This super-easy gluten-free buckwheat bread is a knead-free recipe. The bread is also dairy-free with an amazing soft texture.


 There is something special about enjoying homemade bread fresh out of the oven. The bread is still warm, and when you spread the butter on it melts right away. The smell of bread baking in the oven is a scent that most people enjoy. 

 For someone who has a wheat allergy, it can be tough when you are not able to enjoy fresh-baked bread. I can remember the day that my wheat allergy was confirmed, and I had to face not being able to bake bread. Then I remember my first experience with store-bought gluten-free bread. I was shocked at the price of bread that was gluten-free. I was also disappointed in the texture of the wheat-free bread.

 I thought I would never be able to enjoy bread again. I was not giving up bread without a fight. So I searched for recipes for gluten-free bread and started baking. Many of the gluten-free bread recipes that I tried resulted in hard loaves of bread or ones that crumbled when you spread butter on them.

Then I discovered this recipe for buckwheat bread, and I was amazed at how this loaf of gluten-free bread was so similar to regular wheat bread. This bread had a soft texture and held up to me spreading butter on it.

You are going to love this gluten-free bread recipe. This is an easy bread recipe that takes around an hour and a half to make. The best part is that most of this time is for baking the bread. This is a no-knead bread recipe. It is a mix-and-pour the batter into a pan recipe. 


Ingredients Needed

~ Gluten-free flour blend

~ Buckwheat flour

Psyllium Husk Powder

~ Baking Powder

~ Yeast

~ Sugar

~ Salt 

~ Oil

~ Apple cider vinegar

~ Flax eggs

4 Easy Steps

  1. Combine ingredients

  2. Pour bread dough into bread pan

  3. Let the dough rise

  4. Bake the bread

This is the easiest gluten-free bread to make. Just combine all the ingredients in a stand mixer or in a bowl with a spoon. The bread dough will resemble a thick cake batter. Then you simply pour the batter into an 8.5 by 4.5-inch one-pound metallic loaf pan. Since this is a yeast bread recipe, it needs to rise in a warm place for 30 minutes. Then you bake the bread. The hardest part of this recipe is waiting for the bread to cool down, so you can slice it.

Once the bread is ready to slice, you will be amazed at how it slices, just like traditional bread made with wheat flour. The buckwheat flour gives this bread an amazing texture and taste. This bread is perfect with butter or a sliced avocado.

Questions and tips

~ Is buckwheat flour gluten-free? ~ Even though there is the word wheat in buckwheat, it is a gluten-free and wheat-free grain. 

~ Can I substitute other flours for the gluten-free flour blend? ~ I recommend using a flour blend like King Arthur gluten-free blend, as it has the starches, like tapioca, and xanthan gum in it. These ingredients are necessary for baking gluten-free bread. Other gluten-free flours like almond flour and garbanzo bean flour will result in a dense and crumbly loaf of bread.

~ What is Psyllium Husk Powder? ~ Psyllium is an ingredient that is used in many fiber supplements. This fiber mimics gluten and helps the bread have a softer texture. 

~ Can I use other vegan eggs? ~ While there are many recipes for egg substitutes, I recommend using flax meal or chia egg recipes. You can even use an egg replacer powder.  

~ Why apple cider vinegar? ~ The apple cider reacts with the baking powder to help the bread rise. If you don't have apple cider vinegar, you can use white vinegar.

~ How long will this bread stay fresh? ~ This bread will stay fresh for 3-4 days when stored in the fridge. 

~ Can I freeze the bread? ~ For longer storage, freeze the bread up to 4 months. The best way to freeze the bread is to slice it into desired slices and place them into a freezer bag. That way, you can just thaw a slice or 2 at a time at room temperature.

My Favorite Finds At Expo West That Are Allergy-Friendly

 Navigating Life with food allergies can be tough at times. It can be hard to find food options that are free of your top food allergens. Eating out of the home can make you feel excluded. I was pleasantly surprised at all of the allergy-friendly food that I found at Expo West. Keep reading to discover my favorite gluten-free and dairy-free products.


