Quick Caramelized Onion Bread

        This quick bread requires no yeast and is so delicious!

  I love the taste of caramelized onions and cheese. I usually make a pizza with the caramelized onions and mozzarella cheese and it is so good, the more onions the better. So when I had an abundance of onions, I wanted to make this pizza for my Friday night potluck with my church friends. The only problem was this pizza doesn't travel well, so I decided to make a bread with the onions instead. I may love eating onions but I hate chopping them as it makes my eyes water. So I decided to use my new Mandolin to slice up the onions. I was amazed at how fast I was able to slice the onions and the best part was my eyes did not water. My Mandolin was able to make thick or thin slices and then it was so simple to chop them into small pieces for my bread. I discovered that if I kept the onion whole it was easier to work with using the Hand Guard. So when you peel the onion, just carefully slice the top layer of the onion to remove the peel so the rest of the onion is kept whole.

  I just bought this mandolin so I am having fun with fruits and veggies. This cool mandolin has 5 different blades so I can slice and shred. It even has a blade to make those criss-cross fries. My boys loved the thin apple slices that I made for their snack the other day. This cool slicer is great for grating up my carrots for recipes like carrot cake and spring rolls. I need to buy some potatoes so I can slice them for cheese au gratin potatoes. I am glad that this mandolin comes with a hand guard as the blades are sharp. This mandolin has been getting a lot of use in my kitchen and I am glad that I can put it in the dishwasher.

  Now onions may taste amazing in food but they can leave your hands smelly. I love using Method Lemongrass Gel Hand Wash when I cook with onions. This incredible smelling soap is infused with citrus extracts and does a great job of removing the onion smell from my hands. It also works great on fish and onions. So enjoy those onions in your food!

  Now on to the recipe for my cheesy onion bread. I love that this bread can be made quickly as it requires no rising. I know two onions sound like a lot, but since the onions are in small pieces you won't notice their texture, just an amazing flavor. If that sounds like too many onions, just use one. It is important to saute the onions until golden brown and that will give them a delicious caramelized taste. If you have never had cheese and onions together, you are in for a treat. This bread is super moist and bursting with great flavor, no need to spread butter on it.

Quick Caramelized Onion Bread

2 large yellow onions, thinly sliced and chopped into small pieces
2 tablespoons olive oil
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon garlic powder
1 tablespoon fresh rosemary, finely chopped
3 tablespoons butter, melted
2 eggs
3/4 cup milk
1 1/2 cups shredded mozzarella cheese
1/4 cup shredded mozzarella cheese for topping the bread

Preheat the oven to 350 F

Lightly grease a loaf pan. In a large skillet heat the oil over medium-high heat. Then saute the onion pieces for about 10 minutes or until golden brown. While the onions are cooling, mix up the bread ingredients. 
In a bowl, combine the flour, baking soda, baking powder, and salt. Add the rosemary. Then add the melted butter, eggs, milk, and caramelized onions to the flour mixture and combine well. Add the 1 1/2 cup shredded cheese and mix well. Pour batter into the prepared pan and sprinkle the 1/4 cheese on top. Bake for 50 minutes or until an inserted knife comes out clean. Cool the bread for 10 minutes before taking the bread out of the pan.

Hello Baby! Important Things To Remember When You're Trying To Conceive

For couples trying to get pregnant, it can be an exciting, nerve-wracking, and even stressful time. Conception doesn’t necessarily happen immediately. If you drink alcohol regularly, smoke, or drink a lot of caffeine, it’s a good idea to stop before you get pregnant. Not only does it mean your body will be almost clear of toxins, but it will aid fertility too. And while you’re at it, encourage your partner to give them up too - not only is it more supportive to you, but it can also help to increase his sperm count as well.

Research the specialists you’ll need
You’ll want to know which obstetrician and midwife you’ll visit before you need them, it just helps when the time comes to already have that planned. You may even want to pay them a visit if conception isn’t coming quite as easily as you hoped - they’ll be able to advise on changes you can make to your lifestyle to optimize fertility, and check that everything is in good working order. If conception is taking a while, it could be worth looking for in vitro fertility treatment and specialists in your local area. While this is a big decision and huge step to take, knowing your options can make the future seem a little less daunting.

