Quick Caramelized Onion Bread
2 large yellow onions, thinly sliced and chopped into small pieces
2 tablespoons olive oil
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon garlic powder
1 tablespoon fresh rosemary, finely chopped
3 tablespoons butter, melted
2 eggs
3/4 cup milk
1 1/2 cups shredded mozzarella cheese
1/4 cup shredded mozzarella cheese for topping the bread
Preheat the oven to 350 F
Lightly grease a loaf pan. In a large skillet, heat the oil over medium-high heat. Then saute the onion pieces for about 10 minutes or until golden brown. While the onions are cooling, mix up the bread ingredients.
In a bowl, combine the flour, baking soda, baking powder, and salt. Add the rosemary. Then add the melted butter, eggs, milk, and caramelized onions to the flour mixture and combine well. Add the 1 1/2 cup of shredded cheese and mix well. Pour batter into the prepared pan and sprinkle the 1/4 cheese on top. Bake for 50 minutes or until an inserted knife comes out clean. Cool the bread for 10 minutes before taking the bread out of the pan.
