Seven months ago, I heard the words that no bread lover ever wants to hear. The allergy doctor told me that I was allergic to wheat. The skin-prick allergy testing confirmed that a wheat allergy was the cause of my asthma breathing issues and if I wanted to stop the damage to my lungs, I had to follow a wheat-free diet. 

 I was so hoping that I was not allergic to wheat, as I loved homemade honey wheat bread and butter. The news of my wheat allergy really did not come as a surprise, as I already knew through an elimination diet that eating wheat caused me to have a severe asthma attack. I was just hoping that the allergy test would not be positive for a wheat allergy.

 Once I got over the news of my wheat allergy, I went to the grocery store to buy some gluten-free bread and was disappointed at how expensive gluten-free bread was.  I was up for the challenge of more allergy-free baking. I was already having to make dairy-free recipes since I had a dairy allergy, so I was ready to learn the art of gluten-free baking. After discovering the gluten-free ingredients. like gluten-free flour, was just as expensive as store-bought wheat-free bread, I began to search for inexpensive gluten-free recipes. 

 Through my gluten-free bread baking, I learned how to make gluten-free bagels, oat flour tortillas, gluten-free crepes, and gluten-free bread made from buckwheat. All those delicious recipes are at the end of this article. And now I bring you the easiest and least expensive recipe for gluten-free rolls made from dried lentils. ~ Whole Psyllium Husk - This acts as the binder of the ingredients and gives elasticity to the gluten-free dough. It also adds fiber to the bread. Use whole psyllium husks and not the powdered variety. This is a gluten-free bread-making staple that I keep in my pantry.

~ Baking Soda - This helps the dough rise.

~ Lemon Juice or Apple Cider Vinegar - This acidic ingredient works with the baking soda to enhance the rising of the dough.

 Making the lentil gluten-free rolls is super simple. It takes 4 easy steps to enjoy delicious warm rolls that are perfect with butter or to use as a sandwich roll. Check out this recipe for a delicious vegan deviled egg salad spread that is made with chickpeas.

~ 4 Steps To Make The Lentil Gluten-Free Rolls ~

1. Step 1 ~ Soak the lentils -  Rinse the lentils well. Soak the lentils overnight in a large bowl with plenty of water. Then drain the water.

2. Blend all the ingredients together ~ Place all the ingredients in a high-speed blender. Blend for about five minutes or until all the ingredients stick together and resemble biscuit dough.

3. Shape the bread dough - Divide the dough into 6 pieces and shape it into rolls.

4. Bake the rolls - Bake the rolls in the oven. Let them cool and enjoy.





~ Baking Tips ~

~ You can use any variety of dried lentils - Dried lentils come in a variety of colors, like red, yellow, green, and brown. Using a different type will not change the texture of the rolls but it will give the rolls a different color and taste.

Use whole psyllium husks - and not the powdered variety. The powder psyllium will not give the dough the elasticity that it needs to become bread.

Use a nonstick baking sheet - or line the baking sheet with parchment paper.

Add spices to the dough before you blend it for additional flavor. Spices like rosemary, garlic, thyme, and salt will enhance the taste of the rolls. You can also add toppings to the rolls, after they are formed and before you bake them. Let the rolls cool completely before storing them.

~ Reheating - You can reheat the rolls in the microwave for 30 seconds or in an oven set to 350 F for 10 minutes.

Tips and Tricks for baking with pea protein

+  Pea protein powder is much denser than wheat flour and tends to absorb a lot more liquid. If you’re trying out your own recipes, start by only substituting ¼ to ½ of the flour, and add a little extra liquid to compensate.

+ Use a measure for measure gluten-free flour ~ Gluten-free flour does not perform like wheat flour as it does not have gluten. So gluten-free baking recipes require other ingredients like xanthan and tapioca starch to replace the gluten. So using a measure for measure gluten-free flour will give better results as it has those thickener ingredients in the flour.

My personal notes for the recipe

 I discovered the recipe for these brownies on the back of the Nuzest Plant Bake package and just wanted to include my personal notes for the recipe. I followed the recipe on the package and felt that my brownies were too moist( like eating pudding) and needed more texture. While the brownies had a nice dark chocolate flavor, it was a bit too dark for me.

 So many of my readers are fans of getting their daily coffee drinks at coffee shops and when I heard about the newest summer coffee drink from Starbucks, I knew that I had to recreate it at home. The name alone, of this coffee drink sounded so delicious. Sweet brown sugar and creamy oat milk with a rich cup of coffee made my taste buds get excited. This was a coffee latte that I knew I could make at home without even trying the popular coffee drink.

