  My omelet cooking experience all changed when the red football-shaped cooking device showed up at my house. Makes the best omelets for breakfast


  The first thing that I made in the 5 Minute Chef was a salmon burger and it did an amazing job of cooking the fish. I loved that there was no messy grease splattering all over my stove as the fish was contained in the closed pan. My fish tasted so good, and it was not dried out one bit.

It can be used to cook the best omelets, meat, fish, and even pancakes. Once you start cooking in this cooker, you will find many uses for it. I love sauteeing onions in mine.

    I then used the cute red cooking device to make my omelet. I loved that I did not have to add any oil to the pan; that way, I was saving my fat grams for my cheese. The best part was that I could add the eggs, spinach (lots of it), and cheese all at the same time to the pan, instead of waiting when I cooked on my stovetop. I closed the lid of the 5 Minute Chef and waited two minutes. I then opened up the red pan, and I had a perfectly cooked omelet! I was amazed that this pan could do that. I was in egg heaven!


Do not latch the pan!
 The instructions tell you to latch the pan closed, but do not follow that. I learned the hard way when I put a bit too much spinach in my omelet and it exploded when I opened the pan. I had eggs all over the kitchen. So just place your ingredients in the pan and cook. There is no need to flip the pan over.


  The 5 Minute Chef came with a recipe book that had easy recipes for pizza, cake, pancakes, and more. Since the pan is so easy to use, makes no mess, and is easy to clean, I knew that I had to teach my younger boys how to use it. That way they can eat other things besides PB and J and microwaved cheese sandwiches for fend-for-yourself dinner night. I admit things get busy here and we have way too many fend-for-yourself dinner nights. Hey, how else are my boys going to learn how to cook?

Great for pancakes


 My ten-year-old was the most excited to try the 5 Minute Chef Pan as he recognized the lady on the box from a TV commercial. He helped me make pancakes in it and it was so easy. His younger brother enjoyed having pancakes for dinner that night. Once the pan cooled down, I showed my son how to wipe the pan down with a dishcloth. Then I placed the red pan in my pantry as I knew it would get a lot of use. I think this red pan will be the start of my boys learning how to cook more and I might just put them in charge of making dinner. Perfect Omelet in The Red Copper 5-Minute Chef

2 large eggs
1/4 cup shredded cheese
1/4 cup cooked spinach, cooled
Salt and pepper to taste
1 teaspoon oil

 Place the oil in the Red Copper 5 Minute Chef. Spread the oil around on both the top and bottom of the Red Copper with a brush or a paper towel. Crack the eggs into a bowl and lightly scramble them. Add the cheese, spinach, salt, and pepper. Combine the ingredients and pour them into the 5-Minute Chef. Close the lid but do not latch.  Plug the Red Cooker and let the eggs cook for five minutes.

 Whenever I see fresh strawberries in the store, my mind starts thinking about homemade whipped cream and strawberry shortcakes. I reminisce about the sweet homemade drop biscuits that my mom would make for summer desserts. My mom would always have a big box of biscuit mix in the pantry that she would use to make everything from pancakes to sweet drop biscuits. A splash of balsamic vinegar adds an incredible sweet flavor to sliced strawberries. Adds some homemade whip cream and a sweet biscuit and you have the best strawberry shortcake.

  • 1 tablespoon balsamic vinegar

 Strawberry shortcake is a family favorite summer dessert at my house. It is a simple recipe to make and I love that I can make it dairy-free. Ever since I discovered that a dairy allergy was the culprit to my out-of-control asthma, I have been learning how to make my favorite recipes without milk ingredients.

 With just a few simple changes in ingredients, I am able to make a delicious strawberry shortcake that my whole family can enjoy. It may be allergy-friendly but it tastes just like the strawberry shortcake that I enjoyed as a kid. The last time I made this delicious plant-based dessert, my family ate it up quickly and there were no second servings for the next day. So next time I make this incredible dairy-free dessert, I will make sure to double the recipe.