Start taking folic acid
You want your body to be in tip-top condition when conception happens. The best way to achieve this is by starting your folic acid supplements beforehand, which can even increase your fertility and make sure that your baby will grow healthily. But don’t let your good measures stop there - cleaning up your diet will help you to ensure you’re fertile and your body is healthy enough to grow a new life. Make sure you’re eating a lot of oily fish, lean meat, and green, leafy veggies to optimize your fertility.

Remember, it doesn’t necessarily happen overnight, and many couples have to wait months, if not years. Try to remain patient, but reach out for professional medical advice if you’re losing hope - they’re there to help after all.

Alternative Sunday Lunch Ideas

Recent statistics show that the traditional Sunday lunch is on the decline. According to the research completed, the treasured Sunday lunch is becoming less and less popular as families opt for easier, quicker and more convenient meals instead. A 4% decline in those choosing to enjoy the traditional Sunday dinner is a worrying trend, especially for those of us who still love to enjoy the weekly Sunday get together with family. And that is the point, isn't it? Through the chaos of the week, with everyone on iPads and laptops, phones and computer games, eating whenever there is time, it remains even more important to have at least one meal a week where everybody gathers round the table and tucks into the food, maybe whilst even chatting to each other and with phones away (you can hope?!).

So, if you have fallen out of love with the traditional Sunday lunch, or maybe you just want some ideas on how to keep it exciting and fresh, these alternative Sunday lunch ideas, based around the idea of a family meal together, should get you super inspired and excited about the upcoming weekend:


A potluck is where everybody attending the event or meal, brings at least one dish for the table for everybody to share. If you regularly have a lot of family over for Sunday lunch, this could be a fantastic idea for getting everybody involved. It could be a 'buffet Sunday lunch' and you could let everybody know to bring something along. The taking part, the fun and the sheer variety of dishes should be enough to get everybody excited about sharing Sunday lunch together again.

Pick A Course

To get the entire family involved, you could arrange so you split into three teams, and each team has to do a course. Depending on the ages of the children, they will love picking out a dish to create. It doesn't have to be complicated, it could be anything from fruit salad - chicken and chips - chocolate cake all the way to more complex courses like a full Sunday roast or homemade ice cream, it is entirely up to you.

Come Dine With Me

If you have a large enough family or circle of friends, you could do a 'Come Dine With Me' Sunday lunch where you take it in turns to go to each other's houses for food. This spreads the cost, time and effort and adds a fun element. You could keep it to a traditional Sunday lunch, or you could mix it up and do any menu you like!

Al Fresco

Perhaps you simply need a change of setting to make your Sunday lunch exciting again. Why not have a Sunday lunch picnic this Sunday if the weather is nice? Make beef and horseradish sandwiches, and take mini puddings, maybe even a bit of fizz! Be inspired by new surroundings and it might make you feel re-inspired for next Sunday.


There are now over half a million vegans in the UK according to a study completed last year, and the meat-free revolution is only just beginning. If you want to do your bit for the animals, the environment and for your health, why not enjoy a meat-free Sunday instead of a meat-free Monday? There are so many incredible meat alternatives to try like stuffed vegan turkey, vegan beef joints, vegan sausages and even vegan haggis. Then there's lots to try away from fake meats such as nut roasts, or even the trendy whole roasted cauliflower, made famous via Jamie Oliver's recipe. Just look in the fridge section in health shops on the high street, or in the free from or vegetarian section of the supermarket - there really is a ton of choice.

Make Tweaks

It may just be that you need to make a few tweaks to your current Sunday lunch to make it more affordable, more interesting, or easier to make. Here are some tweak suggestions for each 'section' of a traditional Sunday lunch:

Vegetables - The vegetables are probably the easiest part of the meal to play around with because there are so many vegetables out there to enjoy. Why not try different vegetables every week, such as kalettes one week and carrots another. What about switching up the flavor of the vegetables? Curried roasted vegetables could be a spicy addition to your meal, or how about caramelized veggies, or lemon and dill tossed steamed veg?

Carbs - Potatoes are fabulous, whether you have them steamed, roasted or mashed, but they might be getting a little boring. Why not switch them for a similar root vegetable like celeriac? Or have cauliflower mash instead of potato mash? Why not try sweet potato one week, or purple potatoes? You might even want to have your potatoes another way, like dauphinoise or jacket.

