected your perfect flavor combination of mix-ins, then fold or stir them into the batter. If your cookie batter is too dry after adding the mix in selections, then add some water (one tablespoon at a time) until the batter resembles cookie dough texture. If your batter is too gooey, then add some more oat flour to get the right texture.

Scooping The Cookie Batter onto Cookie Sheets

Grab your cookie sheets and line them with parchment paper. I love lining my cookie sheets with parchment paper as it not only makes clean-up so easy but it keeps the cookies from burning. The cookies just slide off the cookie sheets. Amazon has great deals on parchment paper and I love this 200-sheet pack of parchment paper for $15

Scoop about 3 tablespoons of cookie batter onto the cookie sheets, spacing them 2 inches apart. Then press the tops of the cookie dough down to flatten them. To make the cookies even more delicious, top them with some of your favorite mix-in ingredients. If you like the salty-sweet flavor, sprinkle a tiny bit of coarse sea salt on top. Sea salt is amazing with chocolate ~ think salted chocolate!

Bake and Enjoy!

Place the cookies in a preheated oven at 350 degrees and bake for 10 - 13 minutes or until they are set. Make sure to rotate the cookie pans halfway through the baking time.

Cookie Storage Tips

These cookies are best stored in an airtight container for up to 3 days. If you can't eat the cookies that quickly, you can freeze the uncooked cookie dough mounds to bake when you are craving cookies. To store the cookie dough in the freezer, just prepare the cookies as you were baking them but instead place the cookie sheet in the freezer for a couple of hours. Once the cookies are frozen, transfer them to a freezer bag and store them in the freezer. When the cookie craving hits, place the frozen cookies on a parchment-lined cookie sheet and bake them at 350* for 12 - 16 minutes.

4-Ingredient Gluten Free Chocolate Chip Breakfast Cookies

These gluten-free cookies are perfect for breakfast and snacking. They are high in protein and made with plant-based ingredients. The perfect grab-and-go breakfast.

Cookies for breakfast don't sound like a healthy item to eat. Most cookies are loaded with sugar, fat, and processed ingredients. Usually, there are no nutritional ingredients in cookies, so why would I be telling you to eat cookies for breakfast? Cookies for breakfast go against all the healthy rules.

Who says cookies can't be made with healthy ingredients? These breakfast cookies are made with nutritious, healthy ingredients and are a great option for breakfast. Made with plant-based ingredients that are loaded with nutrition. So grab that cup of coffee and enjoy cookies for breakfast.

4-ingredient mocha coconut cookies are so easy to make

The best part about these delicious breakfast cookies is how simple they are to make. One bowl is all you need to mix up the 4 ingredients. You can save time by making the cookies the night before so they are ready for a grab-and-go nutritious breakfast. These cookies that are for breakfast are perfect for morning exercise recovery as they are loaded with high-quality, clean vegan protein.

Each cookie has 3.5 grams of protein. So three cookies would be over 10 grams of protein!

I used my favorite allergy-friendly plant-based protein powder in this breakfast cookie recipe. Nuzest vegan protein is the best for baking as it makes a great substitute for flour in recipes. I  found this recipe on the Nuzest website. While you could use a different protein powder, I don't recommend it, as you will not get the same results. Your cookies may not be as moist or hold together if you use a different protein powder.

I had a reader make my Healthy Chocolate Zucchini Protein Bread using a different protein powder, and they said that the middle was too gooey. So, make sure to purchase Nuzest protein powder. You can save 15% with my code MOMKNOWSBEST15. I love using Nuzest to make healthy recipes with protein powder.

My favorite way to enjoy these Mocha Coconut Breakfast Cookies is with a cup of coffee. I just love the sweet taste of coffee that is in these breakfast cookies. The cookies also have a hint of coconut flavor. The coffee flavor comes from the Nuzest Coffee Coconut protein powder. This nutritious protein powder also has MCT oils in it. I love it when protein powder has additional superfoods in it. The Nuzest Coffee Coconut smells so good, even before you mix it into water. When I was making these cookies, my son could smell the coconut from across the room.

If the coffee flavor is not your thing, just use a different Nuzest protein. Nuzest protein powder comes in 9 different flavors, including Vanilla Matcha, Chai Turmeric + Maca, Rich Chocolate, and more. I am sure you will find a favorite flavor or two to use in these breakfast cookies or in a delicious protein shake. Nuzest protein powder is also great for after your workout to help your muscles recover. This gluten-free protein mixes up completely in water and tastes so delicious. I find that drinking a protein smoothie right after I exercise takes care of the hunger that I get from exercising. So I don't eat crazy after I work out.