 I recently attended an event called Expo West. This health-related event is all about healthy food and healthy products. Expo West is the largest trade show in the natural, organic, and healthy products industry. This is the event where those who work in the natural products industry come to network, learn, and have the best time. This natural product event showcases new healthy products and I love discovering them. You can learn more about the Expo West event here.

 Attending Expo West meant that I had to travel and traveling can be hard with multiple food allergies and fragrance allergies. Traveling with food allergies requires planning ahead of time. I always pack plenty of allergy-safe food in my suitcase and look for grocery stores near the hotel to purchase additional food. 

 To avoid fragrance issues that trigger asthma attacks, I wear a face mask while on the airplane. My favorite way to travel to California is on the train and I reserve a roomette on the Amtrak sleeper car. That way I have my own space and don't have to worry about fragrances.

Expo West offers plenty of allergy-friendly food 

Expo West is the place to learn about healthy and natural food options that also include ones that are allergy-safe. What I love most about this natural food event is the transparency of the ingredients in the products. The brands want you to know what ingredients are in their products and expect you to ask questions. I know that I will be able to try products that are dairy-free, wheat-free, soy-free, and mushroom-free. 

 So this girl with multiple food allergies feels safe trying food samples at the event. Most brands have their ingredient list right next to the food and if they did not, I felt comfortable asking questions if the food contained dairy, soy, wheat, and mushrooms. The brands knew right away if their products did not contain these ingredients except mushrooms. The mushroom one had folks giving me a puzzled look as they are not on the top 15 allergy list. Mushrooms can hide in foods under many names and I have to be careful. 

New products that I discovered at Expo West that did not contain dairy, wheat, soy, or mushrooms

 Every time I attend this awesome event, I discover new foods and other products that do not contain dairy, wheat, soy, or mushrooms. The food industry keeps getting better when it comes to manufacturing allergy-friendly food. I just love learning about these food products for people who have food allergies. 

To help others, who may have dietary restrictions or just looking for healthy food products, I listed some of my favorite products below.

1. MALK Organics Plant-Based Milk

 A girl needs milk for her coffee and for dairy-free baking. A dairy-free milk brand that I discovered is MALK Organics Plant-Based Milk. This plant milk is made with only 3-5 ingredients. Unlike typical plant-based kinds of milk, MALK products have no gums, fillers, or oils.

Before the show, MALK sent me some samples of their plant milk and I enjoyed it in my coffee. The dairy-free milk was so creamy.

2. Gimme Seaweed 

 I love adding seaweed to my sushi bowls and mixing it into my vegan tuna salad. Gimme’s umami-rich roasted seaweed snacks are so delicious. The sheets of seaweed are also USDA Organic and Non-GMO Project Verified with only 30 calories per serving.

3. Dr. Prager's Purely Sensible Food

I love Dr. Prager's veggie burgers as they are made with ingredients that I can enjoy. Many of their delicious products are gluten-free, soy-free, mushroom-free, and dairy-free. My favorite items from Dr. Prager's are the Super Greens Veggie Burgers and the California Veggie Burger. 


This year at Expo West Dr. Prager's celebrated their 30th year with a birthday celebration. I was able to sample their new Birthday Cake Littles, which is a healthy cake with veggies inside it. These Littles have a sweet taste and actually taste like cake. I also sampled their new Crunchy Veggie Burger as well as their new Veggie Fries.

4. JAMBAR Tropical Trio

These delicious bars were created by the daughter of the original PowerBar. They come in a variety of flavors and they just release a new flavor ~ Tropical Trio. I got to sample these bars before the show and they were the perfect travel snack. I love all the nutrition that is packed into these bars. I also love that they are plant-based and gluten-free.


 Their new plant-based flavor features a bright and breezy blend of banana, pineapple, and coconut. This ensemble of island fruits is enhanced by gluten-free grains and walnut butter for a delicious nutritional punch. Not too sweet and is a good source of fiber. 5. Mayawell Prebiotic Sodas

Mayawell makes clean-ingredient prebiotic soda and is the only Mexican-owned better-for-you soda on the market. They are so delicious. I received a sampler pack of all the flavors and I had a hard time choosing which one to try first. This sampler arrived just as I was heading out the door to hop on the train to Expo West, so I grabbed the Pineapple Mango flavor. I was happy that this flavor did not contain green tea as it was late afternoon and caffeine messes with my sleep after 3Pm.