While I like visiting coffee shops for my coffee fix, my dairy allergy makes it hard. I have to keep a careful eye on the coffee barista who is making my coffee order so they don't accidentally add milk to my coffee drink. I have had a couple of bad experiences with my coffee drinks from coffee shops in the past that have resulted in me feeling sick to my stomach for hours and experiencing an asthma attack. My food allergy symptoms usually set in 1 to 2 hours after I eat any dairy products.

 Other reasons to make your own coffee at home are you save money and there is no long line in your kitchen. So you will save time when you make your coffee at home. I know that people say that coffee shop coffee tastes better but I so disagree. Brewing coffee at home tastes so much better to me. Once you learn how to brew the best coffee, you will start making your coffee drinks at home. You don't even need a fancy coffee maker to make delicious coffee at home, especially when you make cold-brew coffee.

That fancy coffee you buy at the coffee shop runs $5 - 7 dollars a drink, so do the math.

 I am a coffee snob when it comes to buying my coffee beans. Quality coffee is on a coffee lover's must-have list of products. I also like purchasing coffee beans from around the world. I also like supporting businesses that give back to the community. My latest find in quality coffee beans is from Fire Department Coffee. Their Honduran Coffee beans make a great cup of coffee. These rich coffee beans from Central America have a smooth tint and slight sweetness.

Ingredients needed for  Iced Brown Sugar Oat Milk Coffee Latte

+ Coffee beans or ground coffee

 Three ingredients, four if you include the ice, are all you need to make this delicious summer coffee drink. The original Iced Brown Sugar Oat Milk Coffee espresso drink that I discovered uses a brown sugar syrup that you can make at home but that is too time-consuming in my opinion. The copycat coffee recipe from Starbucks also uses shots of espresso and that requires one to have an espresso maker. So my recipe for an Iced Brown Sugar Oat Milk Coffee Latte is easy to make. The recipe uses a strong cup of hot brewed coffee, brown sugar, and oat milk. It is that simple!

While you can use other plant-based milk, I recommend buying oat milk as oat milk is creamier and adds great flavor. Oat milk is creamy, delicious, plant-based milk that is perfect for the best dairy-free cup of coffee.

How to Make Iced Brown Sugar Oat Milk Coffee Latte

Making the Iced Brown Sugar Oat Milk Coffee Latte is super easy and there is no need for fancy shaking or coffee equipment. If you can brew a cup of coffee then you can make this dairy-free coffee drink. If you have a coffee maker, all you have to do is increase the amount of ground coffee to make the coffee more rich and bold or decrease the amount of water needed. Since you will be adding hot coffee to the oat milk, you will want stronger coffee.

If you don't have a coffee maker, I recommend buying a pour-over coffee cone. I prefer to make my coffee with the pour-over coffee method as it results in a better-tasting cup of coffee that has no bitterness. If you can boil water, you can make coffee with the pour-over coffee cone. You simply place a paper coffee filter in the pour-over cone and add the ground coffee. Then you pour the boiling water over the ground coffee to brew the coffee. The ideal temperature is 195-205 degrees Fahrenheit. I use a gooseneck water kettle that has a thermometer in it so my hot water is always at the perfect temperature.

Once you brew the coffee, you add the brown sugar to the hot coffee. The heat will dissolve the brown sugar, so no need to make fancy coffee syrup. Then let the coffee cool down by placing it in the fridge for about 30 minutes. You can make this coffee mixture the night before to save time. Then add the oat milk to a glass with ice and pour in the coffee. Stir the drink and enjoy!

What I like about oat milk is it is a perfect dairy-free milk option for those with nut allergies. Oat milk is my go-to option when I am baking treats that my older daughter will be eating. My daughter has a nut allergy and I have a dairy allergy so I have to be careful with my baking when she comes over to visit. 

 What I love about homemade oat milk, is how quickly I can make a batch of oat milk. Unlike other non-dairy milk recipes, oat milk does not require any special equipment like nut milk bags. Making oat milk at home also does not require long soak times like homemade almond milk. The preparation of oat milk takes less than 30 minutes, so you can make oat milk quickly.

 Oat milk is fairly new to the plant-based beverage line in stores and may be hard to find in some grocery stores. It also may be more pricey than other plant-based milk choices. I am not sure why oat milk costs more to buy when oatmeal is cheaper than nuts. So being that I like saving money, I decided to learn how to make oat milk at home.

