 I love baking cookies year-round but when Christmas rolls around, I get excited about Christmas baking. I bring out the cookie cutters and make the best sugar cookies for the holidays. These are the sugar cookies that my kids help me bake as they are the cookies for Santa. They are also the sugar cookies that I bring to holiday cookie exchanges as everyone loves sugar cookie cutouts. 

For the past couple of years, I have baked this classic sugar cookie recipe as this is a cookie recipe that has an easy-to-roll cookie dough. This sugar cookie recipe has a nice buttery flavor and tastes great even without frosting.



These cookies taste great with or without frosting

 When I bake these sugar cookies for Santa, I frost them with cookie frosting, but they also taste great without frosting. I bring out all the Christmas cookie cutters and sprinkles. Then the fun begins! I let my kids frost the holiday cookies and sprinkle them with the color sprinkles. There is always the child who puts on way too much frosting and an overflow of Christmas sprinkles. One year Santa wrote in his letter that the cookies had too many red hot sprinkles on the cookies.

 This is the time of year when this mom overlooks the mess of making Christmas cookies with the kids. They are only a little for a short time. So I don't mind having to sweep up all the cookie sprinkles from the floor. The Christmas memories are so worth having to mop a sticky floor. The best part of making Christmas cookies with my children is seeing them enjoy their cookie creation and placing the best decorated cookies on the plate for Santa. This year I am hoping that my granddaughter will be able to join in the fun of making Christmas cookies.


 This year, I decided to try a new Christmas sugar cookie recipe, instead of baking my Holiday Pumpkin Pie Spiced Sugar Cookies. This sugar cookie recipe contains the usual sugar cookie ingredients like butter, flour, sugar, eggs, and pure vanilla extract but this cookie recipe also contains pure almond extract. I had never used almond extract in my holiday baking but it gives the cookies an amazing taste.

The pure almond extract gives the Christmas sugar cookies an amazing taste. It is amazing that a simple flavor like almond extract can make a huge difference and not taste like what one would imagine. That reminds me of the reactions that I always get the first time people try my Lemon Frosted Rosemary Holiday Sugar Cookies. My friends expect the rosemary to make the cookies taste weird but they are always pleasantly surprised at the flavor.

 When I added the pure almond extract to the creamed butter and sugar in my mixer, the aroma of the extract was so good. The almond extract had a pleasant scent that I enjoyed. I thought that my Madagascar Bourbon pure vanilla extract had a wonderful scent but the pure almond extract had a stronger aroma. When it was time to roll the refrigerated sugar cookie dough, the almond scent was so delicious. I just wanted to smell it all day. The chilled cookie dough was so easy to roll and the almond oil scent made it the best-ever sugar cookie dough to roll out for the cookie cutters.

No need to frost them as you can bake them with sprinkles


  I decided to take a bit of the sugar cookie dough and use it and make some Christmas cookies. Since I was not making cookies for Santa or a Christmas cookie exchange, I just used a couple of cookie cutters. I also decided to not frost these cookie shapes and instead, I used some colored Christmas cookie sprinkles. I had red and green colored sugar sprinkles that I sprinkled on the unbaked cookie dough shapes before I baked the cookies. I know that the next time I bake these sugar cookies, I will make my delicious lemon blackberry buttercream frosting.



Place the cookie sheets of unbaked cookies in the fridge for 15 minutes before baking


 This sugar cookie recipe is now my favorite Christmas sugar cookie recipe. This is a sugar cookie recipe that has a sweet nutty flavor. 

The best baking tip ~ place the baking sheets of unbaked sugar cookie shapes in the refrigerator for 15 minutes before baking them. This prevents the dough from spreading when baking. This baking hack is amazing and it prevents the cookie shapes from spreading into weird shapes.