Balsamic vinegar turns strawberries into sweet morsels of delight

 It is so easy to make the shortcakes for DIY strawberry shortcakes so do not buy those tasteless small sponge cakes at the store. You know the ones that I am talking about, those over-priced small shortcakes that are near the fresh strawberries in the produce section. My homemade sweet biscuits are so easy to make that my 10-year-old son can make them. If you have flour, butter(vegan butter), dairy-free milk, sugar, and baking powder, then you can whip up these delicious sweet cakes. If you don't have dairy issues, then you can use real butter and milk. Since this is a drop biscuit recipe, there is no need to roll out the dough. I love that there is a dairy-free whipped cream 


 I like to make my own homemade dairy-free whipped cream from a can of coconut milk but if you are short on time or forget to place the can of coconut milk in the fridge the night before, then store-bought dairy-free whipped cream is just as delicious. Look for dairy-free whipped cream in the freezer section or the dairy section of your grocery store. My store doesn't always carry the spray type of dairy-free whip topping so when I do find this topping, I will buy a can for my coffee. Three delicious recipes to make one delicious dairy-free dessert

 Here are the links to the recipes that you will need to make the Dairy-Free Strawberry Shortcake. I recommend making the sweet drop biscuits first so they have time to cool. While the biscuits are cooling, make the balsamic glazed strawberries, and then make the dairy-free topping. Just make sure to place the unopened can of coconut milk in the fridge for 8 hours or more. Then after making the recipes, it is time to assemble the strawberry shortcakes. Slice a sweet biscuit in half and then place some of the sweet sliced strawberries on the biscuit halves. Top the berries with some whipped topping and enjoy. You can use just one half of the biscuit or the full drop biscuit, depending on how many servings you want. My biscuit recipe makes 6-8 biscuits. If you need more servings than that, just double the recipes.

 My husband loves homemade apple pie but I don't like all the work that goes into making an apple pie. So we compromise and I make him an apple crisp. An apple crisp tastes similar to a homemade Dutch apple pie, but since it is made with oatmeal and does not have the rich buttery crust, it is healthier also. I say healthier but while an apple crisp has fruit in it, it still is not a healthy dessert. 

Once in a while, I break all the healthy rules and make my family something sweet that is loaded with sugar, butter, and white flour. My motto is if you are following a healthy diet, then occasional sweets are not going to hurt your body. An explosive apple crisp with plenty of crunchy crumble


 Since it was Father's Day and we were having a BBQ for my husband, I decided to make him a dessert that he would enjoy. Plus, I owed my husband an apple crisp from a couple months back when I blew up the apple crisp in the oven. Word to the wise, don't ever add cold water to a hot Pyrex baking dish. It will explode! Thankfully the glass dish was in the oven when I added the cold water to it. The dish with the apple crisp exploded in the oven and glass pieces shattered all over my oven. The oven was ok but it was a mess to clean up. Months later, I am still finding oatmeal crumbs in the oven-warming drawer.

 The best part of an apple crisp recipe is the crumb topping. This vegan dessert, (when you use vegan butter), has plenty of that delicious crunchy oatmeal crumb topping. So with each sweet bite, you get plenty of sweet apples and crunchy topping. This sweet apple crisp can be made plant-based and dairy-free when you use plant-based butter. It is a perfect summer recipe that tastes like apple pie without all the work. In the fall, when it is apple season, this apple crisp is a great way to use all the apples from apple picking. Apples are a healthy fruit that my family enjoys, and it was a perfect dessert for Father's Day.

Slicing the apples


  Slicing the apples for this apple crisp is simple. I like to slice my apples into 8 slices per apple. Once the apples are sliced, make sure to remove the seeds. You can make your apple slices smaller if you prefer.

For Father's Day, the boys gave their dad a set of new kitchen knives. So I had to try these sharp premium kitchen knives out. What better way to break in new knives than by slicing apples for apple crisp. Having sharp knives in the kitchen is a must if you do any kind of cooking or baking. My husband loves to cook and he was happy to get new kitchen utensils for a present.

Ingredients needed for Apple Crisp

~ Fresh apples ~ about 7 medium apples
~ Lemon juice
~ Sugar
~ Cinnamon
~ Vanilla extract
~ Flour
~ Oatmeal
~ Brown sugar
~ Salt
~ Butter

To peel or not to peel the apples


 The magic of this easy apple crisp is that you don't need to peel the apple. Peeling apples is a lot of work and the apple peels are loaded with fiber. Trust me the peels soften up while cooking so they don't affect the taste of the apple crisp. If you don't like apple peels, then you can peel the apples for this apple crisp recipe.

What kind of apples should I use for apple crisp?


