When it comes to desserts, I think my favorite dessert is cookies. I am a cookie person and love cookies. The problem with most cookies is that they are made with dairy products which is a big no-no for me. Since discovering that dairy was the cause of my severe asthma attacks through an elimination diet and a food allergy blood test, I do not consume and dairy products. That includes butter and milk, which are the main ingredients in most cookie recipes. So in order to enjoy cookies, I have to bake cookies from scratch.
Vegan baking substitutes
It is good that I enjoy baking cookies. I have been baking cookies for a long time since I was a kid. The only difference in my baking today is that I have to swap out the dairy ingredients in the cookie recipes for vegan ingredients. Vegan recipes do not contain any dairy. So I now use vegan butter in my best Christmas sugar cookie recipe and vegan chocolate chips in my soft pumpkin chocolate chip cookies. I also use plant-based milk in my sweet biscuits for strawberry shortcake recipe. I have discovered that dairy-free baking is easy and delicious.

One Bowl Vegan Peanut Butter Cookies
Yield: 48 cookies
This vegan cookie recipe uses just one bowl and is so easy to mix up. You will love that this plant-based recipe does not require any type of oil.
Ingredients:
- 2 cups creamy peanut butter or one 16 ounce container
- 4 teaspoons vanilla extract
- 3/4 cup nondairy milk
- 2 cups of sugar
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon of sea salt
Instructions:
- Preheat oven to 350°F and line a baking sheet with parchment paper or silicone baking sheet.
- In a large bowl or stand mixer bowl, combine the peanut butter, vanilla extract, almond milk, and sugar. Stir until well combined.
- Add the flour, baking soda, and sea salt. Mix well. The cookie dough should be thick and difficult to stir. This is when a stand mixer comes in handy. If you don't own a stand mixer, then feel free to mix up the cookie dough with your hands.
- Spoon out a small amount of cookie dough and roll the dough into about 1.5 inch balls. Place the cookie dough balls about 2.5 inches apart on the baking sheet. Next, use a fork to flatten the cookies, creating a crisscross pattern.
- Bake for 10-12 minutes. Allow the cookies to cool before removing from the cookie sheets.