The Best Christmas Sugar Cookie Recipe

ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1teaspoon Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract
  • 1 teaspoon Nielsen-Massey Pure Almond Extract
  • 3 cups flour
  • 1/2 teaspoon salt
  • sprinkles or colored sugar

How to cook The Best Christmas Sugar Cookie Recipe

  1. Cream the butter and sugar on medium speed in your electric mixer or cream by hand until light and fluffy.
  2. Add the eggs, vanilla, and almond extracts. Beat until combined. Add the salt and the flour, beat until you have a smooth dough. If the dough is sticky, add more flour a tablespoon at a time until it does not stick to your fingers. Place the dough in the refrigerator for an hour or more. 
  3. Line two baking sheets with parchment paper or Silpat mats.
  4. Remove half of the cookie dough from the fridge and on a lightly floured surface, roll out the dough to 1/4 inch thickness.  Place some flour on your rolling pin to prevent it from sticking to the dough. Cut out desired shapes with lightly floured cookie cutters. Place the cookie dough shapes on the baking sheets.
  5. Place the baking sheets with the unbaked cookies in the fridge for about 15 minutes to chill. This will prevent the cookies from spreading and losing the shape while baking. If you are not going to frost the cookies, you can sprinkle the unbaked cookies with sprinkles or colored sugar.
  6. Preheat the oven at 375 F.  Bake the cookies for 9-11 minutes or until the edges are just starting to brown. Remove the cookie sheets from the oven and let the cookies cool for 5 minutes before removing them.

Dairy-Free Rosemary Sugar Cookies Made With Sola Low Calorie Sweetener

I am not going to let a dairy allergy get in my way of baking cookies

          I received a package of Sola Sweetener to facilitate this post.

 I love baking cookies for Christmas as it is my favorite part of the holidays. Since discovering dairy to be the cause of my out of control asthma, I had to learn how to bake without butter and milk. I never thought I would get excited about store-bought cookies that were made with dark chocolate, vegetable oil, or cocoa powder. Having a dairy allergy has been tough when it comes to making sugar cookies as I know that real butter is essential for the best flavor. So I have been experimenting in the kitchen and using vegan butter in my favorite cookie recipes. I have been discovering that vegan butter is more oily than regular butter so using a bit less in my cookie recipes has helped. I think that also may have to do with the high altitude as I live in the mountain region. I remembered the first time that I made chocolate chip cookies when we moved here and how the cookies spread way too much on the cookie sheet when baking. So I always use less butter when baking cookies and that is also good for my families health. I also try to cut back on the sugar when making treats so since I was making these cookies allergy friendly, I decided to try a low-calorie sweetener in this dairy-free recipe. I am glad that I was able to use real flour in my cookies.


  I discovered Sola at a conference that I attended last month and after trying it in my coffee, I knew that I had to try it in baking. This low-calorie sweetener actually tasted like sugar and did not have that bad after-taste that most sweeteners have. I liked that it looked like real sugar and measured like real sugar. So I decided to see if Sola could past the test of my family in my Rosemary Sugar Cookie recipe. This recipe is a family favorite and my boys have been asking me to bake them. My boys also like my Holiday Cinnamon Spiced Sugar Cookies that I make after Thanksgiving with pumpkin pie spice.

 Sola is a blend of ingredients that, when combined, taste, bake, caramelize, and measure just like sugar. 

 I was amazed that the Sola Sweetener along with the vegan butter creamed up like real sugar and butter do. I made this batch of cookies with the no-roll version as I did not have the time to wait for the cookie dough to chill. My boys enjoyed helping me roll the cookie dough into balls. They are doing a great job when it comes to baking and learning how to remove hot items from the oven. My youngest son made chocolate zucchini bread the other day and did not need my help. I just supervised from the family room. The stand mixer makes it so easy for my son to bake by himself.

 My husband was not home when I made the cookies so I did not tell him that I used a low-calorie sweetener in the cookie recipe. My husband does not like low-calorie sweeteners and can tell when I have used them in recipes, like the time that I made a sugar-free mousse from a mix. My husband did know that I used vegan butter as he won't let me eat foods with dairy in them as he hates to see me coughing up a lung. My husband liked the cookies and did not notice a difference in flavor. I knew that they passed the family test when my boys kept asking if they could have another cookie. My husband kept telling the boys to leave my dairy-free cookies alone so I would not sneak cookies made with dairy like I did last week, and coughed all night. The funny thing is while my husband was telling the boys not to eat my dairy-free cookies, he kept sneaking them so these cookies went fast.


                                       Dairy-Free Rosemary Sugar Cookies
                                           Made with low-calorie sweetener

Makes about 4 dozen cookies

3 cups flour     
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon fresh rosemary, finely chopped
3/4 cup vegan butter, room temperature
2 large eggs or vegan egg substitute 


In a large bowl, beat the butter and Sola sugar until light and fluffy. Beat in the eggs. Then combine the flour, baking soda, salt, and rosemary in a separate bowl. Gradually mix in the flour mixture into the butter mixture. Mix until well combined. Cover the dough with plastic wrap and place in the fridge for at least 2 hours or longer. See instructions below to make the cookies right away without having to roll the cookie dough.

