Quick Caramelized Onion Bread

        This quick bread requires no yeast and is so delicious!


  I love the taste of caramelized onions and cheese. I usually make a pizza with the caramelized onions and mozzarella cheese and it is so good, the more onions the better. So when I had an abundance of onions, I wanted to make this pizza for my Friday night potluck with my church friends. The only problem was this pizza doesn't travel well, so I decided to make a bread with the onions instead. I may love eating onions but I hate chopping them as it makes my eyes water. So I decided to use my new Mandolin to slice up the onions. I was amazed at how fast I was able to slice the onions and the best part was my eyes did not water. My Mandolin was able to make thick or thin slices and then it was so simple to chop them into small pieces for my bread. I discovered that if I kept the onion whole it was easier to work with using the Hand Guard. So when you peel the onion, just carefully slice the top layer of the onion to remove the peel so the rest of the onion is kept whole.


  I just bought this mandolin so I am having fun with fruits and veggies. This cool mandolin has 5 different blades so I can slice and shred. It even has a blade to make those criss-cross fries. My boys loved the thin apple slices that I made for their snack the other day. This cool slicer is great for grating up my carrots for recipes like carrot cake and spring rolls. I need to buy some potatoes so I can slice them for cheese au gratin potatoes. I am glad that this mandolin comes with a hand guard as the blades are sharp. This mandolin has been getting a lot of use in my kitchen and I am glad that I can put it in the dishwasher.


  Now onions may taste amazing in food but they can leave your hands smelly. I love using Method Lemongrass Gel Hand Wash when I cook with onions. This incredible smelling soap is infused with citrus extracts and does a great job of removing the onion smell from my hands. It also works great on fish and onions. So enjoy those onions in your food!


  Now on to the recipe for my cheesy onion bread. I love that this bread can be made quickly as it requires no rising. I know two onions sound like a lot, but since the onions are in small pieces you won't notice their texture, just an amazing flavor. If that sounds like too many onions, just use one. It is important to saute the onions until golden brown and that will give them a delicious caramelized taste. If you have never had cheese and onions together, you are in for a treat. This bread is super moist and bursting with great flavor, no need to spread butter on it.


Quick Caramelized Onion Bread

2 large yellow onions, thinly sliced and chopped into small pieces
2 tablespoons olive oil
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon garlic powder
1 tablespoon fresh rosemary, finely chopped
3 tablespoons butter, melted
2 eggs
3/4 cup milk
1 1/2 cups shredded mozzarella cheese
1/4 cup shredded mozzarella cheese for topping the bread

Preheat the oven to 350 F

Lightly grease a loaf pan. In a large skillet heat the oil over medium-high heat. Then saute the onion pieces for about 10 minutes or until golden brown. While the onions are cooling, mix up the bread ingredients. 
In a bowl, combine the flour, baking soda, baking powder, and salt. Add the rosemary. Then add the melted butter, eggs, milk, and caramelized onions to the flour mixture and combine well. Add the 1 1/2 cup shredded cheese and mix well. Pour batter into the prepared pan and sprinkle the 1/4 cheese on top. Bake for 50 minutes or until an inserted knife comes out clean. Cool the bread for 10 minutes before taking the bread out of the pan.

I've been wanting to get a little kitchen gadget like this, but wasn't sure if it was worth the money. Now that I've seen it actually works, I feel better about getting one. I would use it for all kinds of things!

I love cooking but not the preparation of the ingredients. I already have tools to help me with slicing but this Mandolin does it better. I think I better check one of this.