Meat - The meat is the centerpiece of the meal, so it needs to be right. If it is costing you too much to get a beef joint every week, then mix up the meat for cheaper alternatives. Pork chops are down in price at the moment and can be cooked in a number of ways. Or how about stuffed pork belly which is even cheaper and is being served in many up market gastro pubs as a Sunday lunch alternative. Buying the whole chicken on offer and using the entire bird costs less than buying single parts, or you could enjoy cheaper cuts like the legs or thighs and enjoy it in a stew. You might also want to buy cheap cuts of meat like liver and make them into a delicious pie. Alternatively, you could always try meat-free for a week with some cheap veggie sausages, or meat alternatives.

Trimmings - Gravy, stuffing and any other trimmings you have can be what make the meal. Why not have a go at making your own gravy one week? Or why not make a different stuffing, like a fruit stuffing with apricots? You could add in a whole roasted onion, or herby meat and stuffing balls. Have some fun with it!

Maybe you're going veggie, maybe you're giving a new stuffing a go, perhaps you're changing the setting and going al fresco.   My boys enjoyed answering questions on the practice tests.  The questions were challenging so I knew for sure that my boys were learning.  My 8-year-old needed help with language arts while the ten-year-old needed more help in math.  So I was able to have their practice questions focus on those subjects.  I also had my boys answer questions in other subjects so that they could see that they would do well on their upcoming tests.  My boys got excited when they got the answers right.  These practice questions helped my boys to not be so nervous about test taking and made learning fun.  While this website focuses on testing, I will be utilizing this site during the summer also to help my boy's keep learning since the website has fun learning games also.  The questions provided on TestingMom.com will enrich my children's learning beyond the classroom.  The boys love having computer time after school and TestingMom.com

Creamy Peanut Butter Pie

I made this pie for my husband on Valentine's day and he loved it.

  I like to make a special dessert for Valentine's day for my husband. I decided to make him this creamy peanut butter pie as I have been teasing his taste buds for quite some time with this pie. I was going to make it last Thanksgiving but the family wanted my traditional chocolate cream pie. Then Christmas came and we just had too many cookies so I did not want to make another sweet. My teen did make chocolate lasagna, though. So it was finally time for me to make that peanut butter pie and since Once Again sent me four jars of their Organic nut butters, I simply had no more excuses. I am glad that I finally made this creamy peanut butter pie as it was so delicious. My husband and boys loved this rich creamy pie that was full of peanut butter flavor and it was so easy to make.

                                           Creamy Peanut Butter Pie
                                  Ingredients  Serves 8-12

            For the crust
                  14 whole graham crackers
                  1 tablespoon sugar
                  6 tablespoons melted butter
          For the filling
                 8 ounces cream cheese, at room temperature
                 1 cup powdered sugar
                 1 cup creamy Once Again Creamy No-Stir Lighty sweetened peanut butter
                 2 tablespoons vegetable oil
                 1 ½ cups container whipped topping, thawed
      For the topping
         Reese’s Peanut Butter cups, cut into pieces


For the crust
Preheat the oven to 350 degrees F. Crush the graham into fine crumbs. Pour the melted butter over the top and stir with a fork to combine. Press into a pie pan and bake until set, about 5 to 7 minutes. Remove from the oven and allow to cool completely.
For the pie filling
In a medium bowl beat the cream cheese and the peanut butter until well blended and smooth. Add the powdered sugar and beat until well blended. Gently fold in the whipped topping just until combined.
Pour into the crust and spread evenly. Sprinkle the Reese’s Peanut Butter cups over the filling
Chill for a minimum of 2 hours or overnight.

Notes: because this peanut butter has less oil than regular peanut I had to add 2 tablespoons oil to make the peanut butter mixture creamy.