Your body needs protein for strong muscles and more

When I turned 50, my body started to turn on me. My muscles started to sag, especially in the arms. So I added a daily Nuzest protein smoothie into my diet after I worked out, and I was amazed that my body started to firm up after a couple of months. Looking back at my before and after photos of my body transformation shows me that my body needed more protein. The first photo was from 2019, and the last was taken several months ago.

I was already exercising when I turned 50, and I added the extra protein to my diet after a muscle injury. So I was amazed that my body just needed extra protein. My flabby muscles started to tone up. Later, I did start including weights in my workouts to build my muscles. They say that a beautiful body starts in the kitchen. Adding Nuzest protein to your recipes is a great way to add protein to your diet. Here are some other healthy recipes that use Nuzest protein.

Tip: Freeze bananas that are overripe in your freezer for recipes

I have a son who loves bananas. This son is a college athlete in track and field, so eat eats 2 bananas a day for potassium. His coach encourages the banana thing. So when he comes home for breaks, I buy plenty of bananas for him. Sometimes the bananas ripen too quickly and rather than toss them, I freeze them in my freezer. I then use the frozen bananas in smoothies and recipes. Bananas are easy to freeze. Just peel them and place them on a baking sheet. After they are frozen, store the whole bananas in a freezer bag.

Lakanto Fall into Baking Party & Chocolate Chip Cookies

I love introducing healthy products to my friends and one of the best ways to do just that is with a delicious recipe. I received some products from Lakanto to share with friends. Lakanto makes monk fruit sweetener and other delicious products that contain monk fruit. Lakanto sent me several bags of their delicious zero-calorie sweetener, along with some other goodies to share with my friends.

If you are not familiar with monk fruit and Lakanto, it is my favorite zero-calorie sweetener to bake with. I can substitute this keto-approved sugar substitute in my baking recipes like cookies and my family can't taste a difference. Trust me I have tried other natural sweeteners like stevia in my baking and my family complains about the taste. While I love stevia for my coffee, I don't like it for baking.

You may wonder why I use monk fruit instead of sugar, it is so I can make my treats healthier for my family. Lakanto Classic Monkfruit Sweetener is a zero-calorie, zero-glycemic sweetener that is made from a proprietary mixture of high-quality monk fruit extract and non-GMO erythritol. This sweetener is a convenient, one-to-one sugar substitute that tastes like sugar and has no bad aftertaste. I Lakanto Monkfruit Sweeteners in my baked goods so my family can enjoy cookies without all that sugar.

I let them taste the cookies

A recipe for chocolate chip cookies was included with my goodie box. The recipe used the Lakanto Classic and Lakanto Golden monk fruit sweeteners instead of cane sugar. So I made the cookies and brought them to my Friday bible study group. I placed the plate of the chocolate chip cookies with the other food that people had brought to share. Usually, there are about 10 people at our meeting, so there is always a good variety of food to eat. Everyone filled their plates with the food and I was happy to see that everyone grabbed a couple chocolate chip cookies.

While I had brought the bags of Lakanto sweetener to share with everyone, I hid them so no one saw them. I wanted everyone to taste the cookies first to see how they liked them. Everyone enjoyed their cookies and several people went back for more cookies. We then had our usual Bible study and fellowship. Then I passed out the bags of the Lakanto Classic sweetener. One person was familiar with monk fruit while the others had never heard about this sweetener.

They were surprised that the cookies were made without sugar

I then revealed to my friends that the chocolate chip cookies were made without sugar and instead made with the Lakanto sweetener. They were surprised and said the cookies were delicious. I gave everyone a copy of the chocolate chip cookie recipe that is found on the Lakanto website. One of my friends said he was going to make the cookies later this week.

Delicious Suntella chocolate spread

Lakanto also sent me a container of their Suntella Sugar-free Chocolate Spread. Suntella spread is a mixture of decadent chocolate, sunflower seeds, and other all-natural ingredients. I tried it on my toast and apple slices and it was very delicious. Suntella is Keto, diabetic, candida, paleo, vegan, low-carb, low-sugar, and all-natural. The best part about this chocolate spread is that it is not loaded with sugar like similar chocolate spreads and it is dairy-free. Since it is made with sunflower seeds instead of hazelnuts, my daughter can enjoy it. My daughter has a nut allergy and I have a dairy allergy so I have to be careful with my baked goods when she visits as I tend to use almond milk. So when I know that she is visiting, I have to use coconut milk in my recipes.