8. Olbas Inhaler 

 I discovered Olbas Inhaler at Expo East in 2021. This product has been a huge help for my asthma attacks. This pocket-size herbal inhaler is my natural asthma inhaler. When I have an asthma attack, I always use the Olbas Inhaler to open up my airways. These plant-based hard-boiled eggs are amazing! They are 100% vegan and look just like real hard-boiled eggs. They also have a similar texture and taste. I admit that I may have sampled from their booth several times, so many times that they offered me some product to take back to my hotel.

10. Carbonaut Gluten-free Bread

 Discovering that I was allergic to wheat was tough for me as I love eating bread and butter. Since my wheat allergy causes severe asthma attacks, I had to eliminate all wheat-containing products from my diet. The next challenge was finding gluten-free bread that tasted good and had the same texture as wheat bread. I was so happy to discover Carbonaut Gluten-free bread at Expo West.

12. Just Spices

The colorful containers are what caught my eye as I walked past Just Spices booth at Expo West. Then once I noticed that that they had an Avocado Spice, I had to stop and check out their booth. I am a huge fan of everything spice and I had to sample their Avocado Spice. So I grabbed a container and tried it on the Wundereggs that I had at the hotel. This spice was finger-licking good!

Only had one accidental exposure

 There were so many options of safe food for me to sample. I was able to discover many products that were wheat-free, dairy-free, and soy-free. I loved the booths that had their ingredient list next to the product as that made things easy for me. Having food allergies and tasting at a big event like Expo West requires one to read the ingredient label before taking a bite. I also bring with my Epi-pen and Benadryl.

 The one ingredient that I had to always look for on a product that was allergy-friendly was mushrooms. Mushrooms are a hot new thing in the health food industry and brands are using them in everything like coffee, cookies, and even crackers. Since they are not recognized as one of the top food allergies, it can be hard to spot them in products. I accidentally took a bite of an allergy-safe cookie that had shitake mushrooms in it. 

 Thankfully, I reread the ingredients of the cookie and was able to take my double dose of Benadryl and a cup of coffee quickly. I still had a reaction an hour later but I was able to work through it with my Olbas inhaler.

Chocolate or Vanilla Cookie Batter

 Before you start making the basic cookie dough batter, you need to decide if you want chocolate or vanilla cookie batter. I know that is a hard choice to make as they both sound delicious. Can't decide? Then grab two bowls and make both chocolate and vanilla cookie batter. 


 The different cookie flavors are made by using either vanilla or chocolate protein powder. Make sure to grab a plant-based protein powder that is made with simple clean ingredients like Nuzest. Sugar or natural sugar substitute

 This recipe uses a natural sugar substitute to make the cookies healthier. My choice of natural sweetener is a monk fruit-based sweetener. I like baking with monk fruit as it has no bad aftertaste. If you have a favorite sweetener, feel free to use it in this cookie recipe. If sugar is not an issue for you you can use regular sugar.


So Many Mix-Ins Flavors

 Once you made the cookie dough base, now the fun part happens. It is time to select your cookie dough mix-ins. The mix-ins give the cookie batter unique flavors. Choose your mix-in ingredients wisely and select stir-in ingredients that contain healthy carbs and proteins. Once you decide your additional ingredients to mix into the cookie batter, figure about 1- 2 cups total for each batch of cookies. Nuts make delicious mix-ins as well as seeds, and dried fruits. Looking for more sweetness, then use vegan chocolate chips. I like my flavor combination to be sweet, salty, and crunchy.

Fold in The Mix-ins

 Once you have selected your perfect flavor combination of mix-ins, then fold or stir them into the batter. If your cookie batter is too dry after adding the mix in selections, then add some water (one tablespoon at a time) until the batter resembles cookie dough texture. If your batter is too gooey, then add some more oat flour to get the right texture.

