Last month at my allergy doctor appointment, I got the dreadful news that I was still allergic to wheat. I had been following a gluten-free diet for the past 6 months after I realized, through a food log, that eating wheat caused me to have a bad asthma attack. Since I was receiving allergy shots for airborne seasonal allergies, the previous doctor said that I may have a temporary wheat allergy.

While wheat showed up on my 1st allergy shot panel a year ago, it never bother me. It may have been masked by my severe seasonal allergy symptoms. As my seasonal allergy symptoms improved from the allergy shot treatment, eating wheat was the only thing to cause me to have breathing problems. So I was tested for wheat again through an allergy skin prick test and the wheat allergy test result came back more severe.

My food allergies include dairy, soy, mushrooms, and wheat.

My dreams of eating a homemade piece of honey wheat bread with butter were crushed. I quickly got over my pity party when I realized that not having severe asthma symptoms and being able to sleep again was way better than any slice of bread made with wheat. I was also thankful that there were good-tasting gluten-free bread options available at the store.

While I was able to find many delicious gluten-free products at the store, I was tired of having to pay $7.00 for a package of gluten-free tortillas. So I searched for recipes for gluten-free tortillas with simple ingredients and I discovered this Two Ingredient Gluten-Free Oat Tortillas.

Since I live in New Mexico, tortillas are a staple in my home. My family enjoys many meals that include tortillas, like tacos, burritos, quesadillas, and more. While corn tortillas are gluten-free, I wanted to enjoy a tortilla that is similar to a flour tortilla.

I also wanted a tortilla that did not break easily, like corn tortillas. These tortillas that are made with oats have a texture that is similar to tortillas that are made with wheat flour and the best part is they are foldable. So you can stuff these wheat-free tortillas with plenty of filling. You can also use these tortillas in this tasty chicken quesadilla recipe from Chef Dennis.

Cooking Tips

These tortillas take time to make and the batter may not be the perfect texture. So don't be afraid to make changes if your first tortilla is not perfect.

+ Add more water ~ If your tortillas are too thick, add 1-2 tablespoons of water to the batter.

+ Don't rush the cooking time ~ Each tortilla takes close to 10 minutes to cook. If you have an additional skillet, you can have two going at a time to speed up the process.

+ Tortillas breaking apart ~ You may have flipped the tortilla too soon. They take a while to cook fully on one side. Wait until the batter is bubbly and looks somewhat cooked.

+ Use a non-stick skillet ~ To prevent the batter from sticking use a lightly oiled non-stick skillet.
