 Most people start their day with a cup of coffee and for some their day does not start unless they have their coffee. For some people that cup of Joe is something that they need to wake up. While others, that delicious brew of coffee beans, is their daily treat. Whether you are addicted to the caffeine in coffee or just love the taste of coffee, coffee is a drink that you should include in your day.

 Coffee, when drunk in moderation (2-3 cups a day), is a healthy drink. Coffee is loaded with antioxidants and has been shown to be good for you. I myself, love coffee for the brain-boosting, for energy for exercise, and for helping with my asthma symptoms. Yes, that hot cup of coffee is one of many ways to clear mucus from my lungs. When I am having an asthma attack, I will drink a cup of warm coffee as it helps opens my airways so I can breathe better.

Wake up and smell the coffee! National Coffee Day is Wednesday, September 29, 2021, and coffee is the drink of choice. This unofficial holiday is a global celebration of one of the best drinks in the world, and you are encouraged to drink coffee all day. Maybe not all day, but at least one or more cups of the amazing cup of Joe. 

 I love celebrating National Coffee Day with a cup of coffee. Last year, most had to celebrate National Coffee Day at home but this year I am celebrating this day with a healthy cup of coffee that is loaded with superfoods.    Things are quite different in the year 2020 and the Covid-19 lung virus may be keeping us at home but that does not mean that we can not celebrate our favorite holidays. While many restrictions are being lifted,  most states still are encouraging people to stay home to help stop the spread of a virus that caused a world pandemic. These stay-at-home orders mean that many large events and celebrations have been canceled but that does not mean that we have to stop at home celebrations with our family. We just have to be more creative when it comes to celebrating holidays. 

 Since I am staying home more, I decided to create a coffee bar. I have seen some unique coffee bars that people have created in their homes and it is something that I have always wanted to do. So now that I have more time on my hands, it was the perfect time to gather all my coffee makers and coffee supplies and put them in one location. While I would love for my new coffee bar space to be in my kitchen, there was no space as my kitchen is small. So I created my new coffee space in my family room which is right next to my kitchen. I have a big nook above my gas fireplace that was not being used so that is my new coffee bar area. So now I can create my coffee drinks easily.

Dairy Free Pumpkin Latte
Ingredients

1 fl. oz shot of espresso
1 tbsp canned organic pumpkin
3/4 cup unsweetened warm vanilla cashew milk or milk of your choice
½ tsp pure vanilla extract
Dash pumpkin pie spice
Sweetener to taste


1. Brew 1 fl. oz shot of espresso into a coffee mug
2. Heat pumpkin puree in a microwave safe dish for 15 seconds and stir it well.
3. Add pumpkin puree to espresso shot and stir until well combined