 You want to select a crisp variety of apples for an apple crisp recipe as it will not turn mushy. So a soft variety of apples, like Red Delicious will not work for apple crisp. My favorite apples that I like cooking with are Honeycrisp, Gala, Fuji, and Pink Lady apples. Granny Smith, Golden Delicious, and Braeburn are also apples that taste great in a baked apple dish. 

 For this recipe, you are going to want to buy about 7 medium apples as that will yield about 5 cups of sliced apples. Buy a couple more apples, just in case. You can always snack on the extra apples later. Apples are great healthy snack ideas for kids. My boys love apple slices with peanut butter or in apple nachos.

How to keep the apple slices from turning brown


  Apple slices can quickly turn brown when sliced. So my baking tip is to toss the apple slices in lemon juice to keep them from browning. I just have a bowl with a couple of tablespoons of lemon juice next to my cutting board and I toss the slices of apples into the bowl as I slice each apple, making sure to stir them up. Other juices will work too and I have used apple juice and fruit juice to keep my apples from turning brown. It is the vitamin C in the juice that prevents the apples from turning brown.

Can I make this apple crisp dairy-free?


 Since I have a dairy allergy, all my baking is dairy-free. I simply replace the butter in the recipe with a non-dairy vegan butter substitute. This does not affect the sweet delicious taste of the apple crisp. You can also make this apple crisp low sugar by swapping out the sugar in the recipe with a low-calorie sweetener. I like to use a monk fruit type of sweetener for baking as it has the closest taste to real sugar. My favorite sweetener to use is Lakanto as they have a golden sweetener that is similar to brown sugar.

More tips

+ To make slicing the apples easier, you can use a hand-held apple slicer. An apple slicer will also take out the core of the apple, so that is one less baking step.

+ If your crumb topping is browning too quickly but the apples need more time to cook, cover the baking dish with foil. This will prevent your crumb topping from burning.

+ If you like nuts, you can add chopped pecans, walnuts, or even peanuts to the apple crisp.

+ This dessert can be served warm from the oven or you can cool it down. If you are like me and don't like cooked fruit, you can chill this in the fridge and serve it cold.

+ For an even more delicious dessert, serve this baked apple crisp with vanilla ice cream or whipped cream.

+ To make this dessert gluten-free use a gluten-free flour like almond meal or cassava flour

This delicious apple crisp is so easy to make as you don't have to peel the apples.

Ingredients:

  • Filling:
  • 5 cups fresh apples, sliced- about 7 medium apples
  • 2 tablespoons lemon juice
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Topping:
  • 1/2 cup  white flour
  • 2/3 cup old-fashioned oats
  • 2/3 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/3 cup butter, melted

Instructions:

  1. Preheat oven to 350 degrees. Grease a deep-dish pie plate or large baking dish with cooking spray and set aside.
  2. Slice each apple into 8 slices and remove the seeds. Toss the apple slices in the lemon juice.
  3. To the apple slices add the sugar, cinnamon, and vanilla extract in a large bowl. Mix well until all of the apples are evenly coated. Pour into the prepared baking dish.
  4. In a separate medium-size bowl, combine the flour, oats, brown sugar, salt, and cinnamon. Pour in the melted butter and stir until well coated and crumbly. Sprinkle the crumb mixture evenly over the top of the apples.

 Many people choose to not eat meat for many reasons. For some people, it may be for health reasons while others abstain from eating meat due to their love of animals. Others may not consume meat for religious reasons while some may just choose one day a week to not eat meat. The reason that I choose to not eat meat was at first because meat is expensive. Many years ago when money was tight, I gave up meat simply because the meat was a costly source of protein. I discovered that eating only meatless protein was more affordable. Several years later when I read that a meatless diet could be healthier, I decided to follow a vegetarian diet most of the time and a flexitarian diet a couple times a month as I still enjoyed eating fish.

Meat can be expensive

 I know for most people right now, buying meat at the grocery store can be hard as meat supplies have been affected by the C lung virus outbreaks. A lot of meat processing factories have close so stores have a limited supply of meat. Many stores are limiting the amount of meat you can buy or the meat cases are empty. I am sure that this meat shortage is going to affect the price of meat too. So this may be a good time to cook meals without meat or have smaller portions of meat in your meals. So many recipes can be made with meatless sources of protein like beans, tofu, or meat substitutes. You can even make recipes that replace some of the meat with beans. Think chili with beans and replace half the amount of ground beef with dried beans or canned beans.