Scooping The Cookie Batter onto Cookie Sheets

 Grab your cookie sheets and line them with parchment paper. I love lining my cookie sheets with parchment paper as it not only makes clean-up so easy but it keeps the cookies from burning. The cookies just slide off the cookie sheets. Amazon has great deals on parchment paper and I love this 200-sheet pack of parchment paper for $15

Scoop about 3 tablespoons of cookie batter onto the cookie sheets, spacing them 2 inches apart. Then press the tops of the cookie dough down to flatten them. To make the cookies even more delicious, top them with some of your favorite mix-in ingredients. If you like the salty-sweet flavor, sprinkle a tiny bit of coarse sea salt on top. Sea salt is amazing with chocolate ~ think salted chocolate!

Bake and Enjoy!

Place the cookies in a preheated oven at 350 degrees and bake for 10 - 13 minutes or until they are set. Make sure to rotate the cookie pans halfway through the baking time.

Cookie Storage Tips

These cookies are best stored in an airtight container for up to 3 days. If you can't eat the cookies that quickly, you can freeze the uncooked cookie dough mounds to bake when you are craving cookies. To store the cookie dough in the freezer, just prepare the cookies as you were baking them but instead place the cookie sheet in the freezer for a couple of hours. Once the cookies are frozen, transfer them to a freezer bag and store them in the freezer. When the cookie craving hits, place the frozen cookies on a parchment-lined cookie sheet and bake them at 350* for 12 - 16 minutes.

I used a dairy-free chocolate spread.  If you like you can substitute peanut butter or any other nut butter. You can even use cream cheese if you don't have a dairy allergy. These spooky treats are perfect for your Halloween get-together or for a ghostly afterschool snack. These scary chocolate pumpkins can even be served for a healthy breakfast. To make the lavash chocolate pumpkins even healthier add some sliced strawberries or frozen blueberries. You can even make the eyes and mouth of the pumpkin with sliced fruits. Some slice fruit suggestions would be bananas, strawberries, blueberries, or even dried fruit like raisins or dried cranberries.

The below recipe calls for a pumpkin-shaped cookie cutter but if you don't have that type of cookie-cutter, just use a drinking glass. Since I don't have a pumpkin cookie-cutter in my Christmas sugar cookie recipe supplies, I simply used a drinking glass. I placed the glass on the Lavash flatbread and then used a sharp knife to trace out a pumpkin, making sure to cut out a stem for the pumpkin shape.


 I thought that the strawberries tasted so good with the chocolate spread. So I had to make a bigger chocolate flatbread treat with the flatbread. I simply took my container of chocolate spread and slathered it on the flatbread. Then I thawed out some frozen strawberries and cut them into slices. It was simple to place the strawberry slices on top of the chocolate spread and roll it up. I chose to cut my chocolate flatbread roll into several pieces but you can serve it as a chocolate fruit burrito. 

Chocolate Jack-O-Lanterns With Lavash

Ingredients

 1 sheet Traditional Lavash

2 tablespoons chocolate hazelnut spread (or other plant-based spread)

 Directions

 Press a pumpkin-shaped cookie cutter all over the Lavash. Use the scraps to cut triangles for the eyes and nose. Make half circles and cut out a square for the toothless smiles. Spread each pumpkin with nut butter and arrange the eyes, nose, and mouths.

 Optional: Bake on a lined baking tray at 350F. for 6-8 minutes to get them crispy.

 If you are like most parents, you shy from serving tuna to your kids as you think that they won't like the taste. Tuna is an excellent source of protein and loaded with nutrition.  If you are worried about eating tuna because of mercury, you need to use Safe Catch Elite Wild Tuna in this recipe. Safe Catch is the only brand to test every tuna for mercury and in my opinion, has the best flavor. I discovered Safe Catch tuna a couple of years ago when they sent me a box of their delicious seafood products. I made spicy salmon waffles with their salmon and they were so delicious. My love of seafood is why I can never follow a vegan diet.

 These tuna pizza bites will become a family favorite meal. They are great for dinner or lunch. Serve the pizza bites with a bowl of marinara sauce for dipping. Kids will love these cheesy bites.
