Plant-Based Healthy No Bake Salted Chocolate Brownies

Chocolatey plant-based no-bake brownies that are secretly healthy~ too good to be true~ so fudgy!




 I have a sweet tooth that has to be tamed. While I have no problem with occasionally enjoying sweets, I prefer to eat healthy treats that are lower sugar as my body feels better with healthy food. I am already making most of my sweet treats as I have to avoid dairy due to a dairy allergy. So my thinking is might as well make my sweet treats healthy and guilt-free. That way I can enjoy my treats and not have to worry about my food choices.  So I am glad that I discovered these no-bake salted chocolate brownies. They are so easy to make and these brownies are made with healthy wholesome ingredients.

 These rich chocolate no-bake brownies look and taste too good to be a healthy treat. The chocolate sweet treats taste like brownies and have a fudge-like texture.  The no-bake dairy-free brownies will satisfy your sweet tooth and chocolate cravings and are the perfect treat for healthy meal plans. I like to make these chocolate treats for healthy after-school snacks for my kids. These no-bake treats can be stored out of the fridge for several days so they are the perfect healthy treat to send to your kids at college.

Freezer friendly no-bake brownies



 These moist brownies freeze well too and can be stored in the freezer for 3 months. So I make sure to stash some of the healthy brownies in my freezer so I can enjoy one when I am craving chocolate. So I always have brownies when I want a sweet treat that is healthy. The healthy no-bake brownies can be enjoyed straight from the freezer but they taste best if you allow them to thaw for 20-30 minutes.

Make different flavors of the no-bake brownies

 These no-bake brownies can be made with different flavors. You could add a couple of tablespoons of peanut or almond butter to the raw brownie dough for a chocolate peanut butter taste. You could omit the cocoa powder and substitute peanut butter powder for a peanut butter bar. Another idea is to add a couple tablespoons of peanut butter powder to the chocolate frosting for an amazing chocolate peanut butter frosting. Instead of the sprinkling of salt, top the brownies with walnut halves or chocolate chips.

Helpful hints

 I recommend using a food processor to mix the brownie ingredients together. I used my high-speed blender and it took a long time for the ingredients to mix up as they got stuck way too many times. It does take about 3-5 minutes for the walnuts and dates to blend together with the cocoa powder so be patient. Also, it may seem that brownie dough may need more water when you are blending it in the food processor, but don't add more. Just keep mixing and the mixture will get smooth.


Line the brownie pan with parchment paper or wax paper that is bigger than the pan. Then fold the paper over the brownie dough and press on the paper to mold the brownie dough to fit the pan. The paper will also help you get the sticky, gooey brownies out of the pan. Frost the brownies after you place the brownie square on a plate. After frosting the brownies, wait a couple minutes for the chocolate frosting to set before cutting the brownies into squares. Cut the brownies slowly as they will be gooey but they will hold their shape.

Plant-based Healthy No Bake Salted Chocolate Brownies

Ooey gooey, chocolatey unbaked brownies that are secretly healthy

ingredients:

brownie dough
  • 2½ cups loosely packed pitted dates
  • 1 1/2 cups walnuts
  • 6 tablespoons cocoa powder
  • 1 1/2 teaspoon pure vanilla extract
  • 2 tablespoons water
  • 1/4 teaspoon salt
chocolate frosting
  • 1/4 cup cocoa powder
  • 1/4 cup pure maple syrup or honey
  • 2 tablespoons  melted coconut oil
  • 1/2 teaspoon pure vanilla extract
  • coarse salt for sprinkling

instructions:

How to cook Plant-based Healthy No Bake Salted Chocolate Brownies

  1. Combine the ingredients for the brownie dough in a food processor.
  2. Process until completely smooth, scraping down as needed. Don't worry if it seems dry, it will be fine so don't add extra water.
  3. Lightly grease an 8-inch square baking pan, or line the pan with parchment paper.
  4. Transfer the brownie dough to pan and press very firmly until dough is evenly distributed in the pan.
  5. Then make the chocolate frosting and spread evenly over dough in the baking pan. 
  6. Refrigerate brownies for at least 2 hours, to set. 
  7. Leftovers can stay covered at room temperature for a day, or up to 2 weeks in the fridge,

  1. In a medium mixing bowl, combine all frosting ingredients, except coarse salt.
  2. Stir until mixture forms a paste (this is the frosting).
  3.  Spread evenly over dough in the baking pan. Lightly sprinkle the coarse salt over the brownies.