Rosemary Cashew Butter “Cheese”

  The other day I was sent the most awesome gift. It was a cute box filled with Organic Nut Butters and once I opened this box my mouth was drooling. My head was also spinning with ideas on how to use all these delicious nut butters. Since Valentine's day was coming up, I immediately knew that I had to make a peanut butter pie for my husband. I have been wanting to make a peanut butter pie for quite some time but my family requested a chocolate cream pie for the last holiday and the holiday before that my daughter was visiting so no peanut butter pie as she is allergic to all nuts. So when my box of nut butters contained a jar of peanut butter I knew it was time to make a peanut butter pie as these organic nut butters were too good for my boy's sandwiches. I am sure Once Again Nut butter taste great on bread but I just wanted to use them in recipes. So when I went searching for a peanut butter pie recipe, I came across this recipe for Cashew Butter "cheese" on their website along with many others that I want to try. I just had to make this as it sounded so similar to my vegan cashew pate that uses raw cashews. I wanted to see how a creamy unsweeten cashew butter would work in a vegan cheese substitute.  This pate is one of my most pinned posts as it is an awesome vegan cheese substitute. I found out that cashew butter was a great replacement for my raw cashews as this Rosemary Cashew Butter "Cheese" was so creamy and flavorful. It satisfied my cheese craving and then some. Don't worry, my husband also got his peanut butter pie for Valentine's day. You can get that recipe and see how my pie looks at this link.

  So let's talk more about those wonderful nut butters that Once Again sent me. They sent me a box of four organic nut butters along with a cute raccoon plush. In this box, I discovered a jar of Creamy No-Stir peanut butter, a Creamy Roasted Almond Butter, a Creamy Cashew Butter, and a Sunflower Seed Butter. I love that these nut butters are unsweetened and salt-free so that all I taste is the wonderful taste of nuts. They are also Non-GMO, vegan, and gluten-free! That also makes the butters awesome to use in recipes and smoothies. I think I need to make a chocolate peanut butter smoothie for breakfast. The almond butter would be great to use in my Easy No Bake Homemade Granola Bar recipe. It is a good thing Once Again sent me four jars of their delicious nut butters so there will be some for my boys to enjoy on their sandwiches as they sure do love their nut butter sandwiches. Rosemary Cashew Butter “Cheese”

Serves 8

1 cup Once Again Organic Cashew Butter
1/2 cup nutritional yeast
1 tablespoon lemon juice
1 tablespoon water
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1 teaspoon minced fresh thyme
1 teaspoon minced fresh rosemary

Place the cashew butter, nutritional yeast, lemon juice, water, garlic powder, onion powder and salt in a food processor.  Pulse until well combined.
Add the fresh herbs.  Pulse again to incorporate.
Line a small bowl or ramekin with plastic wrap.  Scoop the cashew butter cheese into the bowl/ramekin, packing down and smoothing the top.
Refrigerate until chilled and set.  Once chilled, cashew butter cheese can be turned out of the bowl/ramekin.  Remove the plastic wrap and slice to serve.

TIP: Nutritional yeast can be found in health food stores and many supermarkets.  It is loaded with B-vitamins and gives this spread its robust, cheesy flavor.

Easy Ways To Add A Little Health Into Your Everyday Life

Sometimes, the idea of getting healthy seems almost overwhelming. Not everyone is a breakfast person, but the truth is that it really is one of the most important meals of the day. A good breakfast will fill you up until lunch, meaning that you won’t be tempted by any of those mid morning snack candy bars at work, and that you won’t fill up on sugary soda that’s bad for both your body and your teeth. Even if you’re the sort of person who just eats a piece of toast over the sink so you don’t have to wash a plate, why not change it up a little? So many people neglect their mental health, which means that they just end up feeling worse and worse. If you have a busy life it’s important to try to take time for yourself, no matter what form that might take. Make sure that you see your friends on a regular basis and that you have date nights with your partner so that you can reconnect. Life with kids can be hard and busy, but you can’t let your relationship take a back seat all the time. A lot of moms find themselves feeling pretty exhausted a lot of the time but if you’re unhappy or anxious, go to see your doctor. Therapy is helpful for a lot of people, but you shouldn’t be ashamed or upset if medication is prescribed – you never know, it could help.

First of all, you have to remember that everything you feel about the move: the excitement for their future mixed with the sadness of everything they’re leaving behind — they will be feeling it all, only ten times worse than you. For every time they say things like ‘I’m nearly 18, just leave me alone’ or ‘I deserve some independence’, they will ask for your help or guidance. Because of this, you must be able to take whatever they throw at you with a pinch of salt; this means to be able to handle the cries for independence, as well being able to remain as there for them as possible. They will take the stress away of having to hire and drive a vehicle you may have no previous experience driving, such as a van or a lorry. You will also be able to have a peace of mind in knowing that all of their worlds possessions will make it to where they need to go.