Preheat the oven to 350 F. On a lightly floured board, roll out 1/4 of the cookie dough to 1/8 inch thick. Using a cup dipped into flour or a round cookie cutter cut, cut out circles and place on cookie sheets 2 inches apart.  Bake for 10-12 minutes or until edges brown. Let cookies cool for 2 minutes and transfer to a plate to cool completely. Repeat with the rest of the cookie dough.

No-roll cookie instructions
To make the cookies right away without having to wait for the dough to chill just simply take a spoon full of the cookie dough and roll it into a ball. Place the dough onto the cookie sheet and lightly press it down. Bake at 350 F for 10-12 minutes or until lightly brown.

So many cookies so little time to bake

 When I bake cookies there are a couple of ingredients that I always use and I will not compromise on them. I always use real butter as you can really taste the difference in cookies when they are made with margarine. Also, cookies made with real butter just cook better. They tend to not burn. Using silicone baking mats also helps cookies to not burn. 

 Another ingredient that I always use when making cookies is pure vanilla extract. The flavor of vanilla made from real vanilla beans is so much better than that of imitation vanilla which is made from chemicals or something else. If you want the taste of vanilla you have to use real vanilla beans. The vanilla that I love in all my baking is Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract. This Vanilla extract uses a unique proprietary slow, cold extraction process to gently draw out and preserve more than 300 delicate flavor compounds to give you the richest-tasting vanilla.

The Mess Of Christmas Cookies And Biz

My boys make a mess when decorating cookies



 Our favorite Christmas tradition is making cookies. My boys love when we make cookies for Santa on Christmas Eve. They love to pull out all the cookie cutters and every color of sprinkles that we have in the pantry. I make the sugar cookie dough and roll it out. The boys then select their favorite Christmas cookie cutters and press them into the cookie dough. We are all covered in flour but the fun has only begun.

The decorating is the most fun

  My boys always have so much fun decorating the Christmas cookies. The youngest always spreads way too much frosting on his cookies for Santa and much of it ends up on his shirt. When my boys add the sprinkles to the cookies, I think most of the sprinkles end up on the floor. The older kids love using the red-hot candies on their cookies, so much that Santa has requested no more. We all agree that eating the holiday cookies are the best part of making cookies. Then all the kids select their favorite cookie to leave out on Christmas Eve for Santa. Santa sure does love cookies and milk!


Mom is left with the mess!

 Once the cookie decorating is done, I am left with the mess that is all over the kitchen. That mess always extends to the kid's clothes. I am not bothered by all the mess as this is always my favorite time of Christmas. My older kids have fond memories of baking cookies.

I usually don't like baking cookies from mixes but I had some in the pantry that I bought from Christmas sales last year. When I do bake from mixes, I add my own touch to make them taste and look better. I am going to show you how to make new flavors and looks from a couple of cookie mixes by just adding one ingredient. 

Spicy Gingerbread Cookies


The cookie mix that I made into a different taste was a gingerbread cookie mix. The secret ingredient is black pepper. You might be thinking, black pepper in a cookie? Trust me on this one, you have to try it. Just add 1 teaspoon ground black pepper to a gingerbread cookie mix when you mix all the ingredients together. The black pepper brings out the ginger and tastes wonderful.

Rosemary Sugar Cookies


The next cookie mix is a sugar cookie mix. I added 1 tablespoon fresh Rosemary to the sugar cookie mix, if you don't have fresh you can use 1 teaspoon dried. The Rosemary gives a wonderful taste to the sugar cookies. Trust me again, you have to try it.

Chocolate Chip Muffin Trees


This cookie mix was a chocolate chip one. I baked the cookies in mini muffin tins. After making the dough, place 1-inch dough balls into grease mini muffin tins or in papers. Bake the cookies for 12 minutes at the same temperature on the package. Remove the papers after baking. I decorated the cookies with green frosting and Christmas sprinkles.

My older son got into the fun too! He took the sugar cookies that I made from the above mix and made a tree using green frosting and sprinkles.

Now you have no excuse not to bake cookies, as it is simple to make great cookies from a mix.