 What's not to love about homemade oat milk if you are looking for non-dairy milk that is allergy-friendly. When you use certified gluten-free oatmeal, nut milk is a good choice for those who have gluten issues and since it is not made with nuts, those allergic to nuts can enjoy DIY oat milk. I know that coconut milk is another nut-free plant-based milk but some people have sensitivities to coconuts.

 Making oat milk at home is super easy and other than needing oatmeal, you don't need to run out and buy any fancy high-speed blender. You can use a regular blender to make homemade oat milk at home. The other items that you need to make this delicious creamy homemade oat milk are ones that you probably have in your kitchen or don't cost that much to buy.

Items Needed To Make Oat Milk

+ Oatmeal ~ Whole rolled oats work best in this oat milk recipe

+ Sweetener ~ If you desire sweet-tasting oat milk. I like using maple syrup as it dissolves quickly

+ Water ~ While filter water is best, you can use tap water

+ Fine Mesh Strainer or Nut Milk Bag

+ Large Coffee Filters ~ To fine strain the oat milk

+ Blender ~ A high-speed blender works best but you can use a regular blender

 Should I Soak The Oatmeal?

 While I was searching for the best oat milk recipe, I discovered some recipes that had you soaking the oatmeal for 15 minutes and then rinsing. Other oat milk recipes did not require the soaking of the oats. So I decided to make a couple of batches of oat milk to see if soaking made any difference in the taste or texture of the oat milk. I got the best results when I soaked the oatmeal for 15 minutes without rinsing the water. So soak the oatmeal in the water in the blender before blending.

Can I Use Oat Milk in My Coffee?

 I have found that homemade oat milk works best in cold coffee drinks. When I add oat milk to my hot coffee, it tends to curdle and get too thick. Maybe because I microwave my coffee after I make it or I tend to slowly drink my coffee. I am not sure the reason homemade oat milk curdles in hot coffee. So I recommend just using this oat milk in cold coffee drinks. 

If you want to use oat milk in hot coffee, make sure to add it to your coffee right before you drink it. Also don't microwave the coffee after adding the oat milk.


Can I Use Instant Oatmeal Or Steel Cut Oats?

 From my research in making oat milk yourself, every recipe that I have seen, recommends using rolled oats for best results. So make sure to buy rolled oats and not instant oatmeal. That way your oat milk will be smooth and creamy.

Can I Use Regular Sugar To Sweeten The Oat Milk?

The reason this oat milk recipe calls for maple syrup is that it dissolves better in the liquid. Since this oat milk recipe uses cold water, regular sugar would not dissolve and your milk would have a grainy texture. You can try honey or agave to sweeten the oat milk but I think that maple syrup adds better flavor and is thinner, so it will dissolve better in the milk.

How to Use Oat Milk

 Once you’ve made oat milk, use it as you would dairy milk, cashew milk, or any other type of milk you like. I don’t recommend using it in savory recipes since it has an oatmeal flavor. I use this oat milk in my cold coffee drinks, cookie recipes, overnight oats, and other sweet recipes. Oat milk is perfect for dairy-free vegan recipes.

 Whenever I see fresh strawberries in the store, my mind starts thinking about homemade whipped cream and strawberry shortcakes. I reminisce about the sweet homemade drop biscuits that my mom would make for summer desserts. My mom would always have a big box of biscuit mix in the pantry that she would use to make everything from pancakes to sweet drop biscuits. My mom would pull the sweet shortcake biscuits out of the oven and then split them in two. My mom would then spoon the sliced strawberries over the shortcakes along with plenty of the sweet syrup. Then she would add a spoonful of whipped cream on top of the strawberries. This was a sweet dessert that I enjoyed. I think it was the only way that I would eat fruit as a kid. Homemade Dairy Free Whipped Topping 

  I like to whip up a batch of dairy-free whipped topping for my strawberry shortcakes as I have dairy allergies. Sweet Balsamic Strawberries

A splash of balsamic vinegar adds an incredible sweet flavor to sliced strawberries. Adds some homemade whip cream and a sweet biscuit and you have the best strawberry shortcake.

  • 1-quart fresh strawberries, sliced into quarters 
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon pure vanilla paste

instructions

 Remove the stems from the strawberries and slice strawberries them into quarters.

  2.  Place the strawberry slices in a bowl and mix in the balsamic vinegar and vanilla paste. Gently stir to coat the berries.
  3.  Place the berries in the fridge for a couple of hours so the berries and soak in the flavors.
  4.  Serve the berries with whip cream or spoon them over sweet biscuits for strawberry shortcake.