So if you are looking for a way to reduce your sugar in your favorite recipes, you need to try Lakanto sweetener. Here are a couple dessert recipes that I have used Lakanto in and my family loves them.

Mornings can be busy for most people and finding time for a healthy breakfast can be tough. So if you are like me, you love healthy grab-and-go breakfast items. My favorite breakfast to go is a protein smoothie as I can place all the ingredients in my blender container the night before and then blend it up in the morning. Another healthy breakfast that I enjoy is vegan chocolate protein pancakes but these are hard to eat on the go. My favorite healthy breakfast food is cookies. Yes, you heard correctly, I said that I eat cookies for breakfast. Cookies can be enjoyed for breakfast when they are made with healthy ingredients.

These yummy breakfast cookies are packed with healthy ingredients that will give you the energy to get your day started. The delicious cookies are loaded with protein and have plenty of fiber. These cookies are easy to grab when you don't have time for breakfast. They are also low in sugar and fat. When you add superfood ingredients like flaxseed or chia seed, they provide your body with healthy omegas.

This healthy breakfast cookie can be made dairy-free or gluten-free with a few simple swaps of ingredients. This is a versatile recipe that you can add or subtract ingredients depending on your dietary needs or food allergies. When I first made this cookie recipe, I did not discover that a dairy allergy was the cause of my severe asthma symptoms. So I now make these delicious wholesome cookies with vegan chocolate chips. If you have gluten problems, you can omit the wheat flour and add more oatmeal to the cookie recipe. Even those with food allergies like a peanut allergy can enjoy these cookies as they are made with sunflower seeds.

Delicious ingredient swaps and additions

The magic of these yummy healthy cookies that are also great for healthy snacks is the fact that you can change the ingredients around to accommodate food sensitivities and allergies. Below are just some of the many different ways you can adjust the flavor of the cookies.

Here are some delicious ingredient additions:

+ Chia seeds instead of flax meal
+ raisins instead of dried cranberries
+ Sliced almonds instead of sunflower seeds
+ white chocolate chips instead of chocolate chips
+ Add 1/2 cup of peanut butter for a peanut butter taste

These healthy cookies are awesome for after-school snacks

I don't know about your kids but it seems that my boys are always hungry. So I make sure to have plenty of healthy snacks for them to enjoy. So when my kids ask for a cookie, I can say yes, when my cookie jar is filled with these healthy oatmeal cookies. Oatmeal is such a healthy food and it is also great for the heart as it is known to help lower cholesterol. So once the kids go back to school, I will make sure to make a batch of these Oatmeal Chocolate Chip Protein Breakfast Cookies for after-school snacks. These cookies are also great for school lunches.

Cookies and coffee

When I enjoy my morning cup of coffee, I like to have a couple of cookies. These cookies are a guilt-free snack that I can enjoy with my coffee and not have to worry about blowing my health plan. Healthy cookies are just one of many things that I do to keep my body healthy. I work hard to keep my body in shape and I am not going to let some unhealthy store-bought cookies get in the way. Most packaged cookies that you buy from the store usually contain milk. So my dairy allergy won't let me enjoy them but I would rather have homemade cookies that are made with less sugar.

Cookies that are loaded with plant-based protein

My healthy cookie recipe also has plenty of protein in each delicious bite. The protein powder that I enjoy using in many of my dairy-free recipes is made from 100% premium pea protein. Nuzest pea protein is ideal for those who experience common food allergies, such as dairy, soy, or gluten. And, unlike many other plant-based proteins, it’s complete with nine essential amino acids. You will love that Nuzest is organic, low-carb, and Non-GMO. Each serving of Nuzest has 20-25 grams of clean protein with no junk added to it like gums or fillers. Nuzest comes in plain and many other delicious flavors. I like using Nuzest in my baking recipes as it is the only protein powder that I have found that can replace flour in recipes, making it perfect for gluten-free recipes.

Baking tips

Line your cookie sheets with parchment paper or silicone liners to prevent the cookies from sticking. The cookies will not burn either.

The cookie dough should be moist and sticky, so if they feel too dry, just add a couple tablespoons of almond milk.

These cookies store best in the fridge for the best flavor and it prevents the chocolate from melting.

The cookies will not spread on the baking sheets. So make sure to flatten them down with a spoon.
